Welcome to the heartwarming world of Georgian cuisine, where every dish tells a story, and flavors sing with a unique blend of tradition and comfort. Today, we’re diving deep into the soul-soothing embrace of Kharcho, a dish that transcends mere sustenance to become a true culinary experience. More than just a spicy chicken and rice soup, this Georgian masterpiece is a nourishing elixir, bursting with fresh herbs, robust garlic, and a gentle kick of chili. It’s thick with tender rice and succulent shredded chicken, transforming into a hearty, one-bowl meal that promises to uplift spirits and warm the coldest winter days.
While many seek the clean, vibrant notes of tomato-based soups for a revitalizing lift, there are moments when only profound comfort will do. And comfort, for some, might conjure images of creamy textures. However, Kharcho offers a different kind of solace – a deeply savory, aromatic, and slightly tangy warmth that penetrates to your core, providing both nourishment and an invigorating zest. Forget bland bowls; this is soup with character, a dish that invites you to savor every rich, complex spoonful.

The depths of winter, particularly January, often bring with them an unwelcome guest: colds and flu. During such times, motivation can be scarce, and even the simplest tasks feel monumental. It was in one such moment of depleted energy that I rediscovered an age-old remedy, a comfort food passed down through generations: chicken soup. But not just any chicken soup. I yearned for the distinctive, fortifying, spicy, and subtly sour embrace of Georgian Kharcho. Having experienced its restorative powers firsthand during childhood ailments, my faith in its magical properties was unwavering. Thus, I rallied my last reserves, ventured into the kitchen, and began assembling this miraculous, health-giving concoction.
The reputation of chicken soup as a potent wellness elixir is well-deserved, lauded across cultures for its ability to soothe symptoms and speed recovery. Yet, Kharcho takes this reputation a step further, infusing the classic comfort with a vibrant array of Georgian spices and fresh herbs, elevating its healing qualities. The result? After just one bowl, both my husband and I felt remarkably brighter, a testament to its powerful restorative properties. This truly is a recipe too good and too beneficial not to share with you.
Unveiling the Layers: What Makes Georgian Kharcho Soup So Special?
Kharcho is not just a soup; it’s a symphony of flavors, a testament to Georgia’s rich culinary heritage. Each ingredient plays a crucial role in creating its iconic taste and texture. Let’s break down the essential components that make this dish a truly unforgettable experience.
The Soulful Broth: Foundation of Flavor
The foundation of this steaming, hydrating, and utterly delicious soup lies in a rich chicken broth and the tangy sweetness of crushed tomatoes. For convenience and to expedite the process, especially when not feeling my best, I opted for a quick stock recipe, utilizing tender chicken thighs and simmering them for a swift 40 minutes. This efficient method allowed me ample time to focus on developing the complex flavors that are unequivocally “Kharcho.” While a longer simmer can yield a deeper stock, this expedited approach ensures a flavorful base without unnecessary fuss, making it perfect for a weeknight meal or when you need comfort in a hurry.
Aromatic Herbs: The Green Heart of Kharcho
One of the defining characteristics of Kharcho is its generous embrace of fresh greenery. This recipe calls for an abundance of fresh cilantro (coriander) and peppery parsley, along with the bright, subtle heat of fresh green chili. These vibrant ingredients, combined with pungent garlic, are not merely chopped and tossed in. Instead, they are meticulously whizzed together in a food processor (or lovingly pounded in a mortar and pestle for a more rustic touch) to create a striking, bright green, and intensely fragrant paste. This aromatic blend is then gently sautéed with finely chopped onion and a touch of butter, allowing its essential oils to bloom and deepen before the tomatoes, homemade stock, and rice are introduced to the pot. This crucial step infuses the entire soup with an unparalleled freshness and depth.
