Vibrant Summer Tomato and Cucumber Salad with Dill Dressing

It’s a rare treat when my family specifically requests a salad for dinner, but come summer, this tomato and cucumber salad becomes an undeniable favorite. And honestly, I’m always happy to oblige because it holds a special place in my heart, too. This isn’t just any salad; it’s a dish steeped in nostalgia, a culinary memory from my childhood. I vividly recall my mum preparing it frequently, a tradition that I suspect resonates with anyone who grew up in Eastern European countries like Russia or Ukraine.

This salad isn’t merely a recipe; it’s a summer staple, deeply ingrained in the regional cuisine. Historically, it exists in two primary versions: one generously coated with a rich, creamy sour cream dressing, and another simpler, yet equally flavorful, rendition dressed with unrefined sunflower oil. Both versions highlight the natural sweetness and freshness of the vegetables, transforming humble ingredients into something truly extraordinary.

While the combination of tomatoes, cucumbers, and a simple dressing might not sound like culinary rocket science, this cucumber tomato salad recipe is astonishingly delicious precisely because of its simplicity. The secret, as with many great dishes, lies in the quality of the ingredients. When you’re working with the peak of summer’s bounty, the vibrant flavors speak for themselves. Therefore, to achieve that superb, unforgettable taste, always strive to use the freshest, most flavorful produce available.

Selecting the Perfect Ingredients for Your Salad

The foundation of any exceptional salad begins with outstanding ingredients. For this particular summer delight, focusing on the quality of your tomatoes and cucumbers is paramount. They are the stars of the show, and their freshness dictates the overall success and flavor profile of the dish.

What Tomatoes Are Best for Salads?

When it comes to tomatoes for a raw salad, two qualities reign supreme: ripeness and sweetness. Tomatoes must be at their absolute peak; anything less will result in a bland, watery texture that lacks the depth of flavor essential for this dish. A perfectly ripe tomato bursts with juicy sweetness and a slight tang, a characteristic that truly shines when served fresh.

My top recommendation will always be homegrown tomatoes. There’s simply no comparison to the taste of a tomato picked straight from the vine, warm from the sun. Unfortunately, not everyone has access to a garden, myself included, making this option often out of reach. For those without a green thumb, your next best bet is to seek out farmer’s market tomatoes. These often offer a fantastic compromise, bringing that garden-fresh flavor closer to your kitchen. I particularly adore heirloom or heritage tomatoes for their incredible variety of colors, shapes, and intensely complex flavors. They are truly a treat for both the eyes and the palate. In fact, I’ve dedicated an entire recipe to celebrating these unique varieties: Summer Tomato Salad with Herbs.

If neither homegrown nor farmer’s market options are available, don’t despair! Supermarket cherry tomatoes are often a reliable choice. They tend to retain a much better flavor profile compared to larger, more generic supermarket tomato varieties, making them a perfectly acceptable substitute for this salad.

Freshly Sliced Tomatoes and Cucumbers for Salad

What Cucumbers Are Best for Salads?

For an authentic Eastern European-style tomato and cucumber salad, the preferred cucumber variety is typically small. These compact cucumbers, often known as Kirby cucumbers or sometimes Persian cucumbers, are ideal for their firm texture, minimal seeds, and delightful crunch. Their small size means they are usually less watery than their larger counterparts, contributing to a more satisfying salad experience.

These crunchy, seedless wonders are a hit with everyone, including my children, who much prefer them as a healthy snack over the larger, often milder English cucumber. They’re perfect for dipping or simply munching on raw, and their robust texture holds up beautifully in salads.

Of course, if these specific small varieties are hard to find, any regular cucumber will work. You might notice a slight difference in crunchiness, and the seeds may be larger, requiring a quick scoop out if you prefer. However, even with a standard cucumber, your salad will still be wonderfully refreshing and enjoyable. The key is to ensure it is fresh and firm.

The Creamy Dill Dressing: A Simple Secret to Extraordinary Flavor

Tomato and Cucumber Salad Dressing

At first glance, a dressing of only sour cream and salt might strike you as rather plain or uninspired. However, I assure you, it’s far from bland. The magic of this salad lies in how each of its simple ingredients harmonizes to create a complex and utterly divine flavor profile. The star contributors to this taste sensation are undoubtedly the fresh dill and the perfectly ripe tomatoes.

For the most authentic experience, try to find traditional sour cream, or ‘smetana’, which is readily available in many Eastern European grocery stores. If smetana isn’t an option, high-quality creme fraîche makes an excellent substitute, offering a similar tang and richness. For the best possible flavor and creamy texture, I highly recommend using full-fat varieties. My mum, ever the innovator, even occasionally used a good quality mayonnaise, which offers a slightly different, yet equally delicious, creamy base.

For those who prefer a dairy-free option or simply aren’t keen on sour cream, like my son, worry not! This salad is incredibly versatile. You can easily opt for a dressing made with extra virgin olive oil for a Mediterranean twist, or, for a more traditional Eastern European touch, unrefined sunflower oil. The unrefined sunflower oil, particularly when sourced from Eastern European markets, has a distinct, nutty flavor that complements the fresh vegetables beautifully.

Variations and Substitutions: Personalizing Your Salad

This salad recipe is wonderfully adaptable, a characteristic I observed firsthand growing up. Its composition often shifted based on the availability of seasonal vegetables and my mum’s creative impulses. Don’t hesitate to make it your own by adding or substituting ingredients to suit your taste and what you have on hand.

