This is your new potluck go-to. Italian pasta salad is a crowd-pleasing dish that’s unexpected and unlikely to be duplicated. It’s full of pasta and a bright mix of fresh Mediterranean ingredients, finished with a homemade lemon and basil vinaigrette. This generous recipe serves about eight people.
If you prefer something milder, try a cool and creamy Green Goddess pasta salad instead.

Since moving to the UK, I admit I miss the classic potluck vibe: everyone bringing a favourite dish to share, the surprise of dishes you don’t expect to see together, and that warm, communal table spread. The UK approach to casual gatherings tends to be more low-key—often a text invitation, the host saying “Only if you want to,” and a predictable selection of crisps and hummus. That makes a bold, colourful pasta salad even more likely to stand out.
Whether you’re attending an American-style potluck or a British get-together, this Mediterranean-inspired pasta salad is a great dish to bring because it travels well (dress it at the destination if needed), sits out nicely, and offers flavours most people won’t have thought to bring.
Potluck pasta salad

What sets this salad apart is the mix of distinctive, slightly salty, and tangy ingredients that balance the pasta. The combination is Mediterranean in spirit and layered in texture and taste, with crunchy radicchio, smoky grilled zucchini, briny olives, sharp provolone, peppery salami and tangy pickled peppers. The lemon-basil dressing ties everything together, brightening the denser or saltier elements for a refreshing bite.
This version includes:
- Thin strips of salty, peppery salami
- Pickled pepperoncini for a bright, briny bite
- Buttery cubes of provolone (or swap for a mild cheddar if you prefer)
- Grilled baby zucchini instead of raw cucumber for firmer texture and more flavour
- Kalamata olives for a pleasantly bitter, fruity note
All of this is finished with a simple lemon and basil vinaigrette that provides fresh acidity and herbaceous lift.

Lemon basil salad dressing
The dressing is very quick to make—about two minutes if you blitz it in a blender, or you can whisk it together in a jar. Whole basil leaves, garlic, lemon zest, lemon juice, olive oil and a pinch of salt create a bright vinaigrette that balances the richer and saltier elements of the salad. It’s versatile and works well on green salads or roasted vegetables too.
Recipe tips
- Choose robust chicory or radicchio leaves; delicate leaves can bruise and wilt under the dressing.
- Grilled baby zucchini are firmer and more flavourful than raw cucumber and add a pleasant smoky note.
- Stick to the Mediterranean theme for a cohesive salad, but feel free to swap deli meats and cheeses to suit taste or budget.
- Pre-sliced salami is convenient and gives the ideal thin strips.
- Fresh basil and garlic make the dressing sing; dried herbs or garlic powder can be used in a pinch.
What goes with it
This pasta salad pairs well with many casual party dishes. If you’re coordinating a spread, consider assigning guests to courses so the menu is balanced: light appetizers, a few complementary salads, some warming mains, a couple of sides, and easy-to-serve sweets.
Appetizers: ricotta dip with cherry tomatoes, prosciutto caprese bites, or a simple Italian charcuterie platter.
Salads: a lemony Israeli chickpea salad, a crisp rainbow slaw, or a creamy dill potato salad make fine companions.
Mains: buttermilk fried chicken, sausage rolls, or a savoury bacon and cheese quiche are hearty choices that travel well.
Sides: fluffy focaccia, maple butter corn muffins, or a baked macaroni and cheese with a crispy topping.
Sweets: strawberry cheesecake buns, bright lemon bars, or chocolate chip and pistachio cookies finish the meal nicely.
Storage and leftovers
This salad features several bold-flavoured ingredients—shallots, salami and pepperoncini among them. Because those flavours can intensify and mingle with the more delicate components, this salad is best eaten the same day it’s made. If you must prepare food ahead, keep the dressing separate and combine them just before serving.

- 2 small heads chicory (radicchio), core removed and sliced
- 8 baby zucchini, or 2 regular zucchini
- 200g / 7 oz cherry tomatoes, halved
- 1 red pepper, sliced
- 125g / 4 oz provolone cheese, cubed (or mild cheddar)
- 10 slices salami, cut into strips
- 3–4 pepperoncini, sliced
- 10–15 Kalamata olives, pitted and sliced
- 1 shallot, thinly sliced
For the lemon basil vinaigrette
- 10 leaves fresh basil (or 1/2 tsp dried)
- 1 clove garlic (or 1/2 tsp garlic powder)
- Zest of 1/2 lemon (or 2 tbsp white wine vinegar)
- Juice of 1 lemon
- 6 tbsp olive oil
- 1/2 tsp salt, or to taste
Instructions
- Cook the pasta according to package instructions, drain and cool. Meanwhile, cut the baby zucchini in half lengthwise and grill or pan-fry for about 3 minutes per side until lightly charred. Cool and slice. If using regular zucchini, cut into 1-inch (2–3 cm) thick slices.
- In a large salad bowl, combine the sliced chicory, sliced red pepper, halved cherry tomatoes, cubed provolone, sliced Kalamata olives, salami strips, sliced pepperoncini, thinly sliced shallot, the cooled zucchini and the cooked pasta.
- Make the dressing by combining chopped fresh basil, lemon zest and juice, minced garlic, salt and olive oil in a jar. Shake well until combined, or blend briefly in a small blender for an emulsified vinaigrette.
- Pour the dressing over the salad and toss to coat. Adjust seasoning with salt if needed and serve immediately.
