As the days grow shorter and the chill in the air deepens, many of us find ourselves yearning for the warmth of the sun and the long, bright evenings of summer. In such moments, my culinary inclinations naturally drift towards recipes that capture that cherished feeling of sunny days and abundant flavors. Few ingredients evoke this sense of warmth and richness quite like sun-dried tomatoes, making this creamy sun-dried tomato sauce a true beacon of culinary comfort. Its deep, concentrated flavor profile instantly reminds me of sun-drenched Mediterranean landscapes and leisurely summer meals.

The Ever-Popular Chicken Breast: A Weeknight Hero

Over countless years of preparing family meals, I’ve become adept at crafting an endless array of easy chicken recipes. However, when it comes to pleasing every palate at the dinner table, especially the younger ones, boneless, skinless chicken breasts consistently emerge as the unanimous favorite. While chicken legs, thighs, and wings offer their own delicious merits, they often lead to “bones of contention” – quite literally – as navigating around bones can be a hassle for some, and less appealing for small children. This universal preference has naturally led me to focus primarily on delicious and hassle-free chicken breast recipes.

The beauty of a chicken breast dish lies in its sheer simplicity and convenience. With no bones to contend with, each bite is easily enjoyed, making it a quick and mess-free meal that disappears rapidly from plates. And when that chicken breast is enveloped in a luxurious, creamy sauce, it’s an absolute winner, setting the stage for a truly satisfying dinner experience. Cooking chicken breasts directly within a rich sauce is the ultimate secret to guaranteeing a consistently juicy, tender, and flavorful mouthful every single time. The sauce acts as a protective blanket, preventing the chicken from drying out, ensuring it remains succulent and easy to chew for everyone, including those with smaller jaws. Indeed, chicken breast served in a creamy sauce isn’t just a meal; it’s a proven recipe for success!

Crafting the Irresistible Sun-Dried Tomato Sauce

At the heart of this dish lies an incredibly flavorful sun-dried tomato sauce, a vibrant twist on a classic condiment. While the famous green basil pesto is beloved for its fresh, pungent blend of basil, robust Italian cheese, garlic, and olive oil, sun-dried tomato pesto offers a different, yet equally captivating, flavor profile. It utilizes the same core ingredients, but thoughtfully swaps the fresh basil for sweet, intensely flavored sun-dried tomatoes. This concentrated paste retains the delightful sharpness of raw garlic and the savory depth of cheese, beautifully mellowed by the deep, sun-warmed essence of the tomatoes. The result is a richer, more complex taste that is both comforting and exciting.

In this particular recipe, I’ve taken the intensity of sun-dried tomato pesto a step further, softening its robust character with the addition of rich double cream. This creamy enhancement makes the sauce exceptionally smooth and appealing, especially for younger, more sensitive palates. Beyond being an absolutely incredible accompaniment for chicken, this versatile sauce is also an ideal partner for pasta. Imagine it generously coating filled pasta like tortelloni or ravioli, transforming a simple meal into a gourmet experience.

While making pesto from scratch is a rewarding endeavor that only takes about five minutes, requiring fresh ingredients and a food processor, there’s absolutely no shame in reaching for a quality store-bought jar of sun-dried tomato pesto. If you don’t fancy having a block of Parmesan lingering in your fridge for ages, or simply crave a quicker prep, a good jarred pesto will yield a sauce that is just as flavorful and satisfying. It’s a convenient shortcut that allows you to enjoy this delicious meal without compromising on taste – truly, it’s not cheating, it’s smart cooking!

Once you’ve savored this recipe and inevitably fallen in love with its rich flavors – and I know you will – consider exploring a few delightful variations. For an Italian-inspired yet distinct flavor, try using my Tuscan Kale Pesto as a base. This vibrant green pesto will maintain the Mediterranean essence but introduce a fresh, slightly earthy profile, adding a beautiful color and nuanced taste to your dish. Or, if you’re feeling particularly adventurous and wish to venture into more exotic territories, mix in my Zesty Cilantro Pesto. This bold substitution will transport your taste buds to the Caucasian mountains, offering a dish that is bright, fresh, wholesome, and wonderfully unique.