Khmeli Suneli: The Enigmatic Georgian Spice Blend
No discussion of Kharcho is complete without paying homage to its most vital spice component: Khmeli Suneli. Meaning ‘dried spices’ in Georgian, this magical blend is often described as Georgia’s answer to curry powder, yet its profile is distinctly unique. It typically comprises dried coriander, basil, marjoram, dill, chili, and turmeric, among other possible additions like fenugreek and blue fenugreek (utskho suneli), savory, and marigold petals. The result is a warming, aromatic, and profoundly complex mixture that provides the quintessential Georgian character to the soup. While you could attempt to mix your own, the convenience and balanced flavor of a ready-made mix make it a worthwhile pantry staple, especially when you’re feeling under the weather and want to streamline your cooking process. These specialized blends are now easily sourced online, making authentic Georgian flavors accessible to home cooks around the world.
Succulent Protein: The Star of the Bowl
For this comforting Kharcho, I’ve chosen juicy and nutritious chicken thighs. Their inherent richness and tendency to remain tender even after simmering make them an ideal choice. The thighs are cooked directly in the stock, lending their flavor to the broth, then carefully removed, shredded, and reintroduced to the soup towards the end of the cooking process. This ensures the chicken remains moist and flavorful, adding a satisfying bite and ample protein to each spoonful.
Hearty Carbs: The Filling Foundation
Rice is an indispensable component of this traditional Georgian soup. It serves multiple purposes: adding budget-friendly bulk, contributing a wonderfully satisfying texture, and absorbing the rich flavors of the broth and spices. As it cooks, the short-grain rice slightly breaks down, releasing its starches and lending a subtle, creamy thickness to the soup, without the need for actual cream. It transforms the soup from a light appetizer into a wholesome and filling main course.

Important Recipe Tips and Notes for Perfect Kharcho
- This Kharcho recipe is deeply inspired by a memorable culinary journey to Georgia many years ago. The uniquely aromatic and spicy flavors I encountered there have stayed with me, driving me to recreate that authentic experience in my own kitchen.
- While rooted in tradition, I’ve adapted the method and sourced accessible ingredient substitutions to make this incredible soup achievable for everyday home cooks, without compromising on its genuine Georgian character.
- Although this Kharcho recipe features chicken, the beauty of Georgian cuisine lies in its flexibility. Feel free to substitute with any meat you prefer. Traditionally, beef ribs are a popular choice, or even duck for a richer flavor profile.
- You might discover other regional Kharcho recipes that incorporate ingredients like walnuts and tklapi (sour plum paste) for additional depth and tang. However, for this particular recipe, I’ve opted to keep it simpler, focusing on the core flavors that define a comforting chicken Kharcho.
- A significant portion of this soup’s distinctive flavor comes from the dried spice mix known as khmeli suneli. This essential blend is readily available online in the UK and US, making it easy to bring authentic Georgian taste into your home kitchen.
- Beyond this delicious soup, your store-bought khmeli suneli blend can be a versatile addition to your spice rack. Experiment with it in other meat and fish stews, or even sprinkle it over roasted vegetables for an unexpected flavor boost.
- Georgian cuisine is renowned for its vibrant heat! My version of Kharcho uses just one deseeded green chili for a balanced warmth. However, if you’re a fan of more intense spice, don’t hesitate to amp it up by adding an extra chili or leaving some of the seeds in.

Perfect Pairings: What to Serve with Your Kharcho
The beauty of this Georgian chicken and rice soup is its complete self-sufficiency. It truly is a meal in a bowl, requiring very little in the way of accompaniment. However, for an elevated dining experience, a simple garnishing of finely chopped fresh cilantro is absolutely essential, adding a final burst of freshness and aroma. Alongside, a thick slice of generously buttered bread offers the perfect vehicle for soaking up every last drop of the rich, flavorful broth. I particularly enjoy pairing Kharcho with a dense, substantial loaf like a homemade rye bread, known for its tight crumb and hearty texture. Alternatively, a fragrant rosemary and spelt bloomer or freshly made flatbread would be equally delightful, providing a satisfying contrast to the soup’s robust flavors. For a truly authentic Georgian touch, consider serving it with a simple green salad dressed lightly with vinegar, or a traditional Georgian cheese alongside. And if you’re feeling adventurous, a dry Georgian wine would make an excellent companion, complementing the soup’s herbaceous and spicy notes.
