The Harmony of Roasted Squash and Spiced Lentils
The recipe we are delving into today is a masterpiece of culinary balance, showcasing how simple ingredients can come together to create something truly extraordinary. It’s incredibly satisfying, deeply flavorful, and remarkably nutritious. The foundation of roasted butternut squash provides a sweet, earthy base, while the spiced lentils add a hearty, aromatic counterpoint. Together with fresh herbs, creamy feta, and crunchy pine nuts, this dish delivers a complete and fulfilling meal that ticks all the boxes – vitamins, minerals, fiber, and protein.
This dish is a testament to the idea that the whole is greater than the sum of its parts. Each ingredient plays a crucial role in building layers of flavor and texture. The natural sweetness of the caramelized roasted butternut squash is perfectly complemented by the savory depth of lentils, seasoned with an exotic blend of curry spices like cumin, turmeric, and paprika. These warm spices infuse the lentils with an irresistible aroma and a subtle heat that awakens the palate.
Topping it all off, the briny, tangy notes of crumbled feta cheese cut through the richness, adding a refreshing zest, while a generous sprinkle of toasted pine nuts introduces a delightful crunch and a nutty finish. This thoughtful combination ensures that every bite is an exciting interplay of sweet, savory, tangy, and textural sensations, making it a dish that feels both comforting and surprisingly sophisticated.

Expert Recipe Tips and Notes for Success
- **Efficient Prep:** To streamline your cooking process, embrace the power of mise en place. Get all your ingredients prepped and ready before you begin. Multitasking is key here: while the butternut squash roasts, you can start preparing the spiced lentils.
- **Lentil Choices:** While dry green lentils are recommended for their texture and flavor, feel free to use canned lentils for convenience. If using canned, simply rinse them thoroughly and add them to the lentil mixture during the last 5 minutes of simmering, as they are already cooked.
- **Squash Preparation:** Ensure your butternut squash is cut into roughly even-sized pieces. This consistency is vital for even roasting, preventing some pieces from becoming mushy while others are still firm. While butternut squash is ideal for its sweetness and texture, this recipe is adaptable. Feel free to substitute with other types of squash like acorn, delicata, or even pumpkin, adjusting roasting times as needed.
- **Spice It Up:** Don’t be afraid to experiment with the spices. The recipe calls for dry cumin, turmeric, and paprika, but you can certainly use 2 tablespoons of your favorite curry paste for a different flavor dimension and quicker prep. Adjust the amount to your preferred level of spice.
- **Smart Cleanup:** To minimize dishwashing, once the butternut squash is tender and beautifully caramelized, simply add the prepared spiced lentil mixture directly into the same baking pan. Gently toss everything together to ensure the squash is evenly coated.
- **Freshness Matters:** For the best texture and flavor, always add the crumbled feta and crunchy pine nuts just before serving. This ensures the feta remains creamy and distinct, and the pine nuts retain their wonderful toasted crispness.

Elevate Your Meal: Inspired Serving Suggestions
This delightful combination of roasted butternut squash and spiced lentils is incredibly versatile and shines in various settings. It practically begs to be served as a spectacular centerpiece for a weekend brunch, a vibrant lunch, or a satisfying dinner. To complete the meal, all it truly needs is a generous, hearty chunk of crusty sourdough bread to sop up every last drop of the flavorful sauce. The slight tang of sourdough provides a wonderful contrast to the dish’s warmth.
If you wish to expand the meal further and add an extra layer of freshness and texture, consider pairing it with a simple side salad. A light vinaigrette dressing on crisp mixed greens, perhaps with some cherry tomatoes or cucumber, would offer a refreshing contrast in both color and crunch, balancing the rich flavors of the main dish beautifully. Another excellent addition could be a dollop of plain Greek yogurt or a swirl of tahini sauce, which would introduce a creamy, cooling element to the spiced lentils.
Storage and Leftovers: Savoring Every Bit
While this dish is undoubtedly at its peak when served fresh and hot, its fantastic flavors make leftovers a highly anticipated treat. You can confidently store any remaining portions in an airtight container in the refrigerator for up to 5 days. This makes it an ideal meal prep option for busy weekdays.
A crucial tip for storing leftovers: refrain from adding the pine nuts or feta cheese to any portions you intend to save. Both of these ingredients are best enjoyed fresh, as their texture and quality tend to diminish over time in the refrigerator. To maintain their optimal taste and crunch, always add them after you’ve reheated and plated your meal.
When reheating, an oven is often the best method to restore the dish’s original warmth and texture. Preheat your oven to 375°F (190°C) and reheat for 5-7 minutes, or until the entire dish is heated through. If time is of the essence, you can also reheat it gently on the stovetop over low heat, stirring occasionally, or even in the microwave, though the oven will yield superior results, especially for the squash.

Ingredients
- 190g / 1 cup green lentils, dry, uncooked
- 1kg / 2 lbs (1) butternut squash, peeled and cubed
- 3 tbsp olive oil
- 1 large red onion, sliced
- 1 tbsp cumin
- 1 tbsp turmeric
- 1 tbsp paprika
- 2 cloves garlic, minced
- 400g / 14 oz canned tomatoes
- 1 tsp sugar
- 20g / 1/2 cup flat leaf parsley, chopped
- 20g / 1/2 cup cilantro/coriander, chopped
- 100g / 1/2 cup feta, crumbled
- 35g / 1/4 cup pine nuts
Instructions
- Preheat the oven to 375°F (190°C). Wash the lentils and place them in a pot with plenty of water. Bring to a boil, add a pinch of salt, and cook until tender but still firm for about 20 minutes.
- While lentils are cooking, cube the butternut squash. Toss it with one tablespoon of olive oil and spread evenly on a shallow baking pan. Sprinkle with some salt. Roast for 30 minutes, or until tender and lightly caramelized.
- While the squash is roasting, slice the onions and cook them in the remaining olive oil over low heat for 5 minutes until softened but not browned. Then, add cumin, turmeric, paprika, minced garlic, and a pinch of salt. Cook for another minute, stirring constantly, until fragrant.
- Next, add the canned tomatoes, half of the chopped parsley, and half of the chopped cilantro to the onion and spice mixture. Stir in a pinch of sugar and an additional pinch of salt. Let it simmer gently for 10-15 minutes to allow the flavors to meld. Stir in the cooked lentils during the final 5 minutes of simmering.
- Once the butternut squash is roasted, add the spiced lentil mixture to the pan with the squash. Gently toss to combine and ensure the squash is evenly coated. Stir in the remaining fresh parsley and cilantro.
- Serve immediately, topped with crumbled feta cheese and a generous sprinkle of pine nuts. Enjoy this vibrant and satisfying meal!
