Stir-fries are my go-to solution whenever our family needs a significant boost in vegetable intake. They offer an effortless way to incorporate a substantial amount of greens and other colorful produce into our diet, transforming simple ingredients into a wholesome and satisfying meal.

My secret to making stir-fries truly substantial and filling lies in the addition of noodles. This simple step not only adds a hearty carbohydrate base but also elevates the dish into a complete, one-pan meal. Imagine – a single pan delivering all the essential nutrients and satisfying cravings without a pile of dishes to wash afterwards. It’s a win-win situation for any busy cook aiming for maximum nutrition with minimal fuss.

To streamline the cooking process even further and make this already easy meal quicker, I often turn to quick-cooking, healthy proteins. Prawns, or shrimp as they are often called in the US, are absolutely perfect for this. They cook in just a couple of minutes, are readily available in most supermarkets, and add a delightful texture and rich flavor that complements the medley of vegetables and noodles beautifully.

Prawn Stir Fry: A Delightful and Quick Protein Choice

While this recipe proudly carries the title “Prawn Noodle Stir Fry,” it’s worth noting that it could just as easily be named “Shrimp Noodle Stir Fry.” The distinction between “prawns” and “shrimp” primarily boils down to regional terminology; they refer to the same delicious crustaceans, whether you’re on one side of the Atlantic or the other!

My preference for prawns in stir-fries isn’t just about their taste; it’s largely driven by their incredible efficiency in the kitchen. Not only are they incredibly lean, offering a healthy dose of protein, but their rapid cooking time ensures that dinner can be on the table in record time. This attribute makes them ideal for quick-prep dishes like stir-fries, allowing you to create a gourmet-quality meal without spending hours over the stove. Their versatility means they also feature prominently in many of our other favorite quick recipes.

A crucial tip for achieving the best texture: always opt for *raw* prawns, not pre-cooked ones. Raw prawns are typically grey and translucent, while cooked prawns are pink and curled. Starting with raw prawns allows them to cook quickly and absorb the flavors of the stir-fry sauce, resulting in a tender, juicy bite. Pre-cooked prawns, when subjected to further heat, tend to become rubbery and less appealing. So, for that perfect, succulent prawn experience, check the color before you buy!

Noodle Stir Fry: Your Guide to Perfect Pasta Power

As highlighted earlier, incorporating noodles into your vegetable stir-fry transforms it into a far more substantial and satisfying meal. Beyond their filling qualities, the vast world of noodles offers endless possibilities for adding variety and exciting new textures to your cooking. Experimenting with different noodle types can truly elevate your stir-fry game.

For this specific Prawn Noodle Stir Fry, I typically use medium Asian egg noodles. These are widely accessible and can be found in the international aisle of most local supermarkets in the UK and beyond. Their springy texture and ability to soak up the sauce make them a fantastic choice.

However, the beauty of a stir-fry lies in its adaptability. If you’re looking for a gluten-free option, rice noodles are an excellent alternative. These delicate noodles, famously used in dishes like my Singapore Noodles recipe, offer a lighter texture and are perfect for those with dietary restrictions.

Another beloved option is udon noodles. These thick, chewy, and gloriously slurp-worthy noodles are a personal favorite, performing exceptionally well in both hearty soups and robust stir-fries. My Chicken Yaki Udon, for instance, comes together incredibly fast, especially when using the convenient pre-cooked, vacuum-packed udon noodles.

Finally, let’s not forget soba noodles. Made primarily from buckwheat flour, soba noodles boast a distinct, pleasant nutty flavor. If you seek out those made with 100% buckwheat flour, they are naturally gluten-free! However, always double-check the labels, as many commercial soba varieties often blend buckwheat with wheat flour. Each noodle type brings its unique character, allowing you to tailor your stir-fry to your exact preferences.

Recipe Tips for a Perfect Prawn Noodle Stir Fry

Achieving a restaurant-quality stir fry at home is entirely within reach with a few key strategies. These tips are designed to ensure your Prawn Noodle Stir Fry is not only delicious but also comes together smoothly and efficiently:

