The Underrated Elegance of Pork Loin Roast

While beef often takes center stage in the world of roasts, pork roast, particularly a beautifully prepared pork loin, is a culinary gem that deserves far more recognition. It’s truly a shame that it’s often overlooked. For our Sunday lunches, I frequently opt for a high-quality pork loin joint, not only for its incredible flavor and texture but also for its exceptional value compared to beef. A properly roasted pork loin offers a lean, tender, and incredibly satisfying meal that can easily feed a family or a gathering of friends.

The key to a truly magnificent pork loin roast lies in careful preparation and precise cooking. When roasted at the ideal temperature and not overcooked, it transforms into one of the most exquisite pieces of meat you can enjoy. Its naturally lean profile means it cooks relatively quickly and offers a healthier alternative without sacrificing an ounce of flavor. The simplicity of its preparation, combined with its impressive presentation, makes it an outstanding choice for any occasion.

To truly elevate this lean cut, a well-made gravy is essential. It doesn’t just add moisture; it infuses every bite with a depth of flavor that complements the pork beautifully. After all, who can resist a rich, savory gravy? It’s the perfect companion, enhancing both the texture and the overall dining experience.

Understanding Pork Loin: A Cut Above

Pork loin, also known as a pork loin roast, is a large, lean, and exceptionally tender cut of meat harvested from the back of a pig. It’s crucial not to confuse pork loin with pork tenderloin. While both are prized cuts, they are distinctly different. The loin is typically a wider, flatter cut, often available as a substantial roast, while the tenderloin is a long, narrow, round, and always boneless strip of meat, best suited for quick-cooking methods.

Pork loin can be purchased in various forms: boneless or bone-in, and sometimes with a layer of fat and skin, known as crackling. In many regions, including the UK, a loin with crackling is a standard offering. For this specific recipe, I chose a boneless loin and removed any crackling to maintain a leaner profile for the roast. Additionally, I tied the joint tightly with kitchen twine. This simple step is vital for ensuring the meat cooks evenly and remains incredibly moist throughout the roasting process, preventing it from drying out.

Expert Tips for the Perfect Pork Loin Roast

  • Flavor Infusion: The Dry Rub: Before roasting, generously rub your pork loin with a fragrant spice mixture. Our preferred blend includes smoked paprika (or sweet paprika), garlic powder, aromatic oregano, crushed coriander seeds, and salt. This combination penetrates the meat, creating a delicious crust and infusing deep flavor.
  • Moisture Retention: Tying the Loin: Always tie your pork loin with kitchen string. This technique helps the meat maintain its shape, promotes even cooking, and, most importantly, locks in moisture, ensuring a juicy roast every time.
  • Achieving a Golden Crust Without Searing: Many recipes suggest pan-searing the meat before roasting. We achieve a beautiful, browned exterior without this extra step by starting the pork in a very hot oven, preheated to 220°C (475°F). After 20 minutes, reduce the temperature to 190°C (375°F) for the remainder of the cooking time. The initial high heat perfectly browns the surface, mimicking the results of searing.
  • Adjusting Cooking Time for Size: The cooking times provided in our recipe are based on a 2.2 lbs (1 kg) pork joint. If your pork loin is larger, adjust the roasting time accordingly by adding approximately 25 minutes for every additional 1 lb (500g) of meat.
  • Ensuring Perfect Doneness: The most reliable way to check if your pork is cooked to perfection is by using a meat thermometer. Insert it into the thickest part of the loin. Fully cooked pork should register an internal temperature of 63°C (145°F). Cooking it beyond this point will result in dry, tough meat, so be vigilant!
  • The Essential Resting Period: Once your roast is out of the oven, cover it loosely with foil and let it rest for a minimum of 20 minutes before carving. This crucial step allows the juices to redistribute throughout the meat, ensuring maximum tenderness and flavor.
  • Don’t Skip the Gravy: A homemade gravy made from the pan drippings is non-negotiable for this recipe. It adds an incredible depth of flavor and significantly improves the texture of the lean pork loin.
  • A Sweet Touch to the Gravy: To balance the savory richness of the gravy, I often incorporate a hint of sweetness. Red currant jelly is my secret ingredient, providing a wonderful counterpoint. Good quality grape jelly, plum jam, or cranberry sauce can also be excellent substitutes, adding a delightful complexity.

