For many families, macaroni and cheese is a staple, a dish that brings smiles and satisfaction. My own family is no exception; we can always use another incredible mac and cheese recipe. While it’s true that classic mac and cheese can feel like an indulgent treat, something not to be enjoyed too often, this recipe changes the game. It’s so effortlessly delicious that you might find yourself adding it to your regular meal rotation without guilt, thanks to its streamlined process and elevated flavor profile.

The inspiration for this particular recipe emerged after a memorable holiday to Sweden a while back. During our trip, I found myself preparing macaroni and cheese twice in just two weeks, and the enthusiastic reactions from my children were priceless. Their constant chatter about how much they “LOVE mac and cheese” was a clear sign: it was time to innovate and create a new, exciting variation on this beloved dish.

Determined to keep our love affair with mac and cheese alive and fresh, I set out to develop a recipe that would be a delightful departure from my usual cheddar and Gruyère version. The goal was to achieve a rich, creamy, and complex flavor without the need for a traditional béchamel-based cheese sauce. And I’m thrilled to report that this Brie and Bacon Mac and Cheese delivers exactly that. Prepare to celebrate, because this easy gourmet mac and cheese doesn’t require crafting an actual cheese sauce from scratch!

Elevate Your Comfort Food: Brie and Bacon Mac and Cheese

This simple yet sophisticated recipe for baked macaroni and cheese redefines comfort food. Its secret lies in harnessing the natural creaminess and luxurious flavor of French Brie cheese, infused with aromatic garlic and fresh thyme. Instead of making a separate cheese sauce, the pasta is gently mixed with the melted, herb-infused Brie, creating an incredibly rich and velvety coating that’s both elegant and surprisingly easy to achieve. While the addition of crispy, smoky bacon is entirely optional, it is highly recommended for an extra layer of flavor and delightful texture that perfectly complements the creamy cheese.

The magic of this easy Brie mac and cheese largely stems from the exquisite flavor profile of Brie itself. This soft, creamy French cheese, a product of centuries of meticulous cheesemaking, boasts a subtly nutty, earthy, and buttery taste that melts beautifully. When gently baked with garlic and thyme, it transforms into a fragrant, luxurious “sauce” that effortlessly coats every piece of pasta. This intelligent shortcut allows you to achieve a truly gourmet mac and cheese experience without the usual complexities of a béchamel. It takes your humble macaroni and cheese and elevates it to an incredible culinary height, offering a taste of French elegance in every bite. And, of course, the fresh thyme and garlic contribute bright, savory notes that enhance the rich cheese without overpowering it.

My personal preference includes adding some crispy, savory bacon to the mix. The bacon introduces a wonderful smoky dimension and a pleasing textural contrast to the smooth, creamy pasta. However, this component is entirely up to your taste and dietary preferences. If you prefer to keep this creamy brie mac and cheese vegetarian, simply omit the bacon. The dish will still be incredibly flavorful and satisfying. Either way, this recipe is a definite winner, and I encourage you to try making it very soon!

Why this Brie Mac and Cheese is a Game-Changer

The true brilliance of this recipe lies in its elegant simplicity. While many gourmet mac and cheese recipes call for a complicated roux and béchamel sauce, this version bypasses all that. By baking the Brie with aromatics until it’s perfectly melted, you create a flavorful, ready-made “sauce” base that simply needs to be combined with your cooked pasta. This method significantly cuts down on prep time and makes this sophisticated dish accessible to even novice cooks. It’s the ultimate hack for achieving rich, creamy mac and cheese without the fuss, proving that fancy doesn’t have to mean difficult.

Ingredients Spotlight: The Stars of the Show

  • Brie Cheese: The undeniable hero. Choose a good quality Brie for the best flavor. Its soft, rich texture melts into a dreamy, velvety coating.
  • Garlic & Thyme: These humble herbs infuse the Brie with an aromatic depth that elevates the entire dish. Fresh is always best for maximum impact.
  • Bacon: For those who love a smoky, salty crunch, bacon adds a fantastic layer of flavor and texture. Cook it until perfectly crisp to achieve the best results.
  • Pasta: Short pasta shapes like penne, elbow macaroni, or cavatappi work wonderfully, as their nooks and crannies hold onto the creamy sauce beautifully.
  • Parmesan Cheese: A final sprinkle of grated Parmesan adds a salty, umami kick and contributes to that irresistible golden crust when baked.
  • Butter: Essential for richness and ensuring the pasta remains wonderfully smooth and doesn’t stick.

