My enthusiasm for cooking with shrimp (or prawns, as they are known in many parts of the world) is boundless. This versatile seafood boasts a naturally sweet flavour, a lean protein profile, and an incredibly fast cooking time, making it a dream ingredient for busy weeknights and special occasions alike. Its delicate taste and firm yet tender texture make it a beloved staple in my kitchen, consistently delivering satisfying results.
Unsurprisingly, shrimp recipes are a constant favourite in my household. From quick stir-fries to elaborate pasta dishes, shrimp always disappears from plates with remarkable speed. This widespread appeal is a testament to its deliciousness and adaptability.
Among the pantheon of popular shrimp dishes, Shrimp Scampi stands out as a quintessential classic in Italian-American cuisine. The enduring popularity of this dish stems from its beautiful simplicity. It’s remarkably quick to prepare, requiring only a handful of readily available ingredients, yet it transforms into an elegant and sophisticated seafood pasta. The beauty of Shrimp Scampi lies in its ability to deliver profound flavour with minimal fuss, making it accessible to even novice cooks while still satisfying gourmet palates.

What is Shrimp Scampi and Its Fascinating Origin?
The name “Shrimp Scampi” can often be a source of confusion, hinting at a fascinating culinary evolution. In Italy, “scampi” refers to langoustine, a type of small, clawed crustacean that resembles a tiny lobster. This shellfish is often prepared in a specific style, typically sautéed in garlic, olive oil, and white wine.
When Italian immigrants brought their culinary traditions to the United States, langoustines were not as readily available or affordable as shrimp. Resourcefully, they adapted the traditional “scampi” preparation method – the signature garlic, butter, and white wine sauce – to the more accessible and popular shrimp. This fusion gave birth to the beloved Italian-American dish we now know as Shrimp Scampi, a testament to culinary adaptation and innovation.
This particular Shrimp Scampi Linguine recipe perfectly embodies the essence of the dish: it allows the natural, sweet flavour of the shrimp to truly shine. Instead of overwhelming the seafood with an abundance of ingredients, it highlights its delicate taste through a masterfully simple yet incredibly flavourful sauce. The key components of this irresistible sauce are:
- Rich butter
- Fragrant garlic
- Crisp dry white wine
- Zesty fresh lemon juice
- And perfectly balanced salt and pepper
Despite its minimalist ingredient list, this sauce delivers an explosion of flavour that pairs incredibly well with pasta. While its origin isn’t 100% authentically Italian, this pasta dish is a brilliant Italian-American invention that has rightfully earned its place as a cherished classic in kitchens worldwide.

Essential Recipe Tips and Notes for Perfect Shrimp Scampi
- Prioritize Ingredient Quality: Since this recipe features a very short ingredient list, there’s no room for subpar quality. Each component plays a crucial role in the final flavour. Invest in the freshest shrimp you can find, high-quality butter, and a good bottle of dry white wine – the difference will be palpable.
- Properly Salt Your Pasta Water: Think of the pasta water as the first opportunity to season your pasta from the inside out. It should taste like the sea. Salting the water generously ensures the linguine absorbs flavour as it cooks, resulting in a more delicious base for your scampi. Always taste test your pasta and sauce before serving to adjust saltiness as needed.
- Avoid Overcooking Shrimp at All Costs: This is perhaps the most crucial tip for any shrimp dish. Unlike most meats that benefit from longer cooking times to become tender, shrimp becomes rubbery and tough when overcooked. Shrimp cooks very quickly, typically just a minute or two per side until it turns opaque and pink. Remove it from the heat as soon as it’s done to preserve its tender texture.
- Reduce the Scampi Sauce for Concentrated Flavor: Allowing the garlic butter, white wine, and lemon juice to simmer gently for a few minutes is essential. This reduction process intensifies the flavours, mellows any sharpness from the wine or lemon, and creates a beautifully cohesive and rich sauce that clings perfectly to the linguine.
- Slice, Don’t Mince, the Garlic: For this delicate dish, slicing the garlic rather than mincing it helps prevent it from overpowering the subtle sweetness of the shrimp. Sliced garlic infuses the oil and butter with its flavour more gently, providing aromatic depth without being too pungent or harsh.
- Always Use Fresh Lemon Juice: Bottled lemon juice simply doesn’t compare to the vibrant, crisp, and bright flavour that fresh lemon juice delivers. A squeeze of fresh lemon at the end brightens the entire dish, cutting through the richness of the butter and wine and adding a crucial layer of zest.
- Linguine is Ideal, But Other Pastas Work: Linguine, with its long, flat strands, is truly perfect for holding onto every drop of the delectable scampi sauce. However, other long pasta shapes like spaghetti or fettuccine, or even short, hearty shapes like penne or rigatoni, will also do a fantastic job. Choose what you have on hand or what you prefer for texture.

