Embracing Seafood for Your Christmas Feast

For many, Christmas dinner immediately brings to mind a succulent roast bird, often a turkey or goose. However, embracing seafood as a centerpiece or an impressive starter can introduce a refreshing and elegant twist to your festive meal. There’s a delightful limit to how many traditional turkeys one can truly savor year after year! Introducing fish into your Christmas menu not only offers a lighter, yet equally satisfying, alternative but also opens up a world of vibrant flavors and diverse textures. It’s a culinary journey that can surprise and delight your guests, providing a memorable departure from the expected.

I have, on numerous occasions, served seafood as the main attraction instead of a traditional roast, and my baked salmon with rosé wine sauce has consistently garnered rave reviews. This particular dish is a testament to festive elegance, delicate in flavor yet deeply satisfying. It comfortably serves eight, making it ideal for a medium-sized gathering, and its vibrant presentation of red, white, and green hues inherently exudes Christmas cheer. The creamy rosé sauce perfectly complements the flaky salmon, creating a sophisticated yet comforting experience.

For more intimate Christmas celebrations, a fresh salmon with lemon dill sauce offers a lively and invigorating option. The bright citrus notes, combined with the fragrant, frondy dill, create a taste profile that is both refreshing and reminiscent of winter fir trees, adding a subtle thematic touch to your table. The simplicity of this dish allows the quality of the salmon to shine, making it a truly exquisite choice.

Should you wish to fully immerse your holiday meal in the bounty of the sea, consider a grand seafood lasagna. This indulgent creation is packed with a delightful medley of crab, succulent shrimp, tender scallops, and delicate calamari. It’s a true seafood extravaganza, cleverly nestled beneath layers of silky pasta, a rich, velvety béchamel sauce, and a blanket of perfectly melted cheese. This dish delivers warmth and luxury, making it a fantastic choice for a more elaborate and comforting Christmas main course.

Crafting Your Scandi-Inspired Grazing Board: A Modern Twist on Tradition

This festive sharing platter draws deep inspiration from the traditional Scandinavian smörgåsbord, a cornerstone of Nordic culinary culture. However, it’s not a strict replication. I’ve thoughtfully selected and adapted some of the smörgåsbord’s most beloved trademarks, giving them a contemporary twist to create a version perfectly suited to my family’s palate and modern entertaining styles. The goal was to capture the essence of Scandinavian flavors and aesthetics while simplifying certain elements for a more accessible and enjoyable experience.

A classic Scandinavian smörgåsbord is renowned for its impressive spread, typically featuring a diverse array of both hot and cold dishes. You would often find an abundance of smoked, pickled, or fermented fish; hearty wholegrain breads and crispbreads; perfectly boiled eggs; savory meatballs; rich pâtés; refreshing beetroot salad; and a generous garnish of fresh dill. It’s a feast for the senses, bursting with flavors and textures – a truly comprehensive culinary experience!

My rendition of this grand tradition gracefully omits the more adventurous fermented fish, opting instead for the universally appealing and rich flavors of both hot and cold smoked salmon. This provides a delightful contrast in texture and taste, offering guests both the delicate, silken texture of cold-smoked salmon and the firmer, flakier texture of hot-smoked varieties. To elevate the board to true Christmas status, I’ve included glistening salmon roe. These beautiful, vibrant orange beads sparkle elegantly in the light, acting like edible baubles that lend a touch of luxury and visual splendor. Their subtle pop of brininess adds an exciting textural element that is simply irresistible.

For the pickled elements, I’ve chosen to focus on crunchy vegetables rather than pickled fish, maintaining a tangy contrast that balances the richness of the salmon. The board features briny capers, crisp gherkins (baby pickles), and thinly sliced pickled red onions, which contribute a wonderful zing and visual appeal. To add freshness and a satisfying crunch, I’ve included Kirby cucumbers, known for their exceptional crispness. However, any of your favorite easy-to-dip crudités would work beautifully here, allowing for customization based on preference and availability.

