If I had to choose a single meal to eat forever, it would likely be a tuna salad — whether chickpea-and-tuna, tuna macaroni salad, Italian tuna and white bean salad or this Mediterranean pasta version. Why? Because tuna salads are endlessly adaptable, nutritionally dense and simple to prepare.

This Mediterranean tuna pasta salad balances a variety of textures and tastes: flaky tuna and anchovy-enhanced dressing for umami, tender boiled eggs, crisp green beans, briny olives, soft marinated artichokes, juicy cherry tomatoes, tender spinach leaves and chewy short pasta. Each bite is layered with flavor yet light and refreshing.

This recipe was developed by blending elements from two favorites: a Green Goddess pasta salad and the classic French Salade Niçoise. The outcome is a nourishing, flavor-forward Mediterranean tuna pasta salad that borrows the best of both traditions.

Salade Niçoise originates in Nice on the French Riviera and traditionally highlights regionally available produce and seafood: tuna or anchovies, tomatoes, garlic and olive oil, and often potatoes. From that classic I kept tuna, boiled eggs and green beans, while omitting potatoes to keep this version lighter and more pasta-focused.

From the Green Goddess style I borrowed tender pasta and other shared ingredients — olives, marinated artichokes and cherry tomatoes — while excluding dairy to make the recipe dairy- and mayo-free. Anchovies are included in the dressing to add savory depth; rather than serving them whole, they are blended into the vinaigrette so they melt into the sauce and add umami without an overpowering fishy presence.

Using just one or two anchovies in the dressing gives a silky, unctuous texture and an elegant saltiness that complements the tuna instead of competing with it. If you’re unsure about anchovies, try them blended into the dressing — you’ll likely be surprised by how balanced the result is.

  • Use short-shaped pasta — shapes like campanelle, macaroni, fusilli or penne hold dressing and mix-ins well.

Storage and leftovers

Ingredients

  • 200g / 7 oz short-shaped pasta
  • 2 boiled eggs, cut into quarters
  • 100g / 3½ oz green beans, cut in half
  • 1 cup marinated artichokes, cut into quarters
  • 150g / 5 oz good quality canned tuna in olive oil
  • 1/4 cup Kalamata olives
  • 150g / 1 cup cherry tomatoes, halved
  • 60g / 2 cups baby spinach
  • 1 tbsp fresh parsley, chopped

For the dressing

  • 2 anchovies, optional
  • 1 clove garlic
  • 2 tbsp white wine vinegar
  • 5 tbsp olive oil, use the oil from the tuna if possible
  • 1/2 tsp salt

Instructions

  • You can prepare most ingredients up to a day ahead, excluding the pasta. To make boiled eggs: place eggs in cold water in a saucepan, bring to a boil, then turn off the heat and let them sit in the hot water for 5 minutes. Transfer eggs to iced water until cool, then peel and quarter. Cook green beans for about 5 minutes once the water boils, then plunge into iced water to stop cooking and preserve color and texture. Cook pasta according to package instructions, drain and set aside.
  • Prepare the dressing by combining anchovies, garlic, white wine vinegar, olive oil and salt in a small blender or food processor and process until smooth. The mixture should emulsify into a pale, opaque vinaigrette. If you prefer not to use a blender, finely chop the anchovies and mash them into a paste with the garlic, then whisk in the vinegar and oil until combined.
  • In a large salad bowl, combine the cooked pasta, baby spinach, marinated artichokes, flaked tuna, olives, green beans, cherry tomatoes and chopped parsley. Pour the dressing over the salad and toss gently to combine. Adjust seasoning with a pinch of salt if needed. Arrange the quartered boiled eggs on top and serve immediately.
