Delicious & Healthy Chicken Paprikash: A Lighter, Quicker Recipe
Traditional Chicken Paprikash holds a special place in many hearts, including mine. It’s a quintessential comfort food, with chicken pieces lovingly braised in a deeply flavorful sauce, rich with the warmth of paprika and the lusciousness of sour cream. It’s a meal that brings families together, evoking a sense of warmth and tradition with every bite.
However, the traditional preparation, while undeniably delicious, can often be quite heavy and calorie-dense. This realization spurred my quest to create a version that maintains all the deliciousness and comfort but with a significantly lighter footprint. After a series of delightful experiments, I crafted a recipe that, while perhaps not strictly authentic, delivers an incredibly delicious experience, perfect for health-conscious food lovers.

Crafting a Lighter Chicken Paprikash
The classic rendition of chicken paprikash often features chicken legs and thighs, typically fried first to crisp the skin. This initial frying step adds considerable fat and calories. My goal was to bypass this without sacrificing flavor or texture, leading to several thoughtful modifications in this healthier version.
Leaner Protein: Chicken Breasts
To start, I opted for boneless, skinless chicken breasts. This not only significantly reduces the fat content but also shortens the cooking time, making it an ideal choice for busy weeknights. Cutting the chicken breasts into bite-sized strips allows them to cook quickly and absorb the rich flavors of the sauce more efficiently. While some might argue against using chicken breasts in paprikash, their lean nature and ability to cook without excessive oil make them perfect for a lighter interpretation.
Adding Bulk and Nutrition: Chickpeas and Red Peppers
To ensure the dish remained satisfying despite using less chicken, I introduced canned chickpeas. For fellow chickpea enthusiasts, you’ll know they bring a wonderful textural contrast and a fantastic ability to soak up the sauce’s robust flavors, almost like little smoky nuggets of goodness. Chickpeas are also a powerhouse of plant-based protein and fiber, making this meal even more wholesome and filling.
Furthermore, vibrant red bell peppers were added to the mix. These not only contribute essential vitamins and a touch of sweetness but also a beautiful pop of color and a delightful, slightly crisp texture that contrasts beautifully with the creamy sauce. Incorporating these vegetables boosts the nutritional profile and adds volume without adding extra calories.
Mindful Fat and Cream
To further reduce the overall calorie count, I scaled down the amount of oil used for searing and consciously used less sour cream. However, it’s important to note that full-fat sour cream is still recommended for its stability in sauces. This careful reduction ensures that you still get the signature creamy richness of paprikash, but in a more balanced way. The result is a healthy, economical, and utterly delicious chicken paprikash that doesn’t compromise on taste.

Essential Recipe Tips and Notes
- Searing for Flavor: Always cut your chicken breasts into bite-sized pieces before cooking. Searing these chicken strips over high heat until they are just browned, but not fully cooked, is a crucial step. This caramelization creates a fantastic depth of flavor that carries through to the final sauce. Remove the chicken once seared to prevent overcooking.
- Perfect Peppers: Similarly, sear the red peppers until they develop a slight char while still retaining a crisp-tender texture. This technique enhances their natural sweetness and adds another layer of flavor to the dish.
- Quality Paprika Matters: The star of paprikash is, of course, paprika. For the best flavor, use high-quality Hungarian paprika that is potent and fragrant. Spices lose their potency over time, so always check the expiration date. Fresh paprika will impart a much richer color and deeper flavor.
- Sour Cream Savvy: To ensure a smooth, uncurdled sauce, use full-fat sour cream or crème fraîche. Low-fat varieties tend to separate when heated. The key is to stir in the sour cream only at the very end of the cooking process, immediately after removing the pan from the heat. This gentle incorporation prevents the cream from splitting and keeps your sauce beautifully velvety.
Serving Suggestions for Chicken Paprikash
This creamy chicken paprikash is wonderfully versatile and pairs beautifully with a variety of sides. Classic choices include fluffy rice, hearty egg noodles (nokedli), or creamy mashed potatoes, all perfect for soaking up the rich, flavorful sauce. To balance the richness, consider adding a fresh green salad or a side of steamed seasonal vegetables.
Before serving, a sprinkle of fresh, chopped flat-leaf parsley not only adds a burst of vibrant color but also a refreshing herbaceous note. A final pinch of freshly ground black pepper can also elevate the flavors, adding a subtle warmth to the finish.
Storage and Leftovers
Leftover chicken paprikash is just as delicious, if not more so, the next day as the flavors have more time to meld. Store any leftovers in an airtight container in the refrigerator for up to three days. For longer storage, this paprikash freezes beautifully.
To freeze, allow the dish to cool completely before transferring it to a freezer-safe, airtight container. It can be kept in the freezer for up to three months. When you’re ready to enjoy it again, thaw the paprikash completely in the refrigerator overnight. Reheat gently in a saucepan on the stove over medium-low heat, stirring occasionally, until heated through. Alternatively, you can reheat it in the microwave in short intervals, stirring between each, until piping hot. Enjoy within 48 hours of thawing.

Equipment
-
Cast iron skillet
Ingredients
- 1 tbsp olive oil
- 2 chicken breasts, skinless and boneless, sliced in strips
- 1 red bell pepper, sliced
- salt and pepper to taste
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp sweet paprika, or smoked paprika
- 3 tbsp flour
- 375ml/1 1/2 cups chicken stock
- 400ml/14oz canned diced tomatoes
- 400ml/14 oz canned chickpeas, drained
- 125ml/1/2 cup sour cream or creme fraiche, full fat
- flat leaf parsley, chopped, for garnish
Instructions
-
Cut chicken breast into uniform strips and season generously with salt and pepper.
-
In a large pan or cast iron skillet, heat the olive oil over high heat. Add the chicken strips and sear them until just sealed and lightly browned on all sides, about 5-7 minutes. Do not cook completely through. Remove the chicken to a plate and set aside.
-
Add the sliced red bell pepper to the same pan. Stir-fry over medium-high heat until the peppers are slightly charred and tender-crisp. Remove them to the plate with the chicken and set aside.
-
Reduce the heat to low. Add the chopped onion to the pan and cook for 5-7 minutes until it softens and becomes translucent. Add the minced garlic and continue cooking for another 1 minute until fragrant.
-
Stir in the paprika and flour, mixing well to create a rich, red paste. Cook for 1 minute, stirring continuously, to toast the flour and paprika.
-
Gradually whisk in the chicken stock until the paste is completely blended and the sauce begins to thicken. To avoid lumps, you may wish to add half the stock first, whisk until smooth, then add the remainder.
-
Add the canned diced tomatoes to the sauce and stir to combine.
-
Return the seared chicken to the pan, along with the drained chickpeas. Bring the mixture to a gentle boil, then reduce the heat to low, cover with a lid, and let it simmer for 20 minutes, allowing the flavors to meld and the chicken to cook through.
-
After 20 minutes, uncover the chicken paprikash. Stir in the sour cream and the reserved red peppers. Immediately remove the pan from the heat to prevent the sour cream from separating and curdling.
-
Taste the sauce and adjust seasoning with more salt and pepper if necessary.
-
Serve immediately, garnished with freshly chopped flat-leaf parsley. This dish is excellent with steaming rice, noodles, or mashed potatoes.
