Ingredients

  • 15g/1/2 cup dried porcini mushrooms
  • 250ml/1 cup boiling water
  • 1 tbsp olive oil
  • 3 shallots, chopped or 1 onion
  • 1 tbsp flour, heaped
  • 500g/6 cups crimini mushrooms or mushrooms of your choice
  • 1.5 litres/6 cups vegetable or chicken stock
  • 4-6 sprigs fresh thyme, leaves only or 1/2 tsp dried thyme
  • 125ml/1/2 cup double cream/heavy cream
  • salt to taste

Instructions

  1. Soak dried porcini mushrooms in a cup of boiling water for 10 minutes. Drain and reserve the water porcini mushrooms were soaking in for later use. Filter the water through a fine sieve to catch any debris, ensuring your broth is smooth and clear.
  2. In a large saucepan, gently cook chopped shallots (or onion) in 1 tbsp of olive oil over low heat for about 5 minutes until softened and translucent, but not browned. Add the flour and mix well, stirring constantly for 1 minute to create a roux. Next, add the fresh thyme leaves, chopped fresh mushrooms, reconstituted porcini mushrooms, and a pinch of salt. Cook, stirring frequently, for about 10 minutes until the mushrooms have softened and released their liquid. Then, pour in the stock and 1/2 cup of the reserved, filtered porcini soaking water. Bring the mixture to a gentle boil, then reduce the heat and simmer for 10 more minutes, allowing the flavors to meld. Finally, stir in the cream.
  3. Once the soup has slightly cooled, carefully transfer it in batches to a food processor or blender. Process until completely smooth and creamy. If you prefer a slightly chunkier texture, you can blend it less thoroughly. Return the pureed soup to the pot and gently reheat it over low heat. Taste and adjust seasoning with additional salt if needed. Serve hot, garnished with fresh parsley or a swirl of cream.