While a traditional Scandi board might feature beets in a salad form, I’ve transformed them into a smooth, tangy beetroot dip. This vibrant, earthy dip is simply perfect for generously slathering onto elegant crackers, then topping with a thin slice of smoked salmon and a delicate half-spoonful of those shimmering roe pearls. Alternatively, for a truly Nordic-style bite, pile a spoonful onto a halved boiled egg for a delightful burst of flavor and texture. This dip adds a beautiful color pop and a unique sweet-and-sour element to the board.

To complete the spread and fill any inviting gaps, I’ve added a selection of our favorite crispy potato chips and an assortment of crackers, providing varied textures and carriers for the dips and toppings. The entire board is then finished with a festive sprinkling of fresh dill, not just for its aromatic appeal but also for its visual connection to Scandinavian aesthetics and the holiday season.

Recipe Tips and Notes for a Perfect Grazing Board

  • For those who prefer a warmer, more substantial starch alongside their board, consider serving buttery, boiled baby potatoes or crispy air fryer potatoes. These offer a delightful alternative to standard potato crisps, providing a comforting element that can truly elevate the experience, especially during colder seasons.
  • When it comes to crackers, Peter’s Yard crackers are my absolute top recommendation. Crafted in Sweden using traditional baking methods, their quality and distinct sourdough flavor are unparalleled, truly making a noticeable difference to the overall taste profile of your board.
  • If Peter’s Yard crackers are not readily available in your area, don’t fret! Any of your favorite high-quality crackers typically enjoyed with cheese will make a fine substitute. Alternatively, thinly sliced baguette or fresh sourdough bread provide excellent vehicles for your toppings, adding a comforting and rustic touch.
  • This Scandinavian-inspired board, with its emphasis on pickled ingredients, offers a wonderfully bold and distinct flavor profile. However, if the strong Scandinavian notes are a bit too intense for your palate, feel free to incorporate more classic crudités. Think crisp bell peppers, cherry tomatoes, or carrot sticks, which can soften the overall tanginess and offer milder flavors.
  • The combination of both hot and cold smoked salmon is intentionally chosen to provide a delightful contrast in textures and flavors – the delicate flakiness of hot smoked versus the silky firmness of cold smoked. If cured salmon isn’t your preferred choice, or you simply wish to diversify, feel free to supplement or substitute with cooked prawns (shrimp), sweet scallops, or elegant dressed crab.
  • Salmon roe adds a truly striking visual and textural dimension to any grazing board, offering a burst of oceanic flavor and a delightful “pop.” When purchasing, prioritize quality. Look for jars where the individual grains are distinct and intact, with minimal excessive liquid. These indicators typically point to a superior product that will enhance your board without compromising on taste or presentation.
  • The homemade beetroot dip is a masterpiece of balance, offering both a subtle sweetness and a refreshing acidity. It serves beautifully as a palate cleanser, providing a welcome contrast after sampling some of the more intensely salty morsels on the board, leaving your taste buds refreshed and ready for the next bite.

Serving Suggestions for Your Holiday Appetizer

While I could happily indulge in this splendid grazing board year-round, at any time of day – yes, I’d unashamedly enjoy this for breakfast! – I tend to reserve it specifically for the festive season. It truly shines as a stupendous seafood appetizer for Christmas, and I have three compelling reasons why it’s perfectly suited for this special occasion.

Firstly, its sheer convenience is unmatched. This board requires absolutely no cooking on the day of serving, allowing you to prepare the pickled onions and luscious beet dip well in advance. This brilliant make-ahead feature means you won’t be fretting over precious oven space or missing out on precious family time while you’re sequestered in the kitchen. It’s the ultimate stress-free starter, letting you relax and enjoy the festive atmosphere.

Secondly, the carefully selected ingredients, particularly the pickled vegetables and lean fish, are incredibly gentle on the digestion. This is a crucial benefit during the holidays, as it ensures you won’t feel overly full or sluggish before you’ve even had a chance to enjoy the magnificent Christmas main course. It’s a light yet flavorful way to begin your feast, preparing your palate for the deliciousness to come.