Best Wine to Use for Shrimp Scampi
Selecting the right wine for your Shrimp Scampi sauce is crucial for achieving the perfect balance of flavours. I highly recommend using a dry white wine such as Sauvignon Blanc, Pinot Grigio, or even an un-oaked Chardonnay. These varieties offer a crisp acidity and subtle fruit notes that complement the seafood and garlic beautifully without adding unwanted sweetness. It is paramount to steer clear of sweet wines or anything labeled “cooking wine,” as these can introduce unpleasant flavours and an overly sugary profile to your delicate sauce.
If you don’t have an open bottle of dry white wine on hand, a fantastic and often overlooked substitute is dry vermouth. Since vermouth is a fortified wine, it has a much longer shelf life once opened and stored in a cool, dark cupboard. Its herbaceous notes and dry character make it an excellent stand-in, providing a similar complexity and acidity to dry white wine.

Serving Suggestions to Complete Your Shrimp Scampi Meal
To perfectly complement the rich and aromatic garlic butter scampi sauce, a light and vibrant side dish is an ideal choice. A refreshing salad can beautifully balance the meal, adding a burst of freshness and acidity. My Tuscan Panzanella Salad, with its crusty bread and fresh tomatoes, or a classic Basil Pesto Caprese Salad, featuring ripe tomatoes, mozzarella, and basil, will both keep you elegantly within the Italian culinary theme. The crispness of fresh greens and vegetables will provide a wonderful contrast to the tender pasta and shrimp.
And let’s not forget the essential accompaniment for mopping up every last drop of that delectable sauce! A crusty, bakery-style bread is an absolute must. My homemade No-Knead Farmhouse Bread is perfect for this, offering a rustic texture and deep flavour. For an even more indulgent experience, my personal favourite, Air Fryer Garlic Bread, adds an extra layer of garlicky goodness that pairs exquisitely with the scampi. The crisp exterior and soft interior of freshly baked bread, dipped in the fragrant sauce, is pure culinary bliss.
To conclude your meal with just the right touch of sweetness without overwhelming your palate, consider a small, elegant dessert. These Chocolate Cake Truffles are small in size but immensely satisfying, offering a concentrated burst of chocolatey flavour. They provide a perfect, light sweet finish that won’t leave you feeling overly full after your delicious pasta.

Storage and Leftovers Tips for Shrimp Scampi Linguine
If you find yourself with leftover Shrimp Scampi Linguine, it can be safely stored in an airtight container in the fridge for 3-4 days. While the flavours will remain delicious, it’s worth noting that the pasta may lose some of its desirable al dente chewiness the longer it is kept. For the best texture, it’s always ideal to enjoy this dish fresh.
When it comes to reheating, the easiest method is typically a microwave, using short bursts of heat to warm through gently. Alternatively, you can reheat it on the stovetop in a pan with a splash of chicken broth or water to help revive the sauce and pasta texture. Be careful not to overcook the shrimp during reheating, as they can become tough.
I generally do not recommend freezing pasta dishes like Shrimp Scampi. The freezing and defrosting process can significantly alter the texture of the pasta, often making it mushy or grainy, and the shrimp can also suffer in quality. For this reason, it’s best to savour this delightful dish fresh and avoid freezing for optimal enjoyment.

Shrimp Scampi Linguine Recipe
By Julia Frey of Vikalinka
Prep Time: 5 mins | Cook Time: 15 mins | Total Time: 20 mins | Servings: 2 people

Ingredients
- 1 tbsp olive oil
- 3 tbsp butter
- 2 cloves garlic, sliced
- Salt to taste
- Pepper
- 500g / ½ lb shrimp/prawns, peeled and deveined
- Juice of ½ lemon (about 1-2 tablespoons)
- 125ml / ½ cup dry white wine
- 500g / ½ lbs linguine
- 1-2 tbsp chopped fresh flat leaf parsley, for garnish
Instructions
- Cook the linguine in a large pot of generously salted, boiling water according to package instructions until al dente.
- A few minutes before the pasta is cooked, heat a large pan over medium heat. Add the olive oil and 1 tablespoon of butter to the pan. Once the butter is melted, add the shrimp with a pinch of salt and cook for approximately 1 minute on each side until they turn pink and opaque. Immediately remove the cooked shrimp to a separate plate to prevent overcooking.
- Using the same pan, add the remaining butter and the sliced garlic. Sauté over low heat for about 1 minute until fragrant, being careful not to burn the garlic. Then, pour in the fresh lemon juice and dry white wine. Bring the sauce to a slow simmer and let it gently bubble away for 2-3 minutes, allowing it to reduce slightly and concentrate its flavours. Keep the sauce warm over low heat.
- Once the pasta is done, drain it, reserving approximately 125ml (½ cup) of the starchy pasta water. Add the reserved pasta water and the drained linguine directly to the sauce in the pan. Return the cooked shrimp, along with any accumulated juices from the plate, back to the pan. Toss everything together until the pasta is well coated and the shrimp are heated through. Taste and season with additional salt and pepper if needed. Finally, sprinkle generously with chopped fresh parsley and serve immediately.
