Embracing the Comfort of Homemade Chili
As the crisp air of autumn settles in, bringing with it shorter days and a longing for cozy evenings, my culinary compass invariably points towards deeply satisfying, soul-warming meals. There’s something undeniably comforting about a hearty bowl of chili, a dish that wraps you in a gastronomic embrace, restoring good vibes and chasing away the chill. This Texas-style chili is precisely that – a culinary hug in a bowl, perfect for those days when you need a little extra warmth and nourishment.
Chili recipes are a staple in our home, always met with eager anticipation at the dinner table. While we frequently enjoy a traditional chili, I also delight in exploring more adventurous variations, such as the vibrant Chili Verde. However, it’s this particular Texas-style chili that holds a special place, especially as the colder seasons arrive. While inspired by the bold flavors of Texas, I want to be clear that this is not a claim to strict authenticity, but rather a personalized interpretation that brings beloved elements to the forefront.

The Great Chili Debate: To Bean or Not to Bean?
One of the most defining characteristics, and arguably the most controversial, of authentic Texas chili is the absence of beans. Traditionalists will firmly assert that a true “bowl of red” consists solely of meat, chiles, and a rich, spicy sauce. While I deeply respect culinary traditions, I’ve chosen to diverge from strict authenticity in this recipe by including beans. My motivation is simple: for me, beans add a wonderful texture, enhance the dish’s nutritional profile with extra fiber, and make the chili even more satisfying and filling. They also help to stretch the meal further, making it an economical and wholesome choice for family dinners.
Another point of contention among chili purists can be the inclusion of tomatoes. Some insist that true Texas chili should also be tomato-free, focusing purely on meat and chile flavors. While I’ve certainly encountered this rule, it seems to be applied with less rigidity than the bean debate. In my recipe, chopped tomatoes contribute essential acidity and body to the sauce, balancing the rich meats and deep smoky flavors, creating a more complex and well-rounded chili that many, including my family, adore.
After a summer filled with indulgent barbecues and holiday treats, I often find myself craving wholesome, nourishing meals that still deliver on flavor. This chili recipe strikes that perfect balance. By opting for lean cuts of meat and incorporating fiber-rich beans, it offers a guilt-free way to enjoy a substantial and utterly delicious meal. It’s a testament to the idea that comfort food can indeed be good for you.

Key Ingredients for Exceptional Flavor
To keep this chili both flavorful and mindful of fat content, I’ve carefully selected the meats: a pound of extra-lean ground beef paired with half a pound of lean pork loin. This combination offers a rich, meaty base without excessive grease. The beans, as discussed, are not just for texture but also provide a significant boost of nutritious fiber, making each spoonful incredibly satisfying.
What truly sets this chili apart and elevates its flavor profile are two unexpected yet brilliant additions: This is an affiliate link.chipotle paste and a touch of dark chocolate. Chipotle paste introduces a wonderful smoky heat and depth that instantly transports you to a campfire setting. Dark chocolate, especially in the 70%-85% cocoa range, doesn’t make the chili taste sweet; instead, it deepens the savory notes, adds a subtle bitterness that rounds out the spices, and contributes to a beautiful, dark color. These ingredients are secret weapons for creating a truly complex and irresistible chili experience.
My approach to recipe development often involves utilizing what I have on hand, and I encourage you to adopt a similar philosophy. Chili is a wonderfully forgiving dish, making it perfect for creative improvisation. Feel free to experiment with different types of ground meat, or even cuts like chuck roast for a chunkier texture. Similarly, explore various bean combinations – black beans, pinto beans, or even a mix of several. Adjusting the spice level is also entirely up to your preference; we love it with a fiery kick, but you can dial it down for a milder flavor. The beauty of this recipe lies in its flexibility, making it an ideal easy one-pot dinner solution that caters to your taste and pantry.

