Why You’ll Adore This Italian Rosemary Chicken

A hearty, savoury stew is an eternally welcome addition to any dinner table, especially one that carries the soul of Italian cooking. This Italian Rosemary Chicken with White Beans and Olives might boast a seemingly simple list of ingredients, but the resulting stew is anything but boring. Its profound deliciousness is achieved in true Italian style: through the thoughtful assembly of high-quality ingredients, allowing each component to shine and contribute to a harmonious whole. It’s a testament to the power of fresh, natural flavors coming together.

The addition of olives is a distinct Italian twist and a significant element that elevates this recipe beyond a classic chicken stew. We are confident that once you try it, you’ll be completely won over. Olives introduce a wonderful brightness to the dish, along with a delightful salty kick that awakens the palate. Furthermore, combined with the aromatic rosemary, olives contribute a remarkable complexity to what appears, on paper, to be a relatively simple preparation. Together, these elements create a stew that is incredibly hearty and substantial without ever feeling heavy or stodgy. The balance of textures and tastes ensures every spoonful is a pleasure. Sounds incredibly good, doesn’t it?

The Magic of Italian Flavors: Key Ingredients and Their Role

Much like the finest Italian and Italian-inspired recipes, the ingredient list for this rosemary chicken stew is concise, emphasizing quality over quantity. The secret to its deliciousness lies in selecting excellent components that build layers of flavour. Here’s what you’ll need to create this culinary masterpiece:

  • Chicken Thighs or Legs: These cuts are perfect for stewing, providing succulent, flavourful meat that stays incredibly tender during the slow braising process. Their slightly higher fat content contributes to a richer sauce.
  • Fresh Rosemary: The signature herb of this dish, fresh rosemary imparts a wonderfully pungent, piney, and citrusy aroma that is quintessentially Italian and pairs magnificently with chicken and tomato.
  • Garlic: An indispensable aromatic in Italian cuisine, garlic forms the pungent, savoury backbone of our sauce, infusing every bite with its unmistakable flavour.
  • Anchovies or Anchovy Paste: Often a surprise ingredient for many, anchovies are the secret weapon here. They dissolve completely into the sauce, leaving no fishy taste, but instead providing an incredible depth of umami and a foundational savoury richness that cannot be easily replicated. Don’t skip them!
  • Canned Crushed Tomatoes or Tomato Passata: The heart of the sauce. High-quality crushed tomatoes or smooth passata provide a sweet, tangy, and robust base that ties all the other flavours together beautifully. Opt for Italian brands if possible for superior taste.
  • Olives: Bringing a delightful brininess and a burst of salty, tangy flavour, olives are key to the Mediterranean character of this stew. Green olives are suggested for their bright notes, but any good quality olive will work.
  • Olive Oil: The cornerstone of Italian cooking, a good quality extra virgin olive oil is essential for sautéing and building the initial flavour base of the sauce.
  • White Beans: Canned white beans, such as cannellini or butter beans, add a creamy texture, heartiness, and a lovely earthy dimension, making the stew more substantial and satisfying.

The vibrant tomato sauce in this recipe is a delightful riff on my ever-popular Puttanesca sauce. This time, I’ve ingeniously incorporated its bold and rich profile into a comforting one-pot meal. By braising tender chicken thighs directly in this flavourful base and adding creamy white beans, the dish becomes a complete and incredibly satisfying experience. The combination of fragrant garlic, fresh rosemary, the subtle yet profound umami from anchovies, and the sweetness of ripe tomatoes ensures this meal is a huge winner every time. While deeply inspired by Italian flavours, I humbly refrain from claiming it as strictly “authentic” to avoid incurring the playful wrath of Italian food purists! It’s simply too delicious to argue with.

Six step-by-step process shots demonstrating the preparation of the Italian rosemary chicken stew.

Crafting the Perfect Puttanesca-Inspired Sauce

What truly elevates this Italian Rosemary Chicken and White Beans to an extraordinary level is undoubtedly its magnificent sauce. And the secret to this sauce’s exceptional taste lies in a surprising ingredient: anchovies. I know what you might be thinking – fish in a chicken stew? But please, allow me to persuade you to give anchovies a chance, even if you’re typically not a fan of fish!

Essentially, this sauce is a masterful adaptation of the classic Puttanesca sauce, renowned for its intense savoury character. This means that serving this saucy rosemary chicken with pasta would be an absolutely excellent and highly recommended choice, creating a wonderfully cohesive meal reminiscent of traditional Italian fare. Despite the distinct aroma of anchovies in a tin, rest assured, the sauce itself will not taste overtly fishy. Instead, these tiny fillets work their magic by dissolving almost instantly when they hit hot oil, transforming into a rich, umami-laden paste. This paste then infuses the entire sauce with an indescribable depth and a complex savoury taste that is incredibly difficult to achieve through other ingredients.

You won’t find any fish chunks floating in your beautiful tomato sauce; only a profound, satisfying flavour that enhances every other ingredient. This technique is a cornerstone of Italian cooking for adding complexity and richness. While chicken thighs are highly recommended for their juiciness and flavour, you can also use chicken breasts if preferred. Just be sure to reduce the cooking time by half to prevent them from drying out. I sincerely hope this convinces you to embark on this flavourful journey and give my Italian rosemary chicken a try. You won’t regret it!

