Baking, for many of us, is a journey back in time, a way to recreate cherished memories and traditions. I fondly recall the exquisite cakes my father meticulously baked for every family occasion – each one a testament to his love and skill. This particular lemon ricotta loaf cake is a heartfelt nod to those warm childhood feelings, a refined take on the classic Russian loaf cake, “Keks Stolichniy.” While a traditional “Keks” is often served simply dusted with powdered sugar, I wanted to give this version a truly royal treatment, transforming a humble loaf into a majestic centerpiece. The result is this magnificent cake, beautifully adorned with a cloud of luxurious cream cheese frosting.
It’s no secret why lemon is the star of this cake. Citrus, with its bright and tangy profile, possesses an unparalleled ability to cut through richness, bringing a refreshing zest to everything it touches. This makes it an invaluable ingredient in countless recipes, from savory dishes like Lemon Butter Chicken Cutlets to timeless desserts such as Classic Lemon Bars, and it absolutely shines in this spectacular loaf cake.

The Magic of Lemon Ricotta Cake
This Lemon Ricotta Cake truly stands out, even without its decadent topping. Its signature soft crumb achieves an exceptional richness and moistness thanks to the star ingredient: ricotta cheese. Ricotta isn’t just a filler; it performs culinary magic in baked goods, especially cakes. It contributes a delicate, milky flavor and an incredibly tender texture that’s hard to achieve with butter or oil alone. The high moisture content of ricotta cheese, coupled with its fine, creamy texture, ensures a cake that remains moist and flavorful for days, never drying out prematurely. For the best results and the fullest benefit of its unique properties, it’s crucial to use full-fat ricotta cheese.
Beyond cakes, ricotta also lends its wonderful qualities to other pastries, such as lemon ricotta cookies, imparting a light, almost cake-like chewiness. The subtle tang of ricotta beautifully complements the bright citrus notes, creating a harmonious flavor profile.
To further enhance its exquisite taste, the sponge of this cake is generously infused with both fresh lemon juice and vibrant lemon zest. The juice adds a subtle tartness and moisture, while the zest, rich in essential oils, provides an intense, aromatic burst of pure lemon essence. Together, they create a delicate yet profoundly flavourful cake that is both refreshing and deeply satisfying.

Crafting the Perfect Cream Cheese Frosting
No truly royal cake is complete without its crown, and our cream cheese frosting is precisely that – a light, ethereal cloud that perfectly complements the delicate lemon ricotta cake beneath. This frosting is so irresistibly delicious, you might find yourself wanting to eat it by the spoonful! Despite its rich base of cream cheese, the frosting maintains a surprisingly light and airy consistency, making it the ideal counterpoint to the sharper citrus notes of the cake.
Visually, the frosting elevates the humble loaf into a luxurious masterpiece, especially when adorned with a sprinkle of fresh, vibrant yellow lemon zest. The zest not only adds a pop of color but also intensifies the overall lemon experience, tying the cake and frosting together beautifully.
Achieving Frosting Perfection: Key Tips
The beauty of this cream cheese frosting lies in its incredible ease of preparation. It’s primarily a simple blend of full-fat cream cheese, double cream (or heavy whipping cream), icing sugar (also known as powdered sugar), and a touch of vanilla. However, the consistency of your cream will significantly impact the mixing method:
- For UK Bakers (Double Cream): If you’re in the UK and using double cream, which boasts a higher fat content than American whipping cream, you’re in luck! You can combine all frosting ingredients simultaneously and whip them together. The high-fat content ensures a stable, well-blended frosting without issues.
- For US Bakers (Heavy Whipping Cream): In the US, look for “heavy whipping cream” as it has the highest fat content available, essential for stable whipping. For the best results with American heavy cream, a slightly different approach is recommended:
- First, whip the heavy cream with the powdered sugar and vanilla until it forms medium peaks. This pre-stabilizes the cream.
- In a separate bowl, lightly whip the softened cream cheese until it’s smooth and fluffy.
- Once both the whipped cream and cream cheese have similar, airy textures, gently fold the whipped cream into the cream cheese mixture. This method prevents the cream cheese from breaking down and ensures a light, stable, and perfectly blended frosting.
Regardless of your location, ensure both your cream cheese and cream are cold, but the cream cheese should be slightly softened to prevent lumps. This attention to detail will reward you with a consistently smooth and dreamy frosting.

Baking Success: Tips for a Flawless Loaf Cake
This lemon ricotta cake is remarkably straightforward to prepare, making it accessible even for novice bakers. It doesn’t require any complex techniques, but a few simple tips will ensure a perfect bake every time:
- Room Temperature Ingredients: Ensure your butter, eggs, and ricotta cheese are at room temperature. This allows them to emulsify better, creating a smoother batter and a more uniform, tender crumb.
- Don’t Overmix: After adding the dry ingredients to the wet, mix just until combined. Overmixing develops gluten, which can lead to a tough, dry cake.
- Prepare Your Pan: Grease and line your loaf pan with parchment paper, leaving an overhang on the sides. This makes it incredibly easy to lift the cooled cake out of the pan without any sticking.
- Cool Completely: This is perhaps the most crucial tip for any frosted cake. Before applying the cream cheese frosting, allow the cake to cool completely on a wire rack. Frosting a warm cake will cause the frosting to melt and slide right off, ruining your beautiful creation. Patience is key here!
- Oven Temperature: Trust your oven thermometer. Ovens can vary, and an accurate temperature ensures even baking.
Once cooled and frosted, this cake is truly a delight. I particularly love enjoying a generous slice in the afternoon, paired with a freshly brewed cup of tea or a robust coffee. The delicate lemon and creamy frosting create a perfect moment of indulgence.

Storage and Leftovers: Keeping Your Cake Fresh
While this cake is so delicious that leftovers might be a rarity, proper storage is essential to maintain its freshness and flavor. The unfrosted cake sponge can be frozen successfully for at least 3 months. Wrap it tightly in plastic wrap, then in foil, and store in an airtight freezer bag to prevent freezer burn. Thaw overnight in the refrigerator before frosting.
However, the cream cheese frosting is a bit more delicate. Once the cake is frosted, it will keep beautifully in the refrigerator for 4-5 days. It’s important to store it in an airtight container. This not only keeps the cake fresh but also prevents it from absorbing any unwanted flavors or scents from your refrigerator. Freezing the frosted cake is not recommended, as the cream cheese frosting will likely lose its ideal texture upon thawing, becoming watery or grainy.
This Lemon Ricotta Cake is more than just a recipe; it’s an invitation to create, to savor, and to share moments of joy. Its tender crumb, bright lemon flavor, and luscious cream cheese frosting make it an unforgettable dessert that will surely become a cherished favorite in your baking repertoire.
