For those exploring the journey towards a more plant-forward diet, this soup is an excellent starting point. It’s entirely meat-free, yet incredibly satisfying and packed with protein and fiber. If you’re not ready to fully commit to meatless meals, that’s perfectly fine! Consider gradually introducing more plant-based dishes. For instance, you could try a lentil and bacon soup as a bridge, ensuring you still benefit from a significant boost of plant goodness.

Embracing the Plant-Powered Lifestyle: Health and Environmental Benefits

The culinary landscape is constantly evolving, with a growing emphasis on plant-based eating. Messages like “eat the rainbow,” “hit 30 different plants per week,” and “up your fiber intake” are everywhere, backed by a wealth of mounting scientific evidence. This shift isn’t just a trend; it’s a movement towards improved physical and mental health, while also making a tangible positive impact on our planet.

For newcomers to mindful eating, visualizing a delicious plant-based meal beyond a simple plate of steamed broccoli and brown rice can sometimes be challenging. The good news is, the world of plant-based cuisine is anything but boring! It’s rich with an abundance of diverse, flavorful, and incredibly satisfying options. My blog, for example, is filled with creative recipes that showcase the versatility and excitement of incorporating more plants into your diet.

In our household, while we maintain a commitment to enjoying meat, I am deeply passionate about integrating more fiber-rich ingredients like beans, grains, and seeds, alongside a vibrant array of vitamin-packed fruits and vegetables. This particular lentil and spinach soup recipe perfectly embodies this philosophy. It’s exceptionally high in fiber, courtesy of the wholesome brown lentils, and a fantastic source of iron from the generous addition of fresh spinach. And let’s not forget the incredible benefits contributed by the eight other plant ingredients that make this soup a true nutritional powerhouse!

Mastering the Easy Lentil and Spinach Soup Recipe

Lentils, for a long time, suffered from an unfair reputation. Since the 1960s, they were often dismissed as bland, boring, or simply “hippie food.” However, recent culinary shifts and increased nutritional awareness have rightfully rebranded them as a true powerhouse of nutrition. They offer an incredible combination of fiber and protein in one compact package, making them an essential component of any healthy diet. When you combine them with the goodness of spinach, you create a meal that is almost unparalleled in its wholesomeness and health benefits.

One of the most appealing aspects of traditional lentil soup recipes, and certainly this one, is their remarkable simplicity. This isn’t a complex, multi-step culinary endeavor. It requires just one pot and a balanced blend of readily available ingredients. Contrary to outdated beliefs, you don’t need to spend hours soaking and pre-boiling lentils. This recipe comes together in under an hour, with a significant portion of that time being hands-off, allowing the flavors to meld beautifully while you attend to other tasks.

This low-fat, tomato-based lentil soup truly sings with flavor, primarily derived from a thoughtful blend of warm, Eastern spices: cumin, coriander, and paprika. Using a generous hand with these spices accomplishes two crucial things. Firstly, it elevates the flavor profile, adding layers of complexity and depth that transform humble lentils into an exotic delight. Secondly, it adds even more plant diversity to your meal. Yes, you heard that right! Did you know that spices, herbs, and even quality coffee and dark chocolate contribute to your goal of consuming 30 different plants per week? Achieving this target is much easier and more delicious than you might think!

While this particular recipe is designed to be incredibly flexible, I’ve crafted it for a household that isn’t strictly vegetarian. Therefore, I’ve opted to use chicken stock and a touch of Parmesan cheese to deepen the savory notes and add an irresistible tangy edge with extra saltiness. However, transforming this into a completely vegetarian or vegan lentil soup is incredibly simple. Just two ingredient swaps are all it takes to make it perfectly plant-friendly (details below).

Bonus point: For an extra burst of freshness and another “plant point,” generously sprinkle each serving with freshly chopped cilantro or parsley. These herbs not only contribute vital nutrients but also add an uplifting, fragrant note that brightens the entire dish.