Storage and Leftovers: Savoring Kharcho for Days
One of the many virtues of Kharcho is how wonderfully it lends itself to meal prep and future enjoyment. Leftover spicy chicken and rice soup can be safely stored in an airtight container in the refrigerator for 4-5 days. When reheating, do so gently on the stove top. You might find that the rice has absorbed a considerable amount of the liquid, thickening the soup. If this is the case, simply add a splash more water or chicken stock to achieve your desired consistency before warming through. The flavors often deepen and meld even further overnight, making leftovers just as (if not more) delicious than the initial serving.
As I mentioned, Kharcho truly acts as a wellness elixir, and having a ready supply of this comforting soup in your freezer is an invaluable asset, especially on those days when cooking feels like an insurmountable task. Consider making a double batch to ensure you always have a wholesome, flavorful meal within reach. This soup freezes beautifully in a freezer-safe container for up to three months. Simply thaw it in the refrigerator overnight, then reheat as directed, adding a little extra liquid if needed. It’s the perfect fallback for busy evenings or unexpected sniffles, providing instant comfort and nourishment without any fuss.

This nourishing and reviving soup recipe is heaped with herbs, garlic and chilli; thick with rice and shredded chicken. A true taste of Georgia!
Ingredients
For the Stock
- 450g / 1lb chicken thighs
- 5 sprigs parsley
- 5 sprigs cilantro (coriander)
- 2 bay leaves
- 1 onion, peeled and quartered
- 2 litres / 8 cups water
- 1/2 tsp salt
For the Soup
- 3 cloves garlic
- 5 sprigs cilantro
- 5 sprigs parsley
- 1 green chilli, deseeded (can use 2 for a spicier soup)
- 1/4 tsp salt
- 1 tbsp vegetable oil, or butter
- 1 onion, chopped
- 4 tbsp canned chopped tomatoes, or 2 grated tomatoes
- 100g / 1/2 cup short grain rice
- Salt to taste
- 1/4 tsp black pepper
- 1 1/2 tsp khmeli suneli (Georgian spice mix), like Georgian curry powder
Instructions
- In a large soup pot, combine the chicken thighs, whole sprigs of parsley and cilantro, a quartered onion, and bay leaves. Pour over cold water with the salt and bring to a boil. Then, lower the heat and simmer gently for 40 minutes, allowing the flavors to infuse.
- While the stock is simmering, prepare the aromatic paste. In a mini food processor, combine 3 cloves of garlic, 5 sprigs of cilantro, 5 sprigs of parsley, and the deseeded green chilli with a pinch of salt. Process until a vibrant green paste forms. (Alternatively, this can be achieved using a traditional mortar and pestle for a more hands-on approach.)
- Once the stock has finished simmering, carefully remove the chicken thighs from the pot and set them aside to cool. Strain the stock through a fine-mesh sieve, discarding the spent herbs and onion, ensuring a clear and flavorful broth.
- In the same soup pot, heat the vegetable oil (or butter) over low heat. Add the chopped onion and sauté until it becomes translucent and softened, typically for about 5-7 minutes. Stir in the prepared herb and chilli paste and continue cooking for another minute, stirring constantly, to allow its aromatics to bloom. Now, add the chopped tomatoes and the strained chicken stock. Stir in the short grain rice and the khmeli suneli spice mix, then cook for 10 minutes, or until the rice is tender.
- Meanwhile, once the chicken thighs have cooled sufficiently, remove and discard the skin and bones. Shred the tender meat into bite-sized pieces and add it back into the simmering soup. Taste the soup and adjust the seasoning with additional salt and black pepper as needed. Serve immediately, generously sprinkled with freshly chopped cilantro for a final flourish of freshness and color.
