A tinned sardine sandwich might sound old-fashioned, but sardines are enjoying a modern comeback. Today’s canned fish is often sustainably sourced, attractively packaged, and—when treated well—luxurious and indulgent.

What hasn’t changed is that canned sardines remain an affordable, nutritious source of protein. They’re versatile, flavourful, and make an excellent everyday lunch option.

Recipes using canned sardines

People tell me many reasons they avoid sardines: too fishy, too bony, or too whole. Those concerns are often based on low-quality cans or poor preparation. A good-quality product and a few simple techniques transform sardines into something mild, silky, and delicious.

How to choose sardines:

  • Look for certified sustainably caught fish where possible.
  • Fish packed in olive oil usually have the best flavour and texture; you can use the oil too.
  • Traditional canneries in Spain and Portugal are reliable sources of well-preserved sardines.
  • Bone-in, skin-on fish tend to be juicier and deliver more nutrients.

Good sardines are not overwhelmingly fishy. They’re less intense than anchovies, less chewy than some tuna, and when packed in oil they become soft and silky. The canning process also softens the tiny bones so they’re barely noticeable and add calcium. If the whole-body texture worries you, mash the fish into a spread — it becomes similar in texture to classic tuna mayo.

Beyond flavour, sardines are a valuable source of nutrition that supports heart, bone, and brain health, so they’re worth a try on your menu.

Spanish pan con tomate with sardines

Pan con tomate is a beloved Spanish classic: ripe tomato, good olive oil, garlic, and flaky salt spread on toasted bread. I first fell for it in Barcelona, where it’s served simply and perfectly.

This version keeps the essence of pan con tomate but folds in mashed sardines and the olive oil they’re packed in. The result is an easy, flavourful lunch or a satisfying tapa.

Serve warm or at room temperature; a small green salad pairs beautifully.

Egg salad with sardines on toast

An egg salad sandwich is a timeless favourite. In this version, flaked sardines are mixed into the egg mayo for a salty, savoury lift that transforms an ordinary sandwich.

Mashing the sardines into the mayo and egg creates a coherent, easy-to-eat filling, though you can choose to layer the components if you prefer more texture. Serving this on rye bread gives it a slightly tangy, Eastern European feel, but any sturdy toast will work.

Cream cheese sardine paté on toast

Inspired by mackerel pâtés, this creamy spread combines sardines with cream cheese for a smooth, luxurious topping. It’s quick to prepare—just mash the ingredients together—and it makes an elegant snack or lunch.

This version is particularly popular when served on toasted sourdough and finished with chopped chives and a crack of black pepper.

Important recipe tips and notes

  • Buy the best-quality canned sardines you can afford — fresher-tasting tins make a big difference.
  • For a refined presentation, layer ingredients on the toast, but be aware that stacked toasts can be fiddly to eat.
  • Alternatively, combine ingredients into a spread or pâté for a smoother texture that’s friendlier to people new to whole fish.

What goes with it

Each of these sardine-toasts benefits from a fresh, crisp side to balance the rich, umami flavours. A small green garnish or a full salad works well. Suggested pairings:

  • Pan con tomate with sardines served alongside a simple garden salad.
  • Egg salad with sardines paired with a celeriac remoulade or crunchy slaw.
  • Cream cheese sardine pâté served with a cabbage-and-cucumber salad or pickles for contrast.

Storage and leftovers

Sardine sandwich fillings—egg mayo and cream cheese pâté—keep well in an airtight container in the refrigerator for 3–4 days. Make a batch at the start of the week and assemble toast daily for quick lunches.
