Sun-Drenched Tomato & Chili Shrimp Spaghetti with Arugula

Imagine a vibrant, satisfying meal that tastes gourmet yet comes together faster than you can say its full name: “Sun-dried Tomato and Chili Spaghetti with Shrimp and Arugula.” While that might be a slight exaggeration, this recipe truly embodies speed and elegance. This light, zesty seafood spaghetti masterfully blends the sweet intensity of sun-dried tomatoes with succulent, perfectly cooked pink shrimp, a subtle kick of chili, and the fresh, peppery bite of arugula. It’s a dish that looks incredibly impressive but is surprisingly simple to master, making it perfect for both weeknight dinners and special occasions.

Our featured sun-dried tomato and shrimp pasta is not only a delight for the taste buds but also a smart choice for those mindful of their diet, being both dairy-free and naturally low in calories. For those who adore their pasta drenched in creamy sauces, you might be familiar with its richer cousin, the Marry Me Shrimp pasta. That decadent version shares many of these core ingredients but elevates them with the addition of tangy Parmesan cheese, luxurious heavy cream, and a splash of white wine, creating a truly indulgent experience. This recipe, however, celebrates the lighter side, focusing on fresh, bold flavors without the added richness.

Effortless Elegance: Crafting the Perfect Spaghetti and Shrimp Recipe

The true beauty of this shrimp spaghetti lies in its exceptionally simple and delicate sauce. Unlike many pasta dishes that rely on heavy creams or cheeses, this sauce is crafted from just a few powerful ingredients: aromatic garlic, concentrated sun-dried tomatoes, a touch of tomato purée, vibrant chili flakes, and the magical starchy pasta water. There’s no need for thick, rich sauces or copious amounts of passata here. Its elegance is found in the purity of its components and how they harmonize, allowing the quality of each ingredient to shine through. The choice of pasta shape is also crucial to this delicate balance.

Following traditional Italian culinary wisdom, where dairy is often avoided with seafood and tomato used sparingly, long, flat pasta shapes such as spaghetti or linguine are preferred. These shapes boast a greater surface area, which is ideal for efficiently absorbing and clinging to the fragrant, fluid sauce. This ensures that the delicate flavors seep deep into every strand of pasta, guaranteeing a consistently delicious and evenly flavored mouthful with each bite. Furthermore, the long, strand-like nature of spaghetti excels at entwining with pieces of seafood like shrimp, clams, or even lobster tails, making them easy to capture and twirl around your fork, enhancing the eating experience.

While the sauce is delicate, do not mistake it for being lacking in impact. A masterful balance is achieved between the natural sweetness of the sun-dried tomatoes and the warming heat from the red chili flakes. These elements perfectly complement the briny, succulent flavor of the prawns, culminating in a deeply satisfying seafood pasta dish. This culinary creation evokes the intricate flavors of a traditional *scialatiella allo scoglio*, a classic Italian seafood pasta that is typically far trickier and more time-consuming to prepare. Here, you get all the gourmet taste with minimal effort, making it an accessible luxury for any home cook.

Expert Tips for a Flawless Pasta Dish

  • **Salt Your Pasta Water Generously:** This is arguably the most crucial step for flavorful pasta. Think of it like seasoning your food from the inside out. A well-salted pot of boiling water (it should taste like the ocean!) ensures that every single strand of spaghetti is infused with flavor. Proper salting also helps prevent the pasta from sticking together and is essential for the starchy pasta water, which you’ll need later for the sauce.
  • **Achieve Perfect Al Dente Pasta:** “Al dente” is an Italian term meaning “to the tooth,” referring to pasta that is cooked through but still firm to the bite, offering a slight chewiness. To achieve this ideal texture, I always recommend cooking your spaghetti for approximately one minute less than the time indicated on the package instructions. This ensures it retains its structural integrity and delightful chew, especially since it will continue to cook slightly when tossed with the hot sauce.
  • **The Magic of Starchy Pasta Water:** Do not discard all your pasta water! This starchy liquid is an indispensable ingredient for creating a silky, emulsified sauce. The salt and starches released from the pasta into the water create a naturally thickened, flavorful liquid that helps bind the sauce to the pasta, giving it a luxurious consistency that plain boiled water simply cannot replicate. I always reserve about a mugful of this precious liquid before draining the pasta.
  • **Invest in Quality Sun-Dried Tomatoes:** As a star ingredient, the quality of your sun-dried tomatoes profoundly impacts the final flavor. Opt for oil-packed, richly flavored sun-dried tomatoes from a reputable brand. Their intense, sweet, and tangy notes are fundamental to the dish’s character.
  • **Utilize the Sun-Dried Tomato Oil:** Don’t let the flavorful oil in which the sun-dried tomatoes are packed go to waste! This oil is steeped in rich tomato essence and makes an excellent substitute for regular olive oil. Use it to sauté garlic, onions, or even chicken to impart an extra layer of savory depth to your cooking. It’s a fantastic way to enhance flavor and reduce waste.
  • **Sauté Garlic with Care:** Garlic burns quickly, and burnt garlic turns bitter, which can unfortunately ruin the delicate balance of your entire dish. Always fry your sliced garlic over a very low heat, gently coaxing out its sweet, aromatic notes without allowing it to brown too quickly or crisp up. Watch it closely to prevent any bitterness.
  • **Seasoning is Key – Taste as You Go:** If your dish seems to be missing something or tastes a little bland, nine times out of ten, it needs more salt. Salt is a fundamental flavor enhancer that will coax out and brighten all the other flavors present. Add a pinch of salt, stir, taste, and repeat until the flavors truly pop. Only after you’ve achieved proper salt balance should you consider adding any other seasonings or herbs.

