Exploring Asian Chicken Recipes: A Culinary Journey

Having had the privilege of living in Asia, I hold a deep appreciation for the continent’s diverse and vibrant culinary traditions. Asian cuisine offers an incredible spectrum of flavors, ranging from deeply comforting to wonderfully exciting. Many people are intimidated by the thought of cooking Asian food at home, often imagining the need for exotic ingredients and advanced knife skills. However, I’m here to show you that doesn’t have to be the case!

My goal with all Asian-inspired recipes, including this Spicy Peanut Butter Chicken, is to make them accessible and enjoyable for Western kitchens, using ingredients found in most pantries, and catering to busy cooks of all skill levels. If you’re keen to explore more, these recipes are fantastic starting points:

  • Filipino Chicken Adobo: A strong and deeply flavored stew, often cooked low and slow, or conveniently in a slow cooker, showcasing the perfect balance of soy sauce, vinegar, garlic, and peppercorns.
  • Asian Air Fryer Chicken Wings: Achieve irresistibly sticky and crispy-skinned wings with the magic of an air fryer, perfect as a starter, snack, or side dish for any occasion.
  • Chinese Chicken Curry: A hearty and saucy dish, rich in aromatic spices and tender chicken, best served generously over a bed of steamed rice for a truly satisfying meal.
  • Chicken Yaki Udon: A complete meal in one pan, featuring thick udon noodles, tender chicken, and an assortment of fresh vegetables tossed in a savory sauce.
  • Thai Grilled Chicken Salad: A refreshing and vibrant salad that brings us back to the wonderful world of peanuts, with grilled chicken, crisp vegetables, and a zesty dressing.

The Magic of Peanut Butter Sauce

While I may not be the type to whip up a peanut butter sandwich, I confess a complete inability to resist a peanut butter-based sauce, especially when it coats tender chicken. There’s something undeniably captivating about the way its creamy texture and rich flavor transform a dish, particularly in Asian-inspired cooking, and even more so when it carries a delightful spice. The combination of peanuts and chicken might not be the first thing that comes to mind for many Western cooks, but it’s a powerhouse pairing deeply rooted in Asian culinary traditions. Just think of the beloved chicken satay skewers, where a rich peanut sauce is absolutely essential.

What truly makes this sauce, and indeed many other Asian dishes, so incredibly appealing isn’t just the sweet and earthy notes of peanuts. It’s the meticulous balance and interplay of contrasting flavors: the umami and saltiness of soy sauce, the delicate tang of rice wine, the invigorating heat of chili, and a hint of sweetness to tie it all together. This symphony of flavors creates a harmonious and unforgettable experience.

Smooth, natural peanut butter serves as a brilliant, effortless hack for achieving a wonderfully creamy sauce. It’s a reliable pantry staple that stirs into dishes seamlessly, lending its velvety texture and nutty depth without extra effort. I always opt for a natural, unprocessed peanut butter that’s 100% peanuts, free from added sugar. For this recipe, I’ve used smooth peanut butter, but if you enjoy a little extra texture and bite, feel free to substitute with crunchy peanut butter. The key is to use a good quality peanut butter as the foundation of your sauce.

Mastering Your Meal: Essential Recipe Tips and Notes

  • Preparation is Key: While this recipe is incredibly quick to cook, it moves rapidly once you start. Ensure you’re fully organized before you even turn on the stove: chop and grate all your vegetables, cube your chicken, and mix the sauce ingredients in advance. This “mise en place” approach will make the cooking process smooth and stress-free.
  • Choosing Your Chicken: I’ve opted for chicken breasts in this recipe as they are easy to cube evenly and cook quickly. However, if you’re a devoted fan of chicken thighs for their succulence, boneless, skinless thighs work beautifully here and will add even more flavor.
  • Perfect Peanut Balance: Peanut butter is wonderfully rich, and it’s important to strike the right balance in the sauce. Three tablespoons for four servings hits the sweet spot, providing ample flavor without overwhelming the dish or making it too heavy.
  • Flavor Harmony: The sauce achieves its fluid, mouth-wateringly moreish quality through a careful blend of ingredients. Sesame oil adds a nutty aroma, Chinese cooking wine provides depth, soy sauce brings umami and saltiness, and dried chili flakes introduce a customizable kick, all balancing the natural thickness of the peanut butter.
  • Shaohsing Cooking Wine: If you frequently cook Chinese food, investing in a bottle of Shaohsing cooking wine is highly recommended. It offers a unique salty and sweet complexity that is unparalleled in home-cooked Chinese dishes, elevating flavors significantly.
  • Rice Vinegar Substitute: Don’t worry if Shaohsing wine isn’t available. Rice vinegar is a perfectly acceptable substitute and will still contribute a lovely tang to the sauce.
  • Adjusting the Heat: The chili factor is entirely up to your preference. Half a teaspoon of dried chili flakes will give the sauce a pleasant warmth and lift, while a full teaspoon will bring a more pronounced heat. For those who truly love spice, serving the finished dish with a small bowl of chili oil on the side allows everyone to customize their fiery experience.
  • Sauce Consistency: Cook the sauce over medium-low heat. This gentle heat will ensure it remains smooth and liquid. If the heat is too high, the sauce may split, though it will still be edible, it won’t have the same appealing glossy texture.
  • Thinning the Sauce: If you find the sauce becomes too thick during cooking or reheating, simply add a splash of hot water or chicken broth until it reaches your desired consistency.