Tips for Perfection

  • Don’t Overcook the Pasta: Cook your pasta al dente. It will continue to cook slightly in the oven, and you want it to retain a pleasant chew, not become mushy.
  • Quality Brie Matters: Since Brie is the star, investing in a good quality cheese will truly make a difference in the final flavor.
  • Reserve Pasta Water: That starchy pasta water is liquid gold! It helps to emulsify the sauce, making it extra creamy and ensuring it coats the pasta perfectly. Don’t skip this step.
  • Crispy Bacon: If using bacon, cook it until it’s truly crispy. The contrast of the crispy bacon with the creamy pasta is key to its appeal.
  • Serving: This Brie and Bacon Mac and Cheese is hearty enough to be a main course, especially when paired with a fresh green salad or some crusty bread. It also makes a fantastic side dish for roasted chicken or pork.

Variations to Explore

While this recipe is perfect as is, it’s also wonderfully adaptable:

  • Mushroom Magic: Sauté some wild mushrooms (like cremini or shiitake) with a touch of butter and add them to the pasta along with the bacon.
  • Spice It Up: A pinch of red pepper flakes added to the garlic and thyme when baking the Brie can give it a subtle kick.
  • Greens Power: Stir in some wilted spinach or kale at the end for an extra nutritional boost and a pop of color.
  • Different Herbs: Rosemary or sage could also work beautifully with Brie, offering a different aromatic profile.

This gourmet mac and cheese with brie and bacon is more than just a meal; it’s an experience. It proves that sophisticated flavors can be achieved with surprising ease, turning an everyday dish into something truly special. Whether you’re entertaining guests or simply treating your family to an elevated comfort food classic, this recipe is sure to impress.

This brie mac and cheese with bacon and herbs sounds very posh but in reality is easier to master than the classic recipe!

Ingredients

  • 8 oz / 250 g brie cheese
  • 2-3 sprigs fresh thyme, leaves only
  • 2 cloves garlic, thinly sliced
  • 2 tbsp unsalted butter
  • 1 lbs penne or any other short pasta
  • 3 tbsp fresh Parmesan cheese, grated
  • 4 strips bacon (optional, but highly recommended)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare the Brie: Carefully slice the top rind off your wheel of Brie cheese. Arrange the thinly sliced garlic and fresh thyme leaves directly on top of the exposed Brie.
  3. Bake the Brie: Place the prepared Brie in a small, oven-safe baking dish. Bake in the preheated oven for approximately 25 minutes, or until the Brie is completely melted and gooey.
  4. Cook the Pasta: While the Brie is baking, cook your chosen short pasta in a large pot of generously salted water according to the package directions until al dente.
  5. Prepare the Bacon (if using): While the pasta cooks, slice the bacon into small pieces. Fry the bacon in a skillet over medium heat until crispy. Remove the cooked bacon to a plate lined with paper towels to absorb any excess fat.
  6. Season the Pasta: Once the pasta is cooked, take the pot off the heat. Drain the water, but be sure to reserve about 1 cup of the starchy pasta water for later use. Return the drained pasta to the pot. Stir in 2 tablespoons of grated Parmesan cheese, 2 tablespoons of butter, and season with salt and pepper to taste. Add about ½ cup of the reserved pasta water to make the pasta slightly runny; you want it moist, not dry. Cover the pot with a lid and set aside.
  7. Combine and Mix: When the Brie is completely melted, pour it directly into the pot with the pasta. If the “sauce” appears too thick, add a bit more of the reserved pasta water, splash by splash, until the pasta is fluid and creamy, not solid. Gently stir everything together until the pasta is thoroughly coated with the melted Brie. Finally, stir in the crispy bacon pieces (if using).
  8. Final Bake: Pour the Brie and bacon macaroni and cheese mixture into a buttered baking dish. Sprinkle the remaining grated Parmesan cheese evenly over the top. Bake in the 350°F (180°C) oven for an additional 20-30 minutes, or until the mac and cheese is heated through and a beautiful golden, bubbly crust forms on top.
