Crafting the Perfect Teriyaki Marinade

The heart of any exceptional teriyaki dish lies in its marinade, and this Japanese-inspired salmon teriyaki with bok choy is no exception. This recipe is wonderfully forgiving, making it suitable for cooks of all skill levels. The first and most crucial step involves creating a fragrant and balanced marinade that will infuse your salmon with irresistible flavor. All you need is a bowl, a whisk, and a few key ingredients, proving that gourmet taste doesn’t require complex techniques.

While you can certainly craft your own teriyaki sauce from scratch for a truly authentic touch (a method we highly recommend exploring if you have the time!), for ultimate convenience, we’ve found that a quality store-bought teriyaki sauce serves as an excellent base. For this recipe, we used Kikkoman Teriyaki Sauce with Toasted Sesame, which provides a fantastic depth of flavor and visual appeal with its subtle black flecks. To elevate this base, we introduce a symphony of aromatic additions: freshly minced garlic and finely grated ginger contribute a spicy, pungent kick, awakening the palate. A touch of mirin, a sweet Japanese cooking wine, is essential for authentic Japanese cuisine, adding a subtle sweetness and gloss to the marinade. Finally, a splash more of soy sauce deepens the umami notes, ensuring a rich and well-rounded flavor profile. The result is a marinade that delivers a seriously delicious punch, a secret weapon that guarantees flavor in every bite.

The beauty of teriyaki lies in its versatility. Once you master this marinade, you’ll discover it pairs wonderfully with a wide array of proteins, transforming simple ingredients into extraordinary meals. Beyond salmon, consider experimenting with teriyaki sauce in these popular recipes: Teriyaki Meatballs for a delightful appetizer or dinner, Teriyaki Chicken for a classic weeknight stir-fry, or Beef Teriyaki for a hearty and satisfying option. Each adaptation showcases the marinade’s ability to enhance and complement, making it a staple in any globally-inspired kitchen.

Selecting the Perfect Vegetable Companions for Salmon Teriyaki

When preparing this delicious salmon teriyaki, choosing the right vegetables is key to a harmonious one-pan meal. The ideal companions are those that cook efficiently alongside the salmon, absorbing the savory teriyaki flavors while retaining their distinct textures. For this recipe, baby bok choy is my preferred choice, offering a delicate bitterness and a satisfying crunch that beautifully complements the rich salmon. Its leafy greens wilt just enough while its stalks remain slightly crisp, providing a wonderful textural contrast.

However, the beauty of this dish lies in its adaptability. You can absolutely customize your vegetable selection based on preference and what’s in season. When choosing your vegetables, remember this crucial tip: ensure they can cook through in roughly the same amount of time as the salmon, which is relatively quick. Salmon, especially a fillet of around 750g (1.5 lbs), typically bakes to perfection in about 20-22 minutes at 180°C (350°F). If you opt for individual salmon pieces, cooking time will be significantly reduced, possibly halved, as demonstrated in this popular Asian salmon recipe.

Here are some excellent vegetable alternatives and considerations:

  • Broccoli and Asparagus: These are fantastic choices, as they cook relatively quickly and pair well with Asian flavors. Cut broccoli into florets and trim asparagus spears to ensure even cooking.
  • Bell Peppers: Sliced bell peppers (any color!) add sweetness and a pop of color.
  • Green Beans or Sugar Snap Peas: These crisp, vibrant options are perfect for a quick bake and hold up well to the marinade.
  • Mushrooms: Sliced cremini or shiitake mushrooms add an earthy, umami depth.
  • Root Vegetables (with a caveat): Heartier vegetables like squash, carrots, or potatoes can be used, but they require a bit of pre-planning. To ensure they cook evenly with the salmon, it’s best to parboil them first until they are slightly tender. Once parboiled, drain them thoroughly and add them to the baking sheet alongside the salmon and other vegetables for the final bake. This ensures all components are perfectly cooked without overcooking the salmon or leaving vegetables underdone.

My typical timing for a 750g (1.5 lbs) salmon fillet at 180°C (350°F) resulted in perfectly juicy salmon that was cooked all the way through, and bok choy that remained slightly crisp and vibrantly green. If you prefer your bok choy softer, simply cut it into quarters instead of halves before baking. This minor adjustment allows it to tenderize more quickly, providing a different textural experience while still soaking up all the delicious teriyaki flavors. Experiment with your favorite vegetables to make this one-pan meal truly your own!

Expert Tips for a Flawless Teriyaki Salmon

  • Choosing Your Teriyaki Sauce: To truly make this an easy teriyaki salmon recipe, using a good quality store-bought teriyaki sauce is a fantastic shortcut. We often use Kikkoman, but any standard teriyaki sauce will work beautifully. For an extra layer of flavor, consider one with a little flair, like those infused with toasted sesame seeds, as we did here. These small details can significantly enhance the overall taste profile of your dish.
  • Homemade Teriyaki for the Adventurous: If you have a bit more time and want to elevate your culinary game, making your own homemade teriyaki sauce is an incredibly rewarding experience. The fresh ingredients and balanced flavors of a scratch-made sauce are unparalleled. You can find a fantastic recipe and guide on how to create your own by checking out our beef teriyaki recipe, which features a superb homemade sauce.
  • Achieving Perfectly Cooked Salmon: Salmon is known for its quick cooking time, especially after being tenderized by a marinade. It’s crucial to avoid overcooking to ensure it remains moist and flaky. The best way to tell if your salmon is perfectly done is when it easily flakes apart with a fork. It should appear opaque throughout but still feel tender. Keep a close eye on it, as even a minute or two can make a difference between perfect and dry.
  • Maximize Flavor with Marinade: Don’t let any of that delicious marinade go to waste! After removing the salmon, be sure to generously brush the remaining teriyaki marinade over both the salmon fillets and the accompanying vegetables on the baking sheet. This not only imparts incredible flavor but also helps create that beautiful, caramelized glaze during baking. This simple step is vital for a truly flavorful and cohesive dish.
  • Marinade Time Matters: While the recipe suggests a 30-minute marination, you can extend this for deeper flavor. For best results and food safety, always marinate salmon in the refrigerator. Even 15-20 minutes can infuse a good amount of flavor, but aiming for 30 minutes to an hour will yield a more pronounced teriyaki taste without making the fish too soft.