Serving Up Perfection: What to Serve with Peanut Butter Chicken

One of the many beauties of this Spicy Peanut Butter Chicken recipe is its quick preparation time, making it an ideal candidate for weeknight dinners. To keep your meal low-maintenance and effortlessly delicious, serve it alongside classic fluffy white rice, which will perfectly soak up every drop of that irresistible peanut sauce. For a refreshing and vibrant contrast, a Korean carrot salad adds a tangy, crunchy element that brightens the entire meal.

If you’re looking for a more substantial and varied meal, consider pairing it with a prawn noodle stir fry. This option not only brings an abundance of extra vegetables but also introduces a delightful noodle component. The prawns can easily be omitted to make it a meat-free side, and for any vegetarian diners, remember to swap out regular oyster sauce for a vegetarian oyster sauce alternative in the stir-fry. This thoughtful substitution ensures everyone can enjoy the rich flavors.

Another excellent noodle-based companion is miso noodles with Tenderstem broccoli. These noodles are packed with umami flavor and perfectly complement the Asian profile of the peanut butter chicken, rounding out the meal beautifully while maintaining a cohesive flavor experience.

Smart Storage and Reheating for Delicious Leftovers

This Spicy Peanut Butter Chicken tastes fantastic as leftovers, making it perfect for meal prep or a quick lunch the next day. To store, simply transfer any remaining portions into an airtight container and refrigerate for up to 2-3 days. When you’re ready to enjoy it again, gently reheat on the stovetop over medium-low heat, adding a splash of water or chicken broth if the sauce has thickened too much, to bring it back to its luscious consistency. Alternatively, it can be reheated in the microwave, stirring occasionally until thoroughly warmed through.

For longer storage, this dish freezes wonderfully for up to 2 months. Make sure it’s completely cooled before transferring it to freezer-safe containers. When ready to eat, defrost overnight in the refrigerator, then reheat on the stovetop as described above. Freezing is a great way to ensure you always have a delicious, homemade meal ready to go.

This sweet and salty sauce hits all the flavour hotspots while brimming with nutritious chicken, wholesome peanuts and bright green beans. A quick, family-friendly dinner ready in about 20 minutes!

Ingredients

  • 450g / 1 lb chicken breast, cut into cubes
  • 1 tbsp soy sauce
  • 2 tsp cornstarch
  • 2 tbsp vegetable oil, divided
  • 1/2 onion, chopped
  • 1 tbsp grated ginger
  • 2-3 cloves garlic, minced
  • 100g / 1 cup green beans, trimmed
  • 2-3 green onions, sliced (for garnish)
  • 1 tsp sesame seeds, optional (for garnish)

For the sauce

  • 3 tbsp smooth peanut butter
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 tbsp Chinese Shaohsing cooking wine or 1 tbsp rice vinegar
  • 4 tbsp soy sauce
  • 1/2 – 1 tsp dried chilli flakes, to taste
  • 125ml / 1/2 cup hot water

Instructions

  1. In a medium bowl, combine the soy sauce with cornstarch. Add the cubed chicken pieces, toss to coat, and set aside to marinate while you prepare other ingredients.
  2. Prepare your vegetables: chop the onion, peel and grate the ginger, trim the green beans, and mince the garlic.
  3. In a separate medium bowl, whisk together the peanut butter, brown sugar, sesame oil, Chinese cooking wine (or rice vinegar), soy sauce, dried chili flakes, and hot water until the mixture is completely smooth and well combined. Set this peanut sauce aside.
  4. Heat 1/2 cup of water in a large frying pan or wok and bring it to a boil. Add the green beans and cook for 5 minutes, or until they are tender-crisp and vibrant green. Remove the green beans from the wok to a separate plate, discard the water, and wipe the wok dry.
  5. Place the wok back on the stove over medium-high heat and add 1 tablespoon of vegetable oil. Once the oil is hot, add the marinated chicken pieces and cook for approximately 5 minutes, stirring occasionally, until browned on all sides and cooked through. Remove the chicken to the same plate as the green beans.
  6. Add the remaining tablespoon of vegetable oil to the wok. Introduce the chopped onions and stir-fry for about 5 minutes until softened and translucent. Then, add the grated ginger and minced garlic, stir-frying for another 30 seconds until fragrant.
  7. Pour the pre-mixed peanut sauce into the hot pan with the aromatics and bring it to a gentle simmer. Return the cooked chicken and green beans to the pan. Simmer over medium-low heat for 5 minutes, stirring, until the sauce thickens and becomes glossy, coating the chicken and vegetables beautifully. If the sauce appears too thick, add a small splash of water to reach your desired consistency.
  8. Serve your Spicy Peanut Butter Chicken immediately, garnished with sliced green onions and a sprinkle of sesame seeds, if desired. Enjoy!
