Crispy Butter Beans in the Air Fryer

Crispy air fryer butter beans are a guilt-free, eye-catching snack for everyday nibbling. Flavoured with sriracha seasoning, these crunchy morsels are portable, high in fibre, and easy on the wallet. If you’re trying to cut out snacking between meals, they also make an excellent salad topper.

If you prefer something sweeter now and then, candied almonds are another tasty option to satisfy a sweet tooth while still feeling a little indulgent.

Have air fryers fallen out of fashion? There was a time when air fryer recipes were everywhere — from garlic bread and French fries to whole roasted chickens. Even if air fryers feel like a passing trend, they remain one of the most useful appliances in my kitchen. Air frying delivers impressive texture with less oil, so I reach for mine often and enjoy finding new ways to use it.

On my current focus to boost fibre intake, crispy butter beans are the perfect alternative to crisps, M&Ms, or jellybeans. They satisfy that afternoon crunch craving and are naturally appealing as a grazing food — great for kids’ lunch boxes or as an after-school snack.

Crispy butter beans

There are lots of butter bean recipes, but this version stands out because the beans are air fried until crisp. The result is something between corn nuts and Spanish habas fritas: nutty, crunchy, and addictive.

If you’re not sure what butter beans are, they are also known in many places as lima beans. They can be a surprisingly delicious ingredient when treated well. Butter beans are inexpensive, high in fibre and protein, widely available, and transform beautifully when fried until crunchy.

Start with the right beans: I use jarred, pre-cooked butter beans rather than dried, so they’re tender to begin with and have that rich, buttery texture. The second crucial element is seasoning. Butter beans are naturally mild and readily absorb flavours. I coat mine with a hot Thai sriracha seasoning for a fiery kick, but you can use any spice blend you prefer — smoky barbecue, warming cumin, or a simple herb mix all work well.

Important tips and notes

  • Dry the beans thoroughly. Drain and spread them on paper towels to air dry for at least 30 minutes. Excess moisture prevents crisping.
  • Season generously. Butter beans need bold flavour to shine; don’t be shy with your spice mix.
  • Burst beans are a good sign. When many beans split and puff like popcorn, they’re perfectly crisp.

What goes with it

Crispy butter beans are primarily a snack, but they also work beautifully as a finishing crunch to many dishes. Their fibre, texture and bold flavour make them a versatile addition.

Try them with:

  • Salads — sprinkle over chopped salads to add heat and crunch.
  • Roasted vegetables — toss a handful over oven-roasted veg for contrast in texture.
  • Soups — use as a crunchy garnish on purees or hearty chicken vegetable soup for extra fibre and interest.

They’re also delicious on baked potatoes, stirred into curries, or used as a crunchy topping for chili.

Storage and leftovers

The trick to keeping these beans crunchy is to store them with airflow. Use a jar with a loose lid or cover a container with a paper towel rather than sealing them airtight. If they soften after storage, re-crisp them in the air fryer or oven for 3–5 minutes.

Equipment

  • Air fryer

Ingredients

  • 430g / 16oz canned or jarred butter beans
  • Oil spray or a light drizzle of oil
  • 2 tsp sriracha seasoning or a spicy mix of your choice
  • 1 tsp salt, if your seasoning mix doesn’t contain salt

Instructions

  1. Drain the butter beans and spread them on two layers of paper towels. Let them air dry for 30 minutes to 1 hour. They must be very dry before cooking.
  2. Preheat the air fryer to 200°C / 400°F. If the beans still feel damp, pat them dry with paper towels. Place the beans in a large bowl, spray lightly with oil or toss with a small amount of oil, and sprinkle with your seasoning and salt. Toss to coat evenly; repeat if necessary so each bean is seasoned.
  3. Place the beans in the air fryer basket in a single layer and cook for 13–15 minutes, shaking the basket a couple of times during cooking to ensure even browning. The beans are done when they are crisp and many have burst open like popcorn.