Elevate Your Meal: Serving Suggestions for Teriyaki Salmon

This salmon teriyaki is an incredibly versatile and delicious dish that truly shines in any setting. Its robust flavors and elegant presentation make it spectacular enough to be the star of a sophisticated dinner party, yet its quick and easy preparation means it’s perfectly suited for a relaxed weekday meal. It strikes that coveted balance between effortless and impressive, making it a go-to for any occasion.

In this particular recipe, we’ve opted for a lighter approach, foregoing starches to emphasize the fresh flavors of the salmon and bok choy. However, if you’re looking to create a more substantial and filling meal, there are several fantastic options to incorporate:

  • Classic Steamed Rice: A bed of fluffy steamed white or brown rice is a timeless pairing with teriyaki salmon. The rice acts as a perfect canvas, soaking up all the savory sauce and balancing the richness of the fish.
  • Noodles for Comfort: Salmon teriyaki noodles are an absolute classic for a reason! Consider serving your salmon alongside tender ramen, udon, or soba noodles. They add a delightful chewiness and make the meal incredibly satisfying. For a truly unique and refreshing twist, try it with a cold soba noodle salad – a combination so good, there won’t be any leftovers!
  • Exotic Coconut Rice: For an even more exciting and aromatic experience, pair your teriyaki salmon with coconut rice. The subtle sweetness and creamy texture of coconut rice beautifully complement the umami-rich teriyaki, adding an unexpected layer of flavor that will impress your guests.
  • Healthy Quinoa or Cauliflower Rice: For those looking for a gluten-free or low-carb alternative, quinoa offers a protein-packed grain option, while cauliflower rice provides a light, vegetable-based substitute that still absorbs the delicious sauce.

To add a final flourish and enhance both the flavor and visual appeal, a sprinkling of freshly chopped green onions (scallions) provides a mild oniony bite and a burst of vibrant green. Toasted sesame seeds, either white or black, offer a subtle nutty flavor and a pleasing textural contrast, making the dish truly pop. These simple garnishes elevate the presentation and add an extra layer of deliciousness to your perfectly baked teriyaki salmon and bok choy.

Storing and Reheating Teriyaki Salmon for Optimal Enjoyment

One of the best parts about making this delicious teriyaki salmon is the potential for equally delightful leftovers! If you’re lucky enough to have some extra, you can easily enjoy it for lunch the next day, or even the day after. Leftover teriyaki salmon can be safely stored for 3-4 days in an airtight container in the refrigerator. Proper storage ensures the salmon retains its flavor and freshness, making for quick and easy future meals.

While the convenience of a microwave might be tempting for reheating, for the absolute best results that preserve the salmon’s tender texture and prevent it from drying out, the oven is your best friend. I highly recommend reheating your leftover salmon in an oven set to a low temperature, around 135°C (275°F). Place the salmon on a baking sheet, cover it loosely with aluminum foil to trap moisture, and add a splash of water or a teaspoon of extra marinade to the pan. Reheat for about 15 minutes, or until it is heated through. This gentle reheating method helps maintain the salmon’s moisture, ensuring it remains flaky and flavorful, almost as good as freshly cooked. You can also quickly reheat the bok choy alongside it for a complete meal.

Salmon Teriyaki with Bok Choy One Pan Dinner

Salmon fillet is marinated in teriyaki sauce with garlic, ginger and soy sauce, then baked in the oven with bok choy for an easy one pan dinner.

Equipment

  • Garlic press
  • Pastry brush

Ingredients

  • 1/2 cup / 125ml teriyaki sauce, I used Kikkoman sauce with toasted sesame
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1½lbs / 750g salmon fillet
  • 4 baby bok choy, halved or quartered
  • spring onions, for garnish
  • sesame seeds, optional

Instructions

  1. In a small bowl, mix the teriyaki sauce, soy sauce, mirin, ginger and garlic. Reserve 4 tbsp of this marinade for glazing later, and pour the remaining marinade over the salmon. Let the salmon marinate for 30 minutes in the refrigerator.
  2. Preheat the oven to 350F/180C.
  3. Remove the salmon fillet from its marinade (discarding any excess marinade from the salmon container) and arrange it on a baking sheet together with the halved or quartered bok choy. Brush the reserved teriyaki marinade evenly over the bok choy. Bake in the oven for 20 minutes.
  4. While the salmon and bok choy are baking, pour the remaining reserved marinade into a small saucepan. Bring it to a gentle boil over medium heat and simmer until it thickens into a glaze, stirring occasionally. Set aside.
  5. After 20 minutes, take the salmon fillet and bok choy out of the oven. Carefully remove the bok choy to a serving plate. Change the oven setting to broil/grill and move the oven rack closer to the heating element. Return the salmon to the oven and broil for 1-2 minutes for a beautiful caramelized top. Watch closely to prevent burning!
  6. Once the salmon is out of the oven, brush the prepared glaze generously over both the salmon and the bok choy. Sprinkle with sliced spring onions and sesame seeds if desired. Serve immediately with rice, noodles, or on its own for a delicious low-carb dinner.