Serving Suggestions to Elevate Your Chili Experience
One of the joys of chili is its versatility when it comes to serving. While a generous bowl of chili on its own is perfectly satisfying, especially when topped with a cooling dollop of sour cream or plain yogurt and a sprinkle of fresh chopped green onions or cilantro for a vibrant freshness, there are countless ways to enhance the meal.
To make the chili go even further and create a more substantial meal, I love pairing it with a starchy accompaniment. The options are plentiful and delicious. Consider serving it alongside fluffy cilantro lime rice, hearty roasted potatoes, warm and slightly sweet cornbread, or even a thick slice of rustic sourdough bread for dipping. Each of these options adds a different dimension to the meal, soaking up the rich flavors of the chili beautifully and providing a comforting contrast to its robust profile. Don’t hesitate to get creative with your toppings and sides to personalize your chili feast!
Storage and Enjoying Leftovers
Chili is arguably one of those magical dishes that tastes even better the next day, and it excels as a leftover. The flavors have more time to meld and deepen overnight, resulting in an even more harmonious and delicious experience. It’s perfect for meal prepping or simply enjoying a quick, comforting meal the following day.
To store your chili, allow it to cool completely before transferring it to an This is an affiliate link.airtight container. It will keep beautifully in the refrigerator for 4-5 days. For longer storage, chili freezes exceptionally well. Portion it into freezer-safe containers or bags, and it will remain fresh for 2-3 months. Simply thaw overnight in the refrigerator before reheating.
When it’s time to reheat, the best method is to warm it gently in a This is an affiliate link.saucepan over medium-low to medium heat. Stir it regularly to ensure even heating and prevent it from sticking to the bottom. If the chili appears a bit too thick after refrigeration or freezing, simply add a splash of water, broth, or even a little beer, and let it come to a gentle simmer, stirring until it reaches your desired consistency. This simple step will revive its texture and make it as delicious as freshly made.

- 2 This is an affiliate link.bay leaves
- 4 cloves of garlic, sliced
- 1 red chilli, deseeded and minced
- 1 lbs / 500g extra-lean ground beef
- 1/2 lbs / 250g pork loin, cubed
- 2-3 tbsp chipotle paste or 2-3 whole chipotle peppers pureed
- 2 X 400 g cans of chopped tomatoes
- 2 oz / 50g dark chocolate, 70%-85%
- 1 X 14oz/ 400 g can butter beans
- 1 X 14oz/ 400g can kidney beans
- 1 X 6oz/ 165 g can corn
- salt, to taste
- plain yogurt, to taste
- fresh cilantro
Instructions
-
Heat oil in a cast iron pot or Dutch oven over low heat. Add the chopped onion, cumin, paprika, and oregano, cooking for 10 minutes until the onion is tender and fragrant. Stir in the sliced garlic and minced red chili, cooking for an additional 2 minutes until aromatic.
-
Increase the heat to medium-high. Add the ground beef and cubed pork loin to the pot and brown the meat for about 5 minutes, breaking up any large chunks. Once browned, stir in the bay leaves, chipotle paste, chopped tomatoes, and 1 teaspoon of salt. Bring the mixture to a boil.
-
As soon as the chili comes to a boil, reduce the heat to medium-low. Add the dark chocolate squares and allow them to melt for a minute or two, then stir well until fully incorporated. Cover the pot with a lid and let it simmer for 1 1/2 hours, stirring occasionally to prevent sticking and ensure even cooking.
-
After 1 1/2 hours, the meat should be very tender. Using a potato masher, gently smash some of the pork loin chunks in the pot. This will help thicken the chili and release more flavor while still leaving some desirable texture.
-
Stir in the butter beans, kidney beans, and corn. Taste the chili and adjust the seasoning with additional salt or spices as needed. Continue cooking for another hour on low heat, allowing the flavors to fully meld.
-
Serve your Texas-style chili hot, garnished with a dollop of plain yogurt and fresh chopped cilantro. It pairs wonderfully with a side of rice or warm tortillas. Enjoy!