Expert Tips for Success

  • Chicken Choice: While bone-in, skin-on chicken thighs deliver the most flavour and moisture to this dish, boneless, skinless chicken breasts can be used for a leaner option. If opting for breasts, reduce the oven cooking time to approximately 20-25 minutes to ensure they remain tender and don’t dry out. Always check for an internal temperature of 165°F (74°C).
  • Olive Variety: We favour green olives for their brighter, slightly sharper flavour profile, which cuts through the richness of the tomato sauce beautifully. However, any good quality olives you have on hand will work. Kalamata or other black olives will impart a deeper, fruitier, and more robust taste, offering a different but equally delicious experience.
  • Embrace Anchovies: Anchovies are often controversial, but they are a true game-changer in this recipe. When cooked properly and allowed to melt into the hot oil and sauce, they lose any overt “fishiness” and instead contribute an unparalleled depth of umami and savoury richness. While they can be skipped if absolutely necessary, we strongly encourage you to try them; they provide a complex flavour that is difficult to achieve with other ingredients. Think of them as a natural flavour enhancer, similar to how Parmesan cheese adds depth.
  • Tomato Quality Matters: The quality of your crushed tomatoes or passata significantly impacts the final flavour of the stew. Poor quality tomatoes can be acidic and watery, failing to break down properly or provide the desired sweetness. Invest in the best quality canned Italian tomatoes you can afford, such as San Marzano, for a truly superior sauce. Their natural sweetness and vibrant flavour will make a noticeable difference.
  • Seasoning Adjustments: Remember that both anchovies and olives are inherently salty. When adding salt to the sauce, taste carefully before seasoning. It’s easier to add more salt than to fix an over-salted dish.

Serving Suggestions for Every Occasion

Authentic or not, this Italian Rosemary Chicken with White Beans and Olives is always a cherished meal at our dinner table. Its rich flavours and comforting consistency make it incredibly versatile when it comes to serving. Here are some ideas to make it a memorable part of your meal:

  • Classic Italian Sides: Serve it generously alongside crusty artisan bread, perfect for soaking up every last drop of that delectable tomato sauce. Alternatively, it’s exquisite with fluffy white rice or your favourite pasta shape, such as tagliatelle or penne, tossed directly into the sauce.
  • Low-Carb Options: If you’re looking to minimize carbohydrates, this hearty chicken stew pairs wonderfully with a simple side of fresh greens, perfectly roasted tenderstem broccoli with lemon-garlic vinaigrette, or vibrant lemon-garlic green beans with Parmesan cheese. The rich stew provides ample flavour and satisfaction on its own.
  • Elevate Your Dinner Party: This rosemary chicken recipe is robust enough to star as a main course in a sophisticated, multiple-course Italian dinner party.
    • Antipasti (Appetizers): Begin with a selection of cured Italian meats like salami and prosciutto served with crisp breadsticks, fresh mozzarella, and marinated vegetables. Or delight your guests with our tempting crostini recipe.

Storage and Leftovers

This Italian Rosemary Chicken stew tastes even better the next day as the flavours have more time to meld and deepen, making it an excellent meal prep option. Store any leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, this stew freezes beautifully for up to 3 months. If freezing, ensure it’s completely thawed in the refrigerator before reheating.

While a microwave can certainly be used for quick reheating, for the best results and to preserve the chicken’s tenderness and sauce’s texture, we recommend reheating it gently on the stovetop. Transfer the stew to a pan over medium heat. Add a splash of water or chicken stock to loosen the sauce if it has thickened too much during storage. Cover the pan with a lid or foil to create steam and prevent the chicken from drying out. Stir occasionally. Allow at least 15 minutes for stovetop reheating, ensuring the chicken is thoroughly heated through before serving. The goal is to warm it gently without overcooking the chicken.

This Italian-style rosemary chicken simmered in a rich tomato sauce with white beans and olives is a great everyday dinner that the whole family will love!

Equipment

  • Cast iron casserole dish

Ingredients

  • 1 tbsp olive oil
  • 8-10 chicken thighs
  • Salt and pepper, to taste
  • 4 cloves garlic, sliced
  • 3 fillets anchovies/1 tsp anchovy paste
  • 2-3 rosemary sprigs
  • 500 ml / 2 cups tomato passata or crushed tomatoes
  • 125 ml / 1/2 cup water
  • 1/2 cup /70 g green olives
  • 1 400g /14 oz tin white beans, butter beans or cannellini

Instructions

  1. Preheat the oven to 180C/350F.
  2. Season chicken thighs with salt and pepper. Brown them over high heat in a frying pan in batches to prevent overcrowding and steaming, until golden on both sides. Remove to a plate and set aside. Discard all but 1-2 tbsp of oil from the pan.
  3. To the same pan, add anchovies, sliced garlic, and half the rosemary. Fry over medium heat for 1 minute, stirring and breaking up the anchovies into a paste.
  4. Add tomato passata, water, olives, and white beans. Bring the mixture to a boil. Taste the sauce and add salt if needed, being cautious as both anchovies and olives are naturally salty.
  5. Return the browned chicken thighs, along with any collected juices, back to the pan. Add the remaining rosemary. Cover with a lid and cook in the preheated oven for 20 minutes. Then, uncover and continue cooking for another 20 minutes to allow the sauce to thicken slightly and the chicken to finish cooking.
  6. Serve immediately with rice, pasta, or a fresh green salad for a delicious low-carb alternative.