  • Embrace “Mise en Place”: This noodle stir fry, like all good stir-fries, is packed with fresh vegetables that require dicing, slicing, and chopping. The golden rule of stir-frying is to have *all* your ingredients prepped and ready before you even turn on the stove. Stir-fries cook at high heat and very quickly, leaving absolutely no time to stop and chop mid-cooking.
  • Protein Versatility: While plump prawns are the star of this dish, stir-fries are wonderfully adaptable. If prawns aren’t your preference or you’re looking for a change, feel free to substitute them with thinly sliced chicken, beef, pork, or cubed tofu. The same basic recipe and cooking method can be applied to a wide variety of proteins, making it incredibly versatile.
  • Noodle Alternatives: We recommend Asian medium or fine egg noodles for their ideal texture. However, if these are unavailable, standard spaghetti can work as a surprising substitute in a pinch. For a different culinary direction, or if you simply prefer it, you can easily adapt this recipe to be served with fluffy rice instead of noodles.
  • Pre-Blanch Your Broccoli: Broccoli florets tend to take longer to cook than most other stir-fry vegetables. To ensure all your vegetables achieve that perfect tender-crisp texture simultaneously, it’s essential to blanch the broccoli briefly in boiling water before adding it to the stir-fry. This step guarantees even cooking and vibrant color.
  • Master Cabbage Slicing: Thinly slicing cabbage can sometimes be a tedious task, especially if you aim for uniform pieces that cook evenly. For consistently thin, beautiful strips of cabbage, a mandoline slicer is an invaluable kitchen tool. It makes quick work of the task, ensuring professional-looking results and even cooking. It’s an investment well worth considering if you plan to make stir-fries a regular part of your meal rotation!

Serving Suggestions to Enhance Your Stir Fry

This Prawn Noodle Stir Fry is, by design, a complete and satisfying one-pan dinner. Simply scoop a generous portion into your bowl and enjoy it fuss-free. However, there are a few simple additions and garnishes that can elevate the experience, adding extra layers of flavor and visual appeal.

I particularly love to finish my stir-fries with a handful of freshly sliced green onions (also known as spring onions). Their mild oniony bite and crisp texture provide a wonderful contrast to the tender noodles and vegetables, adding a burst of freshness. A generous sprinkling of sesame seeds is another fantastic addition. Toasted sesame seeds impart a delicate nutty flavor and a subtle crunch that beautifully complements the rich, savory sauce, bringing an authentic Asian touch to every mouthful. For those who enjoy a bit of heat, a dash of chili flakes or a swirl of sriracha can add an exciting kick, while a squeeze of fresh lime juice just before serving brightens all the flavors.

Storage and Leftovers: Best Practices

When it comes to seafood stir-fries, especially those containing prawns or shrimp, it’s always best to enjoy leftovers promptly. For optimal freshness and safety, consume your Prawn Noodle Stir Fry within 3-4 days of cooking. The vegetables will also retain their best texture and nutritional value within this timeframe.

Reheating is simple and effective. If you’re pressed for time, a microwave can do the trick; just ensure it’s heated thoroughly. However, for a superior texture that mimics the freshly cooked dish, I highly recommend returning leftovers to a wok or large frying pan over medium heat. Add a splash of water or a tiny bit of extra soy sauce to loosen the sauce and prevent sticking. Stir frequently, and cook until the prawns are warmed through and the noodles are heated evenly, which typically takes about 5-7 minutes. This method helps to revive the flavors and textures beautifully, making your leftovers almost as good as the original meal.

Equipment

  • Mandoline
  • Wok

Ingredients

  • 340g/12 oz Asian medium egg noodles
  • 1 tbsp vegetable oil
  • 250g/1/2 lbs raw prawns (shrimp)
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 3 green/spring onions, sliced (whites and greens separated)
  • 100g/ 1 cup snow peas
  • 100g/ 1 cup bean sprouts
  • 150g/2 cups red or white cabbage, thinly sliced
  • 1 carrot, julienned
  • 1 head broccoli, cut into florets
  • 4 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp white pepper
  • 1 tbsp sesame seeds, for garnish

Instructions

  1. Bring a pot of water to a boil. Add the noodles and broccoli florets, and cook according to package instructions until al dente. Drain and set aside.
  2. Heat the vegetable oil in a wok or a large, deep frying pan over high heat. Add the prawns (seasoned with a pinch of salt if desired) and stir-fry for 2 minutes on one side, then 1 minute on the other, until they are opaque and cooked through. Remove the cooked prawns to a plate.
  3. To the same pan, add the minced garlic, grated ginger, and the white parts of the sliced spring onions. Stir-fry briefly for about 30 seconds until fragrant. Then add the snow peas, bean sprouts, thinly sliced red or white cabbage, and julienned carrots. Continue to stir-fry over high heat for 3-4 minutes, allowing the vegetables to become tender-crisp.
  4. Pour in the oyster sauce, soy sauce, white pepper, and sesame oil. Stir well to ensure all the vegetables are evenly coated with the delicious sauce.
  5. Add the cooked noodles and broccoli back into the wok. Toss everything gently to combine, making sure the noodles and vegetables are coated in the sauce. Finally, return the cooked prawns to the wok and stir-fry for another minute or two, just until the prawns are warmed through.
  6. Garnish with the green parts of the sliced spring onions and a sprinkle of sesame seeds. Taste and add more salt if necessary. Serve immediately and enjoy!
