The Timeless Appeal of Chicken and Rice
The classic pairing of chicken and rice is celebrated across countless world cuisines, and for very good reason. It’s a combination that inherently offers both deliciousness and satisfying nourishment. From Spanish paella to Caribbean arroz con pollo, or various Asian renditions, the versatility of chicken and rice knows no bounds. This particular recipe, while drawing heavily on the rich tapestry of Indian flavours, is my own innovative creation. It’s not an authentic Indian dish, but rather a heartfelt tribute to the spices and culinary traditions my family adores. The result is a truly scrumptious and unforgettable meal that I sincerely hope you will cherish as much as we do. It’s a testament to how global inspirations can lead to unique and delightful home-cooked dishes.

Diving Deep into the Flavor Profile
The secret to this dish’s incredible depth of flavour lies in a thoughtfully selected combination of aromatic spices. I’ve carefully blended my favourite spices, often found in vibrant Indian curries, and masterfully infused them into fluffy Basmati rice. But the journey doesn’t stop there; to elevate the creaminess and richness, I’ve replaced a portion of the cooking water with luscious coconut milk. This simple swap transforms the rice into an incredibly fragrant, tender, and subtly sweet base that perfectly complements the robust spices.
Once the aromatic rice and sweet green peas are simmering, the mixture is generously topped with perfectly browned chicken thighs. Everything then bakes together in a single pan, allowing the flavours to meld beautifully. The chicken juices drip down into the rice, imparting an extra layer of savory goodness, while the rice absorbs all the incredible aromas. The final outcome is nothing short of spectacular: impossibly fluffy, fragrant rice, imbued with a complex tapestry of spices and the rich essence of chicken, all brought to life by the vibrant, golden hue of turmeric. The chicken, meanwhile, emerges from the oven succulent, juicy, and cooked to absolute perfection.
Key Spices Explained for a Rich Aroma
To achieve this dish’s distinctive Indian-inspired taste, you’ll need a handful of essential spices, each contributing its unique character.
- Cumin: This warm, earthy spice provides a foundational depth, often associated with rich, hearty dishes.
- Coriander: Offering a slightly citrusy, sweet, and nutty flavour, coriander brightens the overall profile and adds a layer of aromatic complexity.
- Ginger and Garlic: The classic aromatic duo. Freshly grated ginger brings a spicy, zesty kick, while minced garlic adds a pungent, savory base, both essential for building a robust flavour foundation.
- Turmeric: Beyond its striking golden colour, turmeric imparts a distinct earthy, slightly bitter, and peppery flavour. It’s also celebrated for its potential health benefits, making this dish not just delicious but nourishing.
- Chilli Powder: For a gentle warmth without overwhelming heat, I specifically recommend Kashmiri chilli powder. It provides a beautiful red colour and a mild, fruity spiciness. If Kashmiri chilli powder isn’t readily available, a good quality paprika makes an excellent substitute, offering a similar colour and a subtle, sweet peppery note.
Each of these spices works in harmony, creating a layered and inviting aroma that will fill your kitchen as this wonderful dish bakes.

Expert Tips for Your One-Pan Chicken & Rice Success
- Choosing Your Chicken Thighs: I prefer using skin-on, bone-in chicken thighs for their incredible flavour and juiciness, as the bone adds depth and the skin crisps up beautifully. However, if you prefer, you can easily substitute them with boneless, skinless chicken thighs for a quicker cooking time or even chicken breasts, though breasts may require adjusting cooking times to prevent drying out. No matter your choice, ensure the pieces are roughly similar in size for even cooking.
- The Art of Browning: If you opt for skin-on chicken thighs, the browning step is absolutely crucial. Searing them first on high heat creates a deliciously crispy skin and helps render some of the fat, preventing an unpleasant, rubbery texture later on. This initial sear also develops a rich, complex flavour that transfers into the rice as it bakes. Don’t skip this important step!
- Spice Freshness Matters: This recipe calls for several individual spices, which might seem daunting if they’re not regular inhabitants of your spice rack. The key to vibrant flavour lies in using fresh, aromatic spices. Spices, even if not “expired,” quickly lose their potency and aroma over time. If you don’t typically cook with these individual spices or want a simpler approach, you can substitute the ginger, garlic, turmeric, coriander, cumin, and chilli powder with about 2 tablespoons of good quality, fresh curry powder. While the flavour profile might shift slightly, it will still yield a wonderfully fragrant and delicious result. Always check the “best by” date on your spice mixes!
- Vegetable Variations: While frozen peas add a lovely pop of sweetness and colour, feel free to get creative with your vegetables. This dish is wonderfully adaptable! You could replace the peas with chopped green beans, small broccoli florets, diced carrots, or even bell peppers. Simply add them along with the rice and liquids, ensuring they are cut into small enough pieces to cook through evenly in the oven. This is a great way to incorporate more veggies into your diet and customize the dish to your family’s preferences.