Essential Recipe Tips and Notes for Success

  • Before fully cooking the chicken, always take the time to brown it thoroughly on all sides. This crucial step not only creates a beautiful golden crust, locking in moisture for an incredibly tender texture, but also develops a profound depth of flavor in the pan, which will ultimately enrich your sauce.
  • For seasoning the chicken, I’ve opted for a versatile Italian herb mix. However, if your pantry is stocked with dried basil or oregano, either of these will work beautifully and provide that quintessential Mediterranean aroma and taste. Feel free to use what you have on hand.
  • Cooking with wine is one of my favorite culinary techniques, as it not only tenderizes meat but also imparts a wonderful complexity to sauces. In this recipe, a dry white wine adds a subtle tang and enhances the overall flavor profile. If you prefer to omit alcohol, rest assured that this dish will still be delicious; there’s no need to substitute the wine with any other liquid, simply proceed without it.
  • Flour is incorporated into the recipe to create a beautifully thick and luscious sauce. For those following a gluten-free diet, corn starch is an excellent alternative. Just be sure to create a slurry with cold water before adding it to the hot sauce to prevent lumps.
  • Spinach is a fantastic addition to this dish, praised for its speed and ease of preparation. Simply place it on top of the cooking chicken, cover the pan, and watch it quickly wilt into the sauce, adding freshness and nutrients. Other leafy greens like kale or cavolo nero can be used in the same manner. Don’t hesitate to include other family-favorite vegetables such as peas or broccoli for added color and texture.
  • This recipe is wonderfully adaptable for those who prefer or require a dairy-free option. The market now offers a wide array of excellent plant-based cream alternatives. I personally recommend Soya Single Cream by Alpro for its creamy texture, but oat cream is another fantastic choice that yields equally delicious results.

Versatile Serving Suggestions

Once your chicken and sauce are perfectly prepared, the possibilities for serving are wonderfully diverse. This sun-dried tomato sauce is incredibly versatile, making it easy to pair with a variety of side dishes to create a complete and satisfying meal.

It performs exceptionally well when served over fluffy rice, creamy mashed potatoes, wholesome buckwheat, or any type of pasta. The key is to choose a side that acts as a delightful canvas, eager to soak up every last drop of that amazing, flavorful sun-dried tomato sauce. Imagine linguine generously coated in the rich, creamy sauce, or a bed of jasmine rice absorbing all its savory goodness.

Inevitably, you’ll find a tempting pool of sauce remaining in the pan at the end of the meal. This is the ultimate cue to bring out a lovely piece of crusty bread. A warm slice or two is perfect for mopping up every bit of the exquisite sauce, ensuring no flavor goes to waste. This ritual is always in high demand when I serve this dish, making it a truly cherished part of the dining experience.

Storage and Leftovers: Maximizing Your Meal’s Lifespan

When it comes to cream-based dishes, it’s important to note that they generally do not fare well in the freezer. The delicate structure of the cream tends to break down upon thawing, resulting in a grainy texture and a significant loss of the velvety-smooth integrity that makes this dish so appealing. For this reason, I strongly advise against freezing this recipe, as it simply isn’t worth dedicating precious freezer space to it.

However, if you happen to have any leftovers, they can be stored quite effectively in the refrigerator. Transfer the chicken and sauce to an airtight container, where they will keep fresh for two to three days. This allows you to enjoy the delicious flavors for an extended period.

To reheat your leftovers in the oven, begin by preheating it to 350°F (180°C). Transfer the chicken and sauce to an oven-safe dish. To prevent the chicken from drying out and to help the sauce regain its creamy consistency, add a splash of water or chicken stock. Cover the dish tightly with foil to lock in moisture, and cook for approximately 15 minutes. Before serving, always ensure that your chicken is piping hot all the way through to guarantee food safety and optimal enjoyment.

Chicken breasts cooked in a rich, creamy sun-dried tomato sauce with fresh spinach create a quick, easy, and incredibly delicious midweek meal that truly shines.

Ingredients

  • 4 skinless boneless chicken breasts
  • 1 tsp salt
  • 1 tsp Italian herb mix, or dried basil
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 60ml/1/4 cup dry white wine
  • 250ml/1 cup chicken stock
  • 3 tbsp sun-dried tomato pesto
  • 250ml/1 cup double/heavy cream
  • 30g/1 cup fresh spinach

Instructions

  • Season the chicken breasts generously with salt and the Italian herb mix. Heat the olive oil in a deep frying pan over medium-high heat. Carefully place the chicken breasts in the hot pan and brown them for 3-5 minutes on each side until they are golden brown, but not yet cooked all the way through. Remove the browned chicken to a separate plate and set it aside.
  • In the same pan, reduce the heat to low. Add the minced garlic and cook for about 20 seconds, stirring constantly, until fragrant. Sprinkle the flour evenly over the garlic in the pan and mix well with the residual olive oil to form a smooth paste. Continue cooking and stirring for approximately 30 seconds. Next, pour in the dry white wine, scraping the bottom of the pan with a spatula to deglaze and release any flavorful browned bits. The mixture will darken slightly. Continue stirring for another minute or so until it thickens slightly.
  • Stir in the chicken stock, sun-dried tomato pesto, and heavy cream until all ingredients are well combined and the sauce is smooth. Bring the sauce to a gentle simmer for a couple of minutes. Return the browned chicken breasts to the pan, nestling them into the sauce. Spoon the sauce generously over the chicken. Continue cooking over low heat for 15 minutes, allowing the chicken to finish cooking through and absorb the rich flavors of the sauce. Finally, add the fresh spinach, placing it on top of the chicken, and cover the pan with a lid for 2-3 minutes to allow the spinach to wilt. Uncover the pan, stir the wilted spinach into the sauce, remove from heat, and serve immediately.
