Why Rhubarb? The Tangy Star of the Show
Rhubarb is one of nature’s most captivating ingredients. Its distinctive tartness, coupled with a subtle earthy sweetness, offers a flavor profile unlike any other. For those who eagerly anticipate its return each spring, rhubarb signals the arrival of warmer days and lighter, more vibrant cooking. While many might associate it primarily with pies and crumbles – and if you’re a fan, you simply must try our amazing Rhubarb Crumble! – its versatility extends far beyond desserts.
When transformed into a syrup, rhubarb lends its unique character beautifully to beverages. It imparts a complex tartness that perfectly complements the spicy kick of ginger beer and the zesty brightness of lime, all while adding a stunning natural color. This seasonal gem brings an elegant sophistication to any drink, making it feel both familiar and excitingly new. Embrace the fleeting season of rhubarb by incorporating its delightful notes into your culinary and cocktail creations.

Crafting the Perfect Rhubarb Syrup: Your Secret Ingredient
The heart and soul of our Rhubarb Moscow Mule is, without a doubt, the homemade rhubarb syrup. While rhubarb can be enjoyed in various forms, creating a simple syrup is arguably the best way to capture its essence for cocktails and other liquid delights. Making it at home ensures pure, unadulterated flavor without any artificial additives.
The process is incredibly straightforward: just combine chopped rhubarb with sugar and water, then gently simmer until the rhubarb breaks down and infuses the liquid with its characteristic taste and beautiful pink color. The result is a liquid gold that’s truly versatile. Beyond cocktails, this syrup is fantastic drizzled over pancakes, waffles, yogurt, or even enjoyed simply mixed with sparkling water for a refreshing non-alcoholic treat. Its vibrant taste makes it a star in its own right.
To prepare your rhubarb, simply wash the stalks thoroughly and chop them into roughly 1-inch pieces. No need to peel, as the skin contributes to both the color and flavor. Once made, the syrup should be strained through a fine sieve to achieve a smooth consistency. For optimal longevity, store your homemade rhubarb syrup in a clean, sterilized jar or bottle in the refrigerator. Properly stored, it will last for several weeks, allowing you to enjoy the taste of spring long after rhubarb season has passed. Consider making a larger batch to ensure you always have some on hand.
The Iconic Moscow Mule: A Glimpse into its Legacy
Before we dive deeper into our rhubarb-infused version, let’s take a moment to appreciate the classic Moscow Mule. This refreshing cocktail has a fascinating history, rumored to have been invented in the 1940s by three individuals trying to market vodka, ginger beer, and copper mugs. Regardless of its exact origins, the Moscow Mule quickly rose to popularity thanks to its crisp, invigorating flavor profile.
The traditional Moscow Mule is a straightforward yet perfectly balanced concoction of vodka, fresh lime juice, and spicy ginger beer. It’s a drink that delivers a delightful kick and a clean finish, making it a perennial favorite, especially during warmer months. Its simplicity makes it approachable, while its distinct flavor ensures it leaves a lasting impression. The refreshing combination of citrus and ginger provides a wonderfully cooling sensation, making it an ideal choice for unwinding after a long day or for a lively social gathering.

The Rhubarb Elevation: A New Dimension of Flavor
Now, let’s talk about how our homemade rhubarb syrup transforms the classic Moscow Mule into something truly special. The addition of rhubarb syrup isn’t just a minor tweak; it’s a complete flavor elevation. The syrup introduces a complex tartness that perfectly complements the existing bright and spicy notes of the traditional drink. It smooths out the edges of the vodka, deepens the citrusy tang of the lime, and adds a beautifully fragrant quality that lingers on the palate.
Beyond the exquisite taste, the rhubarb syrup imparts a breathtaking blush of pink to the cocktail, making it as appealing to the eye as it is to the taste buds. This gorgeous hue instantly signals freshness and lightness, setting it apart from its traditional clear counterpart. The subtle sweetness of the syrup also balances the tartness of the rhubarb and lime, creating a harmonious and incredibly quaffable drink. Each sip offers a delightful dance of sweet, sour, and spicy, culminating in a wonderfully refreshing experience. This Rhubarb Moscow Mule is not just a drink; it’s a conversation starter, a visual masterpiece, and an utterly delicious concoction that will undoubtedly become a new favorite.

