Discover the Magic of Spanish Flavors

Spain holds a special place in my heart, a treasure trove of vivid memories from countless trips to visit cherished childhood friends and their families. I recall the intensity of the Spanish sun, bold and bright, juxtaposed with the warm, inviting embrace of the Mediterranean Sea. The waves, so gentle and playful, would lull me into a state of pure tranquility, simply bobbing along the natural rhythm of the water for hours, utterly content in the moment. These experiences, the vibrant culture, and the unforgettable tastes of Spain, always spark a desire within me to recreate its culinary wonders as soon as I return home.

This particular recipe for Spanish rice with chicken and shrimp is my heartfelt homage to the legendary paella, a dish deeply rooted in the Valencia region, where our summer holidays often unfold. My fascination with Spanish cuisine runs deep, consistently inspiring dishes that, while not always strictly authentic, are always, without a doubt, 100% delicious. They embody the spirit and essence of Spanish cooking, adapted for the home kitchen with a touch of personal flair.

For instance, my Loaded Potato Skins with Chorizo and Bravas Sauce are a direct nod to the iconic Patatas Bravas, a tapas staple that my family and I absolutely adore. It takes the beloved spicy potato dish and elevates it into a hearty, irresistible appetizer. Similarly, my Saucy Sausage Casserole beautifully marries the gorgeous Mediterranean flavors of Spain, featuring robust spicy chorizo, tender artichokes, and plump, sweet cherry tomatoes, creating a rich and satisfying meal.

And of course, one cannot speak of Spanish cooking traditions without reverently mentioning tapas. These small, shareable plates are the heart and soul of Spanish social dining. Easy Spanish Rice: A Taste of Sunshine at Home

Since magically conjuring up the Spanish sunshine and a Mediterranean beach in England is a year-round impossibility, the next best thing we have is the food. Thankfully, recreating these cherished Spanish dishes at home is not a challenge, as most of the essential ingredients are readily available in local supermarkets. This makes it wonderfully convenient to bring the warmth and flavors of Spain into our everyday lives, regardless of the weather outside.

My admiration for traditional Spanish paella is immense—the sight of plump, golden-yellow rice generously studded with tender chicken, succulent prawns, and often mussels, is truly a feast for the senses. We’ve been fortunate enough to savor a plethora of versions, from bustling restaurants to the intimate settings of friends’ homes. It’s often said, and I find it to be remarkably true, that the paellas made in a home kitchen, with love and personal touch, are always the most memorable. There’s an undeniable charm and depth of flavor in a homemade rendition that mass-produced versions simply can’t replicate.

This recipe aims to capture that homemade essence, simplifying the process without sacrificing any of the glorious flavors. It’s designed to be approachable for the everyday cook, allowing you to experience the joy of creating a Spanish-inspired masterpiece in your own kitchen. While it draws heavily from the classic paella, it offers a more flexible and less daunting approach, making it perfect for a weeknight dinner or a relaxed weekend gathering. The goal is to bring a bit of that Spanish joy and culinary sunshine directly to your table, making every meal a mini-vacation.

Essential Ingredients for a Flavorful Spanish Rice

While this recipe for Spanish rice is profoundly inspired by the iconic paella, it’s important to note that it’s not strictly an authentic paella in the traditional sense. One key distinction, for instance, is the inclusion of chorizo. Many purists would argue that true Valencian paella never features chorizo. My mission with this dish was to create a flavorful, accessible interpretation that brings the spirit of Spanish cuisine into a home kitchen, utilizing ingredients that are readily available and beloved by many, even if they deviate slightly from strict tradition.

At the heart of any great rice dish is, naturally, the rice itself. For this recipe, I highly recommend using a round, short-grain variety specifically designed for paella, often labeled as arroz redonda or bomba rice. These types of rice are renowned for their ability to absorb a tremendous amount of liquid and flavor while maintaining their individual grain structure, resulting in a perfectly textured dish that is neither mushy nor dry. You can typically find “paella rice” in most well-stocked supermarkets or specialty stores.

If paella rice proves elusive, a good substitute would be risotto rice, such as Arborio. While similar in its ability to absorb liquid and achieve a creamy texture, it’s not exactly the same as paella rice, but it will work effectively. However, it’s crucial to steer clear of long-grain varieties like basmati or jasmine rice for this recipe. Their distinct texture and cooking properties will not yield the desired result, and your Spanish rice will lack the characteristic mouthfeel that makes this dish so delightful.

To build the foundational flavors of our Spanish rice, we start with aromatics: finely chopped onions and pungent garlic. These humble ingredients create a fragrant base that elevates the entire dish. But the real game-changer for me is the addition of chopped cured Spanish chorizo (be sure to use Spanish chorizo, not the Mexican variety, as their flavor profiles are vastly different). Chorizo imparts a wonderful smoky, spicy depth and a beautiful orange hue to the cooking oil, setting the stage for the rest of the ingredients. However, the true star, responsible for that immediately recognizable bright yellow color and unique, delicate taste, is saffron. A small pinch goes a long long way in transforming this dish into a truly special meal.

Recipe Tips and Creative Variations

This Spanish rice recipe is my go-to when I’m craving a quick, satisfying, and flavorful one-pan dinner. It’s designed for efficiency, with all ingredients coming together in a single pan, yet it is anything but plain. The secret to its vibrant character lies in a few carefully chosen additions that elevate it beyond the ordinary. I intentionally add a touch of chopped Spanish chorizo, which, as mentioned, might be a deviation from authentic paella, but it infuses the rice with incredible smoky depth and a gorgeous color. Paired with genuine saffron for its unmistakable aroma and brilliant yellow, and then crowned with tender shrimp, this dish truly sings.