Tender chicken thighs and vibrant yellow turmeric rice with sweet green peas come together beautifully in this incredibly easy and flavourful one-pan dish. Inspired by Indian spices, it’s a perfect weeknight meal with minimal cleanup.
Equipment
- Cast iron casserole dish
Ingredients
- 1 tbsp vegetable oil
- 6 bone-in, skin-on chicken thighs (or boneless, skinless)
- Salt and pepper, to taste
- 1 medium onion, finely chopped
- 1 tbsp grated fresh ginger
- 3 cloves garlic, minced
- 2 tsp ground turmeric
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp Kashmiri chilli powder (or 1 tsp paprika)
- 270g / 1 ½ cups Basmati rice, rinsed well
- 2 tsp salt
- 400ml / 1 ¾ cup water
- 400ml / 14 oz full-fat coconut milk
- 140g / 1 cup frozen green peas
- 1 tbsp fresh cilantro/coriander, chopped, for garnish
- 1 tbsp sliced green onions, for garnish
Instructions
- Preheat your oven to 350F/180C. Pat the chicken thighs dry with paper towels and season them generously with salt and freshly ground black pepper on both sides. In a large, oven-safe pan or cast iron casserole dish, heat the vegetable oil over high heat. Carefully place the chicken thighs skin-side down (if applicable) and brown them thoroughly on each side until golden brown and crispy, about 3-4 minutes per side. The chicken should not be cooked through at this stage. Remove the browned chicken to a plate and set aside, reserving any accumulated juices.
- Reduce the heat to medium-low. Add the chopped onion and grated ginger to the same pan (no need to clean it; the leftover bits add flavour). Sauté for about 5 minutes until the onion softens and becomes translucent. Then, add the minced garlic, ground turmeric, ground coriander, ground cumin, and Kashmiri chilli powder (or paprika). Cook for another minute, stirring constantly and scraping up any browned bits from the bottom of the pan to infuse the oil with these incredible aromatics. Be careful not to burn the spices.
- Add the well-rinsed Basmati rice to the pan and stir constantly for 1 minute, allowing the grains to lightly toast and absorb the infused oil. Pour in the water and coconut milk, add the remaining 2 teaspoons of salt, and stir to combine all the ingredients. Finally, stir in the frozen green peas. Increase the heat to bring the mixture to a gentle boil, then immediately turn off the heat.
- Carefully arrange the browned chicken thighs back into the pot on top of the rice mixture, pouring any collected juices from the plate over them. Cover the pan tightly with a lid (or aluminum foil if your pan doesn’t have a lid) and transfer it to the preheated oven. Bake for 30 minutes, or until the rice is tender, fluffy, and all the liquid has been completely absorbed. If after 30 minutes there is still some liquid remaining, remove the lid and cook for an additional 5-10 minutes uncovered, allowing the excess moisture to evaporate.
- Once cooked, remove the pan from the oven and let it rest, still covered, for 5-10 minutes. This allows the flavours to settle and the rice to become even fluffier. Serve the aromatic chicken and turmeric rice hot, garnished generously with freshly chopped cilantro (coriander) and thinly sliced green onions for a burst of freshness and colour. This dish pairs wonderfully with a simple side salad or our Simplified Cauliflower and Potato Curry.