Serving Suggestions: Completing Your Feast

This magnificent pork loin roast is incredibly versatile and pairs beautifully with a range of classic and contemporary side dishes. For a comforting and hearty meal, serve it alongside creamy mashed potatoes, or for a delightful textural contrast, opt for crispy roasted potatoes. To add vibrant colors and essential nutrients, consider serving it with tender roasted carrots or savory crispy Brussels sprouts with honey and bacon. These combinations offer a modern twist on traditional Sunday roast accompaniments, making your meal truly special.

If you’re seeking an alternative to the classic gravy, or simply wish to explore other flavor profiles, my rich and creamy Mushroom Marsala Sauce makes an absolutely delicious and sophisticated complement to the roast. It’s a fantastic way to introduce new dimensions of flavor to your pork loin.

Storage and Leftovers: Enjoying Beyond the Meal

One of the many joys of cooking a larger roast like this pork loin is the delicious leftovers! To ensure they remain fresh and flavorful, store any remaining pork and gravy in an airtight container in the refrigerator for up to 4 days. You might even find that the flavors deepen and intensify over this time, making for an even more mouthwatering midweek meal.

When reheating the pork, it’s best to do so in the oven for 30-40 minutes at 165°C (325°F), or gently in a microwave until thoroughly heated. Always verify that the pork reaches a food-safe temperature throughout. The gravy can be reheated in a saucepan over medium heat, stirring regularly until it’s simmering hot. If it appears too thick, a splash of water or extra chicken stock will help achieve the desired consistency. Leftover pork loin is also fantastic for sandwiches, wraps, or diced into a stir-fry, offering delicious versatility for future meals.

This delicious pork loin is covered with a fragrant dry rub, then roasted and served with a beautiful gravy. Perfect Sunday lunch or a special occasion dinner.

Equipment

  • Roasting pan
  • Meat thermometer

Ingredients

  • 1 tsp garlic powder
  • 1 tsp smoked paprika, or sweet paprika
  • 2 tsp crushed coriander seeds, or 1 tsp ground coriander
  • 1 tsp oregano
  • 1 tsp salt
  • 2.2 lbs/1kg boneless pork loin, no crackling

For the gravy

  • pan drippings, all you’ve got after the roast
  • 2 tbsp butter
  • 3 tbsp flour
  • 500ml/2 cups chicken stock
  • 2 tbsp red currant jelly, or grape jelly, plum jam or cranberry sauce
  • 0.5 tsp leftover rub, optional

Instructions

  • Preheat the oven to 220°C (475°F). Take the pork loin out of the fridge 1 hour before cooking to bring it to room temperature. Make the rub by combining the garlic powder, smoked paprika, crushed coriander seeds, oregano, and salt. Pat the loin dry with paper towel and apply the rub all over.
  • Place the meat in a roasting pan or a large cast-iron pan and roast in the preheated oven for 20 minutes. After 20 minutes, lower the temperature to 190°C (375°F) and continue roasting for 25-30 minutes, or until the internal temperature registers 63°C (145°F) with a meat thermometer. Remove the roast from the oven, transfer it to a serving plate, cover loosely with foil, and let it rest for 20 minutes.
  • Meanwhile, prepare the gravy. To the same roasting pan with the accumulated drippings, add the butter and melt it over medium heat on the stovetop. Stir in the flour and cook, stirring constantly, for 1 minute to create a roux. Gradually whisk in the chicken stock and red currant jelly. Bring the mixture to a boil, then reduce the heat and let it simmer until the gravy thickens to your desired consistency. Taste and adjust seasoning, adding 1/2 tsp of the leftover rub or additional salt if needed.

Notes

If your pork joint is bigger than the one in the recipe, increase cooking time by approximately 25 minutes per 1 lbs (500g) at the temperatures indicated.
You can substitute red currant jelly with grape jelly, plum jam, or honey for a similar sweet and savory balance in the gravy.