While I focused on readily available ingredients to keep this recipe approachable, feel free to customize it to your liking. You could certainly introduce other delicious seafood options like mussels or langoustines, which are common in traditional paella. I opted to keep them out of the main ingredient list to avoid venturing into “expensive recipe” territory, ensuring this dish remains an affordable luxury for everyone. However, if your budget allows and your palate desires, they would make fantastic additions.

For a touch of green and added freshness, I’ve incorporated frozen peas into my Spanish rice. If you’re seeking a more authentic Spanish touch, flat green beans (often referred to as runner beans or string beans in other contexts) would be a more traditional vegetable choice. This recipe provides a solid foundation, but it truly encourages experimentation. Don’t hesitate to play with the add-ons that appeal to you most. For instance, chicken can be substituted with diced pork, or you can enhance the vegetable component with other favorites. Artichoke hearts, either fresh or canned, are a wonderful example of an ingredient I’ve often seen used in paellas during my travels through Spain, and they would add a fantastic earthy note to your dish.

The Golden Essence: Is Saffron Essential?

Let’s talk about the star spice of this dish: saffron. For centuries, this delicate spice has been revered as the most precious and expensive in the world, often referred to as “red gold.” Its high value stems from the labor-intensive process of harvesting its tiny stigmas from the Crocus sativus flower. Each flower produces only three stigmas, which must be hand-picked, making saffron cultivation incredibly demanding. While it remains a pricey ingredient, I’ve found that it’s often significantly more affordable when purchased from Middle Eastern shops or markets, where it is a staple spice.

Historically, saffron played a significant role in the culinary and baking traditions of many European countries, prized for both its vibrant color and unique flavor. Today, it continues to be immensely popular, particularly throughout the Middle East, where it lends its distinct qualities to a wide array of dishes, from fragrant rice to savory stews and sweet desserts. Even a very few threads of saffron are capable of imparting a flavor that is genuinely unique and impossible to duplicate with other spices. However, my absolute favorite aspect of saffron is its magical ability to transform an entire dish into a brilliant, captivating yellow hue, making the meal not only delicious but also visually stunning.

If you find yourself with leftover saffron after preparing this Spanish rice, don’t let it go to waste! Saffron is incredibly versatile. Consider using it in another delightful recipe, such as my Tuscan Chicken with Saffron Cream Sauce, which beautifully showcases its ability to add depth and elegance to creamy dishes. Its floral, honey-like notes pair wonderfully with a variety of ingredients, making it a valuable addition to any ambitious cook’s spice rack.

That being said, I understand that saffron’s cost can be a deterrent for some. It’s a widely known practice, even among many Spanish households, to use yellow food coloring as a cost-effective alternative to achieve the signature golden color without the expense of saffron. So, to answer the question directly: no, saffron is not absolutely essential for this dish to be enjoyable. You can certainly omit it or use a tiny pinch of turmeric for a similar visual effect, though the flavor profile will differ. However, if you can justify the indulgence, even a small amount of real saffron will truly elevate this Spanish rice to an unparalleled level of authenticity and culinary delight.

Serving Suggestions and Perfect Pairings

This Spanish rice with chicken and shrimp is a dish that truly wins hearts in my household. My entire family, especially the children, absolutely adore it and frequently request it. It possesses that magical comfort food quality – deeply satisfying and wholesome – yet it manages to remain delightfully light and never heavy. Its vibrant presentation alone makes it a centerpiece, promising a joyful meal even before the first bite.

The beautiful golden rice, studded with succulent chicken and shrimp, practically radiates warmth and happiness. To complete this Spanish-inspired feast for the adults, I typically serve it alongside a robust bottle of Spanish red wine. Its rich notes perfectly complement the flavors of the dish. For everyone, a side of warm, crusty bread is essential for soaking up every last bit of the flavorful juices, and a crisp, simple salad, perhaps with cucumbers, tomatoes, and red onions, provides a refreshing counterpoint to the savory rice. With these elements combined, dinner is not just served; it’s an experience, a mini celebration of Spanish culinary tradition made effortless and delicious.

This easy Spanish rice with chicken and shrimp gets its distinct bright yellow colour from saffron. It is the recipe that will make your days brighter and tastier!

Equipment

  • Cast iron casserole dish

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 cloves of garlic, minced
  • 4 skinless and boneless chicken thighs, cut into bite-sized pieces
  • 100g (1/4 cup) cured Spanish chorizo, chopped
  • 225g (1 cup) shrimp
  • 10g (1/4 cup) fresh flat leaf parsley, chopped
  • 1/2 lemon, juice only
  • 185g (1 cup) paella rice
  • 500ml (2 cups) chicken stock
  • 1 tsp saffron threads, a pinch
  • 40g (1/4 cup) frozen peas
  • salt to taste

Instructions

  1. Cook chopped chorizo in olive oil over medium heat for 2 minutes until slightly browned and the oil is coloured orange. Add chopped onions and cook for 5 minutes over low heat, then add chicken and a pinch of salt. (Do not oversalt as chorizo is salty and so is chicken stock). Cook for 5 minutes until chicken is mostly done, add minced garlic and parsley and cook while stirring for 30 seconds.
  2. Then add rice and stir until the rice is evenly coated in oil for a minute or so. Add chicken stock, saffron threads, and lemon juice. Stir to combine and bring to a boil. Lower the heat, cover with a lid, and cook for 15 minutes. Check for doneness. You might want to cook a few minutes longer if the rice is not done, or uncover if there is still too much liquid.
  3. Add peas and stir lightly, then top with shrimp. Cover and cook for 5 minutes longer. By the end, the liquid should be entirely absorbed by the rice, and the rice should be tender but not mushy.
  4. Taste and add more salt if needed. Serve immediately with lemon wedges.