And thirdly, this Scandi-inspired grazing board is an undeniable showstopping centerpiece. Its vibrant colors, elegant arrangement, and luxurious ingredients instantly command attention and radiate an aura of celebration. It’s visually stunning and communicates effortless sophistication, truly screaming “celebration!” from the moment it’s presented to your guests. Pair it with a crisp sparkling wine or a light lager to complement its fresh, briny flavors.

Storage and Leftovers: Maximizing Your Holiday Spread

Effective planning is key to a smooth holiday meal, and this grazing board excels in its make-ahead potential. I highly recommend preparing both the pickled red onions and the creamy beetroot dip a day or two in advance. This foresight ensures that on the day of your gathering, all that’s left to do is the enjoyable task of artfully arranging your delicious nibbles on the board. I often make a generous batch of pickled red onions, as they are incredibly versatile and can be brought out again to accompany any post-Christmas cold cuts or sandwiches, adding a bright, tangy element.

Proper storage is essential for maintaining freshness and ensuring food safety. The homemade pickled red onions, when stored in an airtight jar and kept refrigerated, will maintain their quality and flavor for up to two weeks. The vibrant beet dip, similarly, will stay fresh and delicious in the refrigerator for up to three days. These components are perfect for batch preparation, making your holiday cooking significantly easier.

While you might choose to carefully shuffle any remaining crackers back into their original box for later enjoyment, it is generally best practice to dispose of most other leftover bits and bobs from this grazing board after the meal. Especially if they have been sitting out at room temperature for an extended period, for food safety reasons, it’s advisable to discard perishable items that have been exposed.

Other Complementary Christmas Sides to Try

To further enhance your festive spread, consider these delightful side dishes that pair wonderfully with any Christmas meal:

  • Braised Red Cabbage: A classic, sweet, and tangy side that adds a beautiful pop of color and rich flavor.
  • Butternut Squash Casserole (Gratin): A creamy, comforting, and subtly sweet dish that provides a lovely autumnal touch.
  • Easy Roasted Parmesan Brussels Sprouts and Carrots: A simple yet flavorful roasted vegetable dish with a savory Parmesan crust.
  • Miso Roasted Carrots: An unexpected but delicious twist on roasted carrots, offering an umami-rich depth of flavor.

  • 50g / 1.7 oz salmon or trout roe
  • 3-4 eggs, boiled
  • 1-2 small cucumbers, sliced
  • 10-12 gherkins / baby pickles
  • 3-4 tbsp capers
  • 200g / 1 cup creme fraiche or sour cream
  • Fresh dill
  • Chives
  • Variety of crackers
  • A pack of potato crisps / chips (any flavour you love)

For the pickled onion (prepare in advance)

  • 1 red onion, sliced thinly
  • 1/4 cups apple cider vinegar

For the beet dip

  • 1 large beet, cooked
  • 1/2 clove garlic
  • 75g / 1/3 cup mayonnaise
  • 1 tsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt to taste

Instructions

  • Make the pickled onions at least a day ahead. Slice the onion thinly and put in a mason jar or clean jam jar, pour the vinegar over it until the slices are fully submerged, cover with a lid and refrigerate overnight.
  • Make the beet dip. Cook the beetroot or buy a cooked one. Peel it and cut into cubes. Add the cubed beet to a small food processor together with the garlic, mayonnaise, apple cider vinegar and mustard. Process until smooth, taste and add a pinch of salt if desired. Refrigerate until needed for the flavor to meld. Boil the eggs and cool in cold water until needed. Peel right before arranging the board.
  • On the day of serving the board, add the sour cream and beet dip to small serving bowls. Top both with a sprig of dill and chopped chives. Choose a small decorative bowl for your caviar as well. Cut the peeled boiled eggs in half or in quarters.
  • Arrange all ingredients on a wooden serving board or a large platter. Serve with a variety of crackers or sliced baguette.