Some of my favorite additions to this classic salad include:

  • Red onions or shallots: Sliced very thinly, these add a gentle bite and a subtle sweetness that balances the richness of the dressing. For a milder flavor, you can soak them in cold water for a few minutes before adding.
  • Avocado: Creamy avocado cubes introduce a luxurious texture and healthy fats, making the salad more substantial and satisfying.
  • Chopped fresh herbs: Beyond dill, consider adding fresh parsley or mint. Parsley offers a clean, earthy note, while mint brings a refreshing, bright zest that’s perfect for summer.
  • Red or green bell peppers: Diced bell peppers add a vibrant crunch and a sweet, peppery flavor, enhancing both the texture and color of the salad.
  • Cherry Tomatoes (Halved): If using larger tomatoes, adding some halved cherry tomatoes can provide an extra burst of sweetness and varied texture.
  • Radishes: Thinly sliced radishes offer a peppery zing and another layer of crispness, making the salad even more invigorating.
  • Feta Cheese: For those who enjoy dairy, a sprinkle of crumbled feta cheese can add a salty, tangy counterpoint that elevates the flavor profile.
  • Toasted Nuts or Seeds: A handful of toasted pumpkin seeds, sunflower seeds, or chopped walnuts can introduce a delightful crunch and nutty flavor.

Recipe Tips for a Perfect Salad

Achieving the best texture and flavor in this simple salad comes down to a few key techniques:

  • Achieving Uniform Slices: While a sharp chef’s knife can certainly do the job, getting perfectly thin and even cucumber slices can be challenging without professional knife skills. To make your life easier and ensure consistent texture, consider using a mandoline slicer. Thin, uniform cuts are crucial for this creamy cucumber and tomato salad, allowing the dressing to coat every piece beautifully.
  • Allow Flavors to Meld: After you’ve assembled this delicious tomato and cucumber salad, resist the urge to serve it immediately. Let it sit for at least 5 to 10 minutes at room temperature. This short resting period allows the flavors to truly meld and deepen, transforming the individual components into a harmonious whole.
  • The Dressing Transformation: Once the dressing has had a moment to interact with the fresh vegetables, take a moment to taste it. You might be pleasantly surprised by the complex and delicious taste that emerges from such simple ingredients. It’s amazing how sour cream, fresh dill, and ripe tomatoes can create such a profound flavor!
  • Gentle Tossing: When it’s time to combine the dressing with the vegetables, do so gently. Tomatoes, especially when ripe, can be delicate and easily bruised. Use a light hand to ensure the vegetables are fully coated without crushing the tomatoes. Stop mixing as soon as everything is evenly dressed.
  • Season to Taste: As with all salads, the final touch is crucial. Always taste test before serving and adjust the seasoning. A little extra salt or a fresh crack of black pepper can make all the difference, enhancing the natural flavors of the produce.

Serving Suggestions and Perfect Pairings

One of my favorite childhood memories involves dipping a piece of fresh bread into the rich, flavorful dressing of this salad. And who am I kidding? I still do it! For a truly authentic Eastern European experience, pair this salad with a hearty slice of dark rye loaf. Its dense texture and robust flavor provide the perfect complement. However, any crusty white bread will also do the trick, eagerly soaking up every drop of that delicious dressing.

This salad truly shines when made in the summer, when tomatoes and cucumbers are at their absolute peak of freshness. This is precisely why it’s my go-to side dish for virtually every barbecue. It’s the ideal refreshing counterpoint to richer, grilled meats. Imagine it alongside juicy grilled burgers, a perfectly seared steak, succulent grilled shrimp, or tender pork chops. Its vibrant acidity and creamy texture cut through the richness of the grilled proteins, cleansing the palate and enhancing every bite.

Beyond the grill, this versatile salad can accompany a wide array of meals. Serve it with roasted chicken, pan-fried fish, or even alongside simple rice dishes. It also makes a fantastic light lunch on its own, perhaps topped with some grilled halloumi or a hard-boiled egg for added protein. Its simplicity makes it universally appealing, effortlessly elevating any meal from casual weeknight dinner to festive gathering.

Storage and Leftovers: Maintaining Freshness

Like many fresh salads, this tomato and cucumber delight is undoubtedly best enjoyed soon after it’s made. The crisp texture of the cucumbers and the vibrant juiciness of the tomatoes are a significant part of the eating experience, and these qualities tend to diminish over time as the ingredients release their moisture into the dressing.

However, if you do find yourself with leftovers, they can be stored. Transfer any remaining salad to an airtight container and keep it refrigerated. It will generally hold up well for 3-4 days. While the cucumbers might soften slightly and the tomatoes might release a bit more liquid, the flavor will still be delicious. To minimize sogginess, you might consider dressing only the portion you plan to eat immediately and storing the components separately, adding the dressing just before serving leftovers.

This tomato and cucumber salad with fresh dill, spring onions and dressed with sour cream is as delicious as it is simple.

Ingredients

  • 4-5 ripe tomatoes
  • 4-5 Kirby cucumbers, small
  • 2-3 spring onions, sliced
  • 3-4 dill sprigs, leaves only
  • 100 ml/1/3 cup sour cream or creme fraiche
  • salt
  • pepper

Instructions

  • Cut ripe tomatoes into wedges. Slice cucumbers and spring onions, including their white tops. Finely chop the dill leaves.
  • In a medium-sized bowl, combine all the prepared vegetables and dill. Add salt and pepper to taste. Incorporate the sour cream (or creme fraiche) and mix gently until all ingredients are coated. Taste again and add more salt if necessary – a generous seasoning is key for the best flavor!

Notes

  • For the best texture, the cucumber should be cut into thin and even pieces. A mandoline slicer is ideal for this, though a sharp knife can also be used with care.
  • When tossing the vegetables with the dressing, be gentle to avoid bruising the ripe tomatoes. Mix just until the vegetables are fully coated.
  • Allow the salad to rest for approximately 5 minutes before serving. This brief period helps the flavors meld together beautifully. Always taste and adjust seasoning with additional salt or pepper as needed.