Important Recipe Tips and Notes for Perfect Lentil Soup

  • Make it Vegetarian or Vegan: To make this soup completely plant-based, simply swap the chicken stock for a high-quality vegetable stock. For a vegan version, omit the Parmesan cheese entirely, or substitute it with a plant-based hard cheese alternative.
  • Texture Preference: This recipe yields a thick, hearty soup with a satisfying texture from the cooked lentils. If you prefer a silky smooth soup, you can easily blend a portion or all of it using an immersion blender or a regular blender (carefully!) before serving.
  • Don’t Skimp on Spices: Lentils are wonderful at absorbing flavors, so don’t be shy with the spices! Cumin, coriander, and paprika are key to building the soup’s aromatic foundation. If you are opting for vegetable stock and no Parmesan, consider adding a little extra seasoning to ensure maximum flavor.
  • Frozen is Fine: Fresh spinach is fantastic, but if it’s not readily available or you prefer the convenience, feel free to use frozen spinach or kale. Just add it directly to the soup during the last few minutes of cooking, allowing it to wilt and warm through.

What to Serve with Your Hearty Lentil Soup

While this lentil and spinach soup is undeniably hearty and filling on its own, I’ve learned from experience that a single bowl of soup for lunch isn’t always enough for everyone! A delicious soup paired with a complementary sandwich, however, is almost always a welcomed and satisfying combination. Here are a few sandwich suggestions, catering to different dietary preferences, that perfectly match the gently spiced flavors of this nourishing lentil soup:

  1. Purely Plants: For a completely plant-forward meal, a chickpea salad sandwich is an excellent choice. Its creamy texture and savory flavor create a wonderful contrast to the warm soup.
  2. Eggs and Dairy Lovers: If you enjoy eggs and dairy, a classic egg salad sandwich with cress provides a light yet protein-rich accompaniment that feels comforting and familiar.
  3. A Touch of Indulgence: For those who still crave a more traditional pairing, a crisp and gooey ham and cheese toastie offers a delightful textural and flavor contrast that elevates the meal to pure comfort food status.

Beyond sandwiches, consider serving your lentil soup with a slice of warm, crusty bread or a side of fluffy couscous to soak up all the delicious broth. A simple green salad with a light vinaigrette can also add a refreshing counterpoint to the rich flavors of the soup.

Storage and Leftovers: The Ultimate Meal Prep Solution

This easy lentil and spinach soup recipe is truly a champion for batch cooking and meal prepping. It’s incredibly freezer-friendly and will maintain its quality for up to three months, making it a brilliant investment of your time and nutrition, especially during the colder months when a warm, nourishing meal is most desired. Imagine having a wholesome, homemade dinner ready to go on those busy weeknights!

If you plan to enjoy it within a few days, the lentil soup will also keep beautifully for 3-4 days when stored in an airtight container in the fridge. When you’re ready to reheat, simply warm it gently on the stovetop over low to medium heat, stirring occasionally until heated through. You might need to add a splash of extra stock or water to reach your desired consistency, as lentils tend to absorb liquid as they sit.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp hot Spanish paprika
  • 140g / 14 oz canned chopped tomatoes
  • 250g / 1⅓ cup beluga lentils, (brown lentils)
  • 5 cups chicken or vegetable stock, plus additional 500ml / 2 cups for later
  • 1/2 tsp salt
  • 120g / 4 oz fresh spinach
  • 2-3 tbsp grated Parmesan cheese, for serving (optional, or use vegetarian hard cheese)

Instructions

  • Heat the olive oil in a large soup pot over low heat. Add the chopped onions and sauté for 5-7 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant. Next, add the cumin, ground coriander, and hot Spanish paprika, stirring briefly to release their aromas. Pour in the canned chopped tomatoes, increase the heat to medium-high, and bring to a gentle simmer.
  • Stir in the lentils and 1.25 litres (5 cups) of chicken or vegetable stock along with a good pinch of salt. Bring the soup back to a simmer, then reduce the heat to low, cover the pot, and cook for 35 minutes, or until the lentils are tender and cooked through.
  • Once the lentils are fully cooked, you’ll notice they have absorbed quite a bit of liquid. At this point, add an additional 500ml (2 cups) of stock. You can add more if you prefer a thinner soup. Bring the soup to a simmer once again, then stir in the fresh spinach. Allow the spinach to wilt into the soup for a couple of minutes. Taste and adjust seasoning with more salt if needed.
  • Serve the hot soup immediately, garnished with grated Parmesan cheese (if using) or a sprinkle of fresh herbs like cilantro or parsley for added flavor and a pop of color. Enjoy!
