The magic happens when the ricotta cream is infused with a touch of homemade blood orange syrup, creating a vibrant, tangy sweetness that complements the almond crepes impeccably. All these flavors come together in a beautiful dance of taste and texture.

My surprise at how much I loved this cake was considerable, given that I’m not typically a huge fan of oranges. The Global Appeal of Crepes: More Than Just a French Delicacy

Don’t let glossy food magazines or popular cooking shows lead you to believe that crepes are solely the domain of skilled French chefs. Essential Tips for Perfect Homemade Crepes

  • Rest Your Batter: After mixing your crepe batter, allow it to stand for at least 30 minutes at room temperature. This crucial step permits the flour to fully hydrate and the gluten to relax, resulting in an exceptionally smooth batter and, consequently, smoother, more tender crepes with fewer lumps.
  • Flavor Infusion: Elevate a humble pancake to something truly luxurious and worthy of a cake by flavoring your batter. High-quality vanilla extract or almond extract (or a combination of both!) adds a beautiful depth and aroma that will make your crepes irresistible.
  • Achieve Consistent Heat: Always ensure your frying pan is well-heated before pouring in the first crepe. A pan that’s not hot enough will lead to sticky, uneven crepes. Medium heat is typically ideal for even cooking without burning.
  • Lightly Oil the Pan: For perfect, non-stick cooking, pour a small amount of oil into a tiny bowl. Dip a wadded-up paper towel into the oil and lightly rub it all over the frying pan. Repeat this process quickly between each crepe to maintain an even, thin layer of oil.
  • Choose the Right Tools: For the best results, opt for a heavy-bottomed, well-seasoned cast iron frying pan or a good quality non-stick pan. A thin-edged spatula is indispensable for easily sliding under the delicate crepes and flipping them without tearing. For a visual guide, consider watching a video tutorial on making Russian Blini, as the technique is very similar.
  • Cool Crepes Completely: Before you begin assembling your crepe cake, make absolutely certain that all your crepes have cooled to room temperature. Stacking warm crepes will cause the delicate ricotta cream to melt, leading to a messy and unstable cake (a lesson I learned the hard way!).

The Recipe: Blood Orange Ricotta Crepe Cake

Crepe Cake with Blood Orange Ricotta Cream

By Julia Frey of Vikalinka

Prep: 45 mins
Cook: 45 mins
Total: 1 hr 30 mins
Servings: 12

Paper thin almond-flavored crepes layered with rich blood orange ricotta cream and drenched in a vibrant blood orange syrup, stacked high to create a stunning, unforgettable cake.

Ingredients

For the Blood Orange Syrup

  • 250ml/1 cup blood orange juice or regular orange, freshly squeezed
  • 200g/1 cup white sugar

For the Almond Crepes

  • 210g/1 1/2 cup all-purpose flour
  • 3 tbsp sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs
  • 560ml/2 1/4 cups milk or soy milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract

For the Blood Orange Ricotta Cream

  • 500g/2 cups ricotta
  • 4 tbsp blood orange syrup (from above recipe)
  • 250ml/1 cup heavy whipping/double cream
  • 30g/1/4 cup powdered/icing sugar
  • 1 tsp orange blossom water, optional
  • 1 blood orange, sliced thinly, for garnish
  • Powdered sugar, for dusting

Instructions

For the blood orange syrup

  1. Juice the blood oranges and combine the juice with sugar in a saucepan. Bring to a boil, then let it gently bubble away for 5 minutes on medium heat.
  2. Remove the syrup from the heat and allow it to cool completely. Once cooled, strain it into a jar or a bottle for storage.

For the crepes

  1. In a large bowl, combine the flour, sugar, baking powder, and salt. Crack the eggs into this dry mixture and pour in 1 cup of milk. Whisk everything together until smooth, then add the remaining milk, vanilla, and almond flavorings, mixing well until thoroughly combined. Let the batter rest for 30 minutes to ensure smooth crepes.
  2. Heat your frying pan on medium heat. Remember the tips for making better crepes mentioned in the article! Lightly rub the frying pan with a tiny bit of oil (using a paper towel works perfectly). Pour approximately 1/3 cup of crepe batter into the pan, tilting the pan immediately to spread the batter evenly to the edges.
  3. Cook each crepe until the surface appears dry and the edges are lightly golden, which takes about 1 minute. Using a thin-edged spatula, carefully flip the crepe and cook for another 20-30 seconds on the second side. Continue this process until all the batter is used. You should yield around 12 crepes if using a 9-inch (23 cm) frying pan.
  4. Stack the cooked crepes on top of each other on a plate and let them cool completely to room temperature before assembling the cake.

For the Blood Orange Ricotta Cream

  1. Combine the ricotta cheese and 4 tablespoons of the prepared blood orange syrup in a food processor. Pulse for a few seconds until the mixture is smooth and well-combined.
  2. In a separate medium bowl, add the heavy/double cream, powdered sugar, and the optional orange blossom water. Whip with an electric mixer until stiff peaks form.
  3. Gently fold half of the whipped cream into the ricotta mixture using a spatula, being careful to maintain its airy texture. Then, delicately fold in the remaining half of the whipped cream until fully incorporated.

To assemble the crepe cake

  1. Choose a beautiful serving plate or a cake stand for your masterpiece. Place the first crepe on the plate. Using a spatula, spread approximately 1/4 cup of the blood orange ricotta cream evenly over the crepe. Drizzle with 1 tablespoon of blood orange syrup. Repeat this layering process with the remaining crepes, cream, and syrup until all the crepes are used.
  2. Once assembled, drizzle the top of the crepe cake with additional blood orange syrup. Decorate the top with thinly sliced blood orange rounds for a stunning visual appeal. Refrigerate the cake for at least 1 hour (or preferably longer) to allow the cream to firm up and for all the incredible flavors to meld beautifully.
  3. Just before serving, for an extra touch of elegance and sweetness, lightly dust the top of the cake with more powdered sugar if desired.

Notes

Orange Blossom water is NOT the same as orange essence. It adds a beautiful, delicate floral flavor and fragrance to the crepe cake that truly elevates it.

Beyond the Cake: Variations and Serving Suggestions

While this Blood Orange Ricotta Crepe Cake is perfect as is, you can always explore delightful variations. For a slightly different citrus twist, consider using grapefruit or regular orange juice in the syrup and cream if blood oranges are out of season. You could also experiment with adding a touch of grated orange zest directly into the ricotta cream for an intensified citrus aroma. For an extra layer of texture, sprinkle some finely chopped toasted almonds or pistachios between the layers or on top.

Serve this exquisite crepe cake chilled, allowing the flavors to fully meld. It pairs wonderfully with a light dusting of powdered sugar and perhaps a sprig of fresh mint for a touch of green. It’s an ideal dessert for a celebratory brunch, a sophisticated dinner party, or simply as a luxurious weekend treat. Leftovers (if there are any!) store well in the refrigerator for up to 2-3 days, though the crepes might soften a bit more over time, enhancing the cake’s tender quality.