Mastering Your Moscow Mule: Tips for an Unforgettable Sip
Crafting the perfect Moscow Mule, whether classic or rhubarb-infused, comes down to a few key principles. Following these simple tips will ensure every glass you serve is wonderfully refreshing and packed with flavor, guaranteeing a memorable drinking experience for you and your guests.
Pro Tips for Your Perfect Mule
- Embrace the Chill: This cocktail thrives on being served exceptionally cold. Don’t be shy with the ice! Fill your glasses to the brim to keep your drink icy and refreshing from the first sip to the last.
- Fresh is Best: While bottled lime juice offers convenience, it simply cannot compare to the vibrant, zesty flavor of freshly squeezed lime. Investing a little extra effort to squeeze your own – perhaps with the help of a citrus squeezer – makes an enormous difference in the overall taste and brightness of your cocktail.
- Ginger Beer Choice: The quality of your ginger beer significantly impacts the final taste. Opt for a good quality, non-alcoholic ginger beer with a pronounced ginger kick. Avoid ginger ale, which is generally sweeter and less potent in flavor, and seek out brands known for their robust ginger profile.
Serving with Style: Beyond the Copper Mug
If you’ve ever ordered a Moscow Mule at a bar or restaurant, it was likely served in the iconic copper mug. There’s no denying its aesthetic appeal; the frosty copper vessel looks undeniably chic and contributes to the drink’s mystique. However, the notion that a copper mug is absolutely essential for an authentic Moscow Mule experience is largely a result of savvy marketing.
While many enthusiasts will praise copper for its supposed ability to keep the drink colder longer, or claim it enhances the taste, the truth is far simpler. The most important factor in a refreshing Moscow Mule is the temperature of the drink itself – achieved by plenty of ice and thoroughly chilled ingredients – not the material of the cup. I’ve personally experimented with both traditional copper mugs and various other glasses, and I’m convinced that the perceived “magic” of the copper mug is mostly psychological. For home entertainers, investing in special copper mugs for occasional use might seem unnecessary.
The good news? You absolutely do not need special copperware to enjoy a fantastic Rhubarb Moscow Mule. Feel free to use any tall glass you have on hand, as long as it accommodates plenty of ice and provides enough space for a generous, long drink. A highball glass, a Collins glass, or even a sturdy pint glass will work beautifully. Focus on the quality of your ingredients and the chill factor, and your Rhubarb Moscow Mule will be every bit as delicious and refreshing. Don’t let the lack of a copper mug deter you from experiencing this delightful cocktail!
To further enhance the presentation and add a touch of freshness, always garnish your Rhubarb Moscow Mule. Lime wedges are a classic choice, offering an extra burst of citrus aroma and flavor. For a more elegant touch, you can also add a thin slice of fresh rhubarb or a sprig of mint.
Beyond the Glass: Pairing & Variations
The Rhubarb Moscow Mule is a truly versatile cocktail, perfect for a variety of occasions and culinary pairings. Its bright, tangy, and spicy notes make it an excellent companion to light spring and summer dishes.
- Food Pairings: Consider serving your Rhubarb Moscow Mule alongside grilled chicken or fish, fresh green salads with a zesty vinaigrette, or light appetizers like shrimp ceviche or bruschetta. The ginger and lime flavors also complement Asian-inspired dishes or spicy tacos. For something sweet, it would pair wonderfully with fruit tarts or a simple vanilla bean ice cream.
- Mocktail Version: If you’re looking for a delicious non-alcoholic option, simply omit the vodka and increase the amount of rhubarb syrup to taste. Top with ginger beer and a generous squeeze of fresh lime for a vibrant and refreshing mocktail that everyone can enjoy.
- Spirit Variations: While vodka is traditional for a Moscow Mule, you can experiment with other spirits to create different “mule” variations. Try gin for a Gin Gin Mule, tequila for a Mexican Mule, or even bourbon for a Kentucky Mule. Each spirit will interact differently with the rhubarb syrup, offering a new dimension of flavor to explore.
- Herbal Infusions: For an extra layer of complexity, muddle a few fresh mint leaves or basil leaves in your cocktail shaker along with the lime juice and rhubarb syrup before adding the vodka and ice. The herbal notes will beautifully complement the rhubarb and ginger.

- 4 cups / 400g rhubarb, chopped
- 1 cup / 200g sugar
- 1 cup / 250ml water
For the Moscow mule
- 6oz / 150ml vodka
- 3-4 tsp rhubarb syrup
- 2 tbsp fresh lime juice
- 1 cup / 250ml non-alcoholic ginger beer
- Lime wedges to decorate glasses
Instructions
To make the rhubarb syrup
-
In a saucepan combine chopped rhubarb, sugar and water, bring to a boil and cook over low heat for 7-10 minutes until rhubarb is very tender and falling apart.
-
Strain the rhubarb syrup through a fine sieve and store in a clean, sterilised bottle in a refrigerator.
To make Rhubarb Moscow Mule
-
In a cocktail shaker combine vodka, rhubarb syrup and lime juice with ice cubes, shake well.
-
Pour into two tall glasses filled with ice and top with ginger beer. Serve with lime wedges.
Notes
- Like almost every other cocktail, this drink needs to be very cold. Use plenty of ice!
- Although it can be tempting to purchase lime juice for a little added convenience, it really can’t compete with the taste of freshly squeezed lime. It only takes a little effort to squeeze your own – especially when using a citrus squeezer – but makes a big difference in taste!
- Moscow mules are traditionally served in copper cups, which does look beautiful, but I doubt that many of us would really want to invest in cups for such a specific purpose. Leave that to bars and restaurants! I’m convinced that this is mostly marketing anyway, so you really won’t lose anything by choosing a glass you already have in your cupboard!