The Hero Ingredient: The Richness of Sun-Dried Tomatoes

Sun-dried tomatoes are the unsung heroes of many Mediterranean dishes, and they truly shine in this spaghetti recipe. These intensely flavored gems are made by drying ripe tomatoes under the sun, a process that concentrates their natural sugars and umami, resulting in a sweet, tangy, and deeply savory taste profile. Unlike fresh tomatoes, which offer a bright acidity, sun-dried tomatoes provide a profound, almost caramelized sweetness that adds incredible depth and complexity to the sauce. When choosing them, look for varieties packed in olive oil, as the oil itself becomes infused with their rich flavor and can be incorporated into your cooking. Some may prefer dry-packed sun-dried tomatoes, which offer an even more concentrated flavor and a chewier texture; these can be rehydrated in warm water or, even better, in the reserved pasta water, before chopping and adding to the sauce. Their vibrant color also adds visual appeal, making the dish as beautiful as it is delicious.

Selecting and Preparing Your Shrimp for Perfection

The quality of your shrimp is paramount in any seafood pasta. For this dish, we recommend using fresh or high-quality frozen raw shrimp (prawns). When purchasing, look for shrimp that are firm, translucent, and have a mild, oceanic scent. Avoid any that smell strongly of ammonia or have discolored spots. Medium to large shrimp (around 26-30 count per pound or ½ kg) are ideal as they cook quickly and have a satisfying bite without being overly chewy.

If using frozen shrimp, thaw them properly by placing them in a colander under cold running water for a few minutes, or by transferring them to the refrigerator overnight. Always peel and devein your shrimp, unless they are already prepared. Deveining removes the digestive tract, which can sometimes contain grit and a slightly bitter flavor. While not strictly necessary for health, it significantly improves the texture and aesthetic of your dish. Pat the shrimp dry before cooking to ensure a beautiful sear and to prevent steaming, which can lead to a rubbery texture. A quick season with salt and pepper just before they hit the pan is all they need to enhance their natural sweetness.

Perfecting Your Pasta: Beyond Al Dente

Achieving perfectly cooked pasta is a fundamental skill that elevates any pasta dish from good to exceptional. Beyond simply cooking to *al dente*, there are several techniques that ensure optimal results. Firstly, always use a large pot for boiling your spaghetti. This provides ample space for the pasta to move freely, preventing it from clumping together and ensuring even cooking. The generous salting of the water, as mentioned in our tips, is non-negotiable for flavor.

When you add the pasta to the boiling water, give it a good stir to prevent it from sticking to the bottom of the pot. Continue to stir occasionally during the first few minutes of cooking. Unlike some starches, pasta should not be rinsed after draining, especially not for a hot sauce. Rinsing removes the valuable starch coating that helps the sauce adhere to the pasta, and it also cools the pasta, which can prevent it from properly absorbing the flavors of the sauce. Instead, drain it quickly, reserving a mugful of pasta water, and immediately transfer it to the pan with your prepared sauce to toss and finish cooking. This crucial step ensures that every strand is beautifully coated and infused with flavor.

Serving Suggestions: Completing Your Meal

This sun-dried tomato and chili spaghetti with shrimp and arugula is a wonderfully complete meal on its own, offering protein from the shrimp, vibrant greens from the arugula, and satisfying carbohydrates from the pasta. However, for those who love to round out their culinary experience, especially my family, a pasta dish is always better with a side of garlic bread. Consider serving it alongside this delightful no-knead focaccia, generously studded with aromatic garlic cloves, for a rustic and flavorful accompaniment. If you’re short on time but still craving that garlicky, cheesy goodness, our quick and easy air fryer garlic bread is the perfect solution.

To make the most of that opened jar of sun-dried tomatoes, why not whip up a side of Parmesan roasted broccoli with sun-dried tomatoes, garlic, and chilies? It’s a delicious way to incorporate more vegetables and echo the main dish’s flavors, creating a cohesive and delightful dining experience. For a refreshing beverage pairing, a crisp, dry white wine like a Sauvignon Blanc or Pinot Grigio would beautifully complement the delicate seafood and tangy tomatoes.

