Ingredients
- 2 pork tenderloins
- 1 tbsp olive oil (for the pork)
- Salt, to taste
For the sauce
- 350 g / 12 oz green peppers, not spicy
- 1 green chilli
- 50 g / 1/2 cup blanched almonds
- 50 g / 2 oz parsley, leaves and stems
- 1 tbsp sherry vinegar
- 1 tsp cumin
- 4 tbsp olive oil
- Salt, to taste
Instructions
- Preheat the oven to 200°C / 400°F. Place the whole green peppers and the green chilli on a roasting pan, drizzle with 1 tbsp olive oil, and roast for 30–40 minutes until the peppers are soft and collapsed.
- Remove from the oven, cover the peppers with a kitchen towel, and let cool. When cool enough to handle, peel if desired and remove the seeds.
- Make the sauce by combining the roasted green peppers, green chilli, almonds, parsley, sherry vinegar, cumin, olive oil and a pinch of salt in a food processor. Blend until smooth and set aside.
- Take the tenderloins out of the fridge 30 minutes before grilling to reach room temperature. Season with salt and coat with olive oil.
- Grill the tenderloins on a preheated grill at about 220°C / 450°F, turning occasionally so all sides develop colour. Grill for 16–20 minutes, or until a meat thermometer registers 62°C / 145°F at the thickest point. Remove and rest for 10 minutes before slicing.