Creative Variations and Customizations

One of the many joys of this sun-dried tomato and chili spaghetti is its versatility. While the recipe is fantastic as is, don’t hesitate to personalize it with your favorite ingredients.

  • **Spice Level:** If you prefer less heat, reduce the amount of red chili flakes or omit them entirely. For an extra kick, a pinch of fresh, finely diced bird’s eye chili can be added.
  • **Herbs and Aromatics:** Fresh basil or parsley, added at the very end, would introduce a lovely herbaceous note. A squeeze of fresh lemon juice just before serving can brighten all the flavors beautifully. Shallots instead of garlic can offer a milder, sweeter onion flavor.
  • **Other Seafood:** This recipe is incredibly adaptable to other types of seafood. Scallops, calamari, mussels, or even chunks of firm white fish like cod or halibut would work wonderfully. Adjust cooking times accordingly to prevent overcooking.
  • **Add Vegetables:** Enhance the nutritional value and texture by incorporating extra vegetables. Spinach, cherry tomatoes (halved and added at the end), bell peppers, or even asparagus would complement the dish perfectly.
  • **Make it Vegetarian/Vegan:** Omit the shrimp and replace it with cannellini beans, chickpeas, or grilled zucchini and eggplant for a hearty vegetarian version. To make it vegan, ensure your spaghetti is egg-free and use a plant-based oil.

Storage and Leftovers: Best Enjoyed Fresh

While we all appreciate the convenience of leftovers, some dishes are undeniably best enjoyed fresh, and this sun-dried tomato and chili spaghetti with shrimp is one of them. Both spaghetti and shrimp are notoriously tricky to reheat without compromising their texture and flavor. Reheated pasta can become mushy, losing its desirable *al dente* bite, while shrimp can easily turn rubbery and tough.

For the absolute best culinary experience, we strongly advise enjoying this dish immediately after it’s prepared, while the shrimp is still plump and tender, and the spaghetti perfectly coated in its fragrant sauce. The vibrant freshness of the arugula is also at its peak when served fresh. If you anticipate having leftovers, consider preparing only the amount you intend to consume right away. However, should you have any remaining, store it in an airtight container in the refrigerator for no more than one day. Gently reheat on the stovetop with a splash of water or broth to revive the sauce, but be aware that the texture of the shrimp and pasta may not be quite the same.

  • 1
    tbsp
    tomato paste

  • 60g / 3 cups
    arugula (rocket)

  • Salt to taste

Instructions

  • Cook the spaghetti in a large pot of generously salted boiling water according to package instructions for al dente. Reserve ½ cup of pasta water before draining.
  • Heat one tablespoon of olive oil (or sun-dried tomato oil) in a large frying pan over medium-high heat. Add the raw shrimp, seasoned with a pinch of salt. Cook for 1-2 minutes per side, until pink and opaque. Remove the cooked shrimp to a separate plate and keep warm.
  • In the same pan, add the remaining tablespoon of olive oil (or sun-dried tomato oil). Reduce the heat to low and gently sauté the sliced garlic and chopped sun-dried tomatoes with red chili flakes for about 1 minute, being careful not to burn the garlic. Pour in the reserved ½ cup of starchy pasta water and stir in the tomato paste. Bring the sauce to a gentle simmer, then add the fresh arugula, stirring just until it wilts, which should take about half a minute. Immediately remove the pan from the heat.
  • Add the drained spaghetti directly to the pan with the sun-dried tomato sauce. Return the cooked shrimp to the pan. Toss everything together vigorously until the spaghetti and shrimp are thoroughly coated with the vibrant sauce. Taste and adjust seasoning with more salt if necessary. Serve this exquisite dish immediately to enjoy its peak freshness and flavor.

Notes

  • Always salt your boiling water generously. It will reach every strand of pasta, stop it sticking together, and infuse the water (which is needed later).
  • Pasta should be al dente. I cook it for minus 1 minute per packet instructions.
  • That starchy pasta water? It’s part of the recipe. The salt and starch make the water thicker and flavoursome which is integral to the sauce. I reserve about a mugful before draining.
  • Sun-dried tomatoes are the key ingredient here. Choose the best quality you can afford.
  • What’s more, the oil they are packed in is useable as it’s steeped in rich tomato flavour. I use it in place of olive oil to sauté garlic, onions, chicken.
  • Fry the garlic over a low heat so as not to burn it. Burnt garlic is bitter and will ruin the balance of the dish.
  • If the dish tastes a little bland, season with more salt. Taste. Salt. Taste again. Then add any other seasonings. Salt is a natural flavour enhancer and will coax all the flavours out.
