Christmas Baking: A Beloved Holiday Tradition

For many, the holiday season isn’t complete without the comforting aroma of freshly baked goods filling the home. We all have our cherished Christmas baking favorites, from intricately decorated cookies to rich fruitcakes. While I appreciate a good cookie, I find true festive joy in a generous slice of sweet bread with my morning coffee, perhaps with a splash of homemade eggnog. This cranberry orange bread isn’t just a recipe; it’s an invitation to create those magical holiday memories.

The pairing of tart cranberries and sweet, aromatic oranges is a match made in culinary heaven, especially during Christmas when clementines and mandarins are at their peak. Their bright citrus notes beautifully complement the tangy burst of cranberries, creating a harmonious flavor profile that is both refreshing and comforting. This sweet loaf embodies that perfect balance, making it an indispensable part of your festive spread.

What makes this cranberry orange bread recipe particularly special is its remarkable ease and straightforward preparation. Despite its gourmet appeal, it’s designed for home bakers of all skill levels. The secret to its incredibly soft and moist crumb lies in the addition of full-fat Greek yogurt to the batter. If Greek yogurt isn’t readily available, high-quality sour cream makes for an excellent substitute, ensuring the same luxurious texture.

A final drizzle of the sparkling citrus glaze not only adds an extra layer of flavor but also provides a beautiful finishing touch. It’s so invigorating, you might not even need that second cup of coffee to feel wonderfully awake and ready for the dawn of Christmas morning!

Fresh, Frozen, or Dried Cranberries: Which to Use?

When it comes to baking with cranberries, you have several excellent options, and this recipe is wonderfully versatile. While I personally prefer using fresh or frozen cranberries for their vibrant color and juicy burst, dried cranberries can absolutely be used as well. Each type brings a slightly different texture and intensity of flavor to the bread.

Using Fresh or Frozen Cranberries:

Fresh cranberries offer a sharp, tangy flavor that brightens the bread considerably. Frozen cranberries are a fantastic alternative and can be used directly from the freezer without thawing. Just toss them gently with a tablespoon of flour before adding them to the batter; this helps prevent them from sinking to the bottom of the loaf during baking. Their natural moisture contributes to the bread’s tender texture.

Incorporating Dried Cranberries:

If fresh or frozen cranberries are out of season or hard to find, dried cranberries (often called craisins) are a convenient and delicious choice. To ensure they plump up nicely and add moisture to your bread, I highly recommend a simple pre-soaking step. Simply place them in 1 cup (250ml) of warm orange juice or hot water for 30 minutes to 1 hour before adding them to your batter. This rehydrates them, making them softer and juicier, almost mimicking the texture of fresh cranberries. After soaking, be sure to drain them thoroughly before mixing them into the batter to avoid excess liquid.

The natural beauty and vibrant color of fresh cranberries add visual appeal and exquisite taste to your holiday bakes.

Achieving Perfection: Tips for The Best Cranberry Orange Bread

Crafting the perfect cranberry orange bread is simple with a few key techniques. Follow these expert tips to ensure your loaf turns out beautifully moist, flavorful, and a true crowd-pleaser:

  • Choose the Freshest Oranges: The quality of your oranges significantly impacts the flavor. Opt for the best-tasting, most fragrant clementines or mandarin oranges you can find. Their zest and juice will infuse the bread with an unparalleled citrus aroma.
  • Moisture is Key: For an incredibly moist and tender crumb, full-fat Greek yogurt or sour cream is your secret ingredient. It adds richness and helps keep the bread from drying out.
  • Freshly Squeezed Juice Matters: While carton orange juice can be used, freshly squeezed juice from your clementines or mandarins will provide a much more intense and authentic citrus flavor. It truly makes a difference in both the bread and the glaze.
  • Prevent Over-Browning: Keep an eye on your bread around 40 minutes into baking. If the top is browning too quickly, loosely tent it with aluminum foil. This allows the inside to continue baking thoroughly without the exterior becoming overly dark.
  • Don’t Forget the Glaze: The orange-flavored glaze isn’t just for decoration; it adds a burst of sweetness and tang that perfectly complements the bread. It’s an essential part of the experience!
  • Glaze While Warm: For maximum flavor absorption, drizzle the glaze over the loaf while it is still warm. The warmth helps the glaze seep into the bread, infusing it with extra citrusy goodness.
  • Avoid Overmixing: When combining wet and dry ingredients, mix just until no streaks of flour remain. Overmixing can develop the gluten too much, resulting in a tough bread.
  • Cooling Patience: Allow the bread to cool on a wire rack for at least 30 minutes before removing it from the pan. This prevents it from breaking apart and allows it to firm up properly. Let it cool completely before slicing for the cleanest cuts and best texture.

Overall, this cranberry orange bread is a real winner. It’s not only delicious and incredibly easy to prepare but also highly adaptable. Feel free to experiment with other citrus fruits or even add a pinch of cinnamon or nutmeg for an extra layer of warmth. Its quick preparation time makes it ideal for last-minute holiday gatherings or simply satisfying a sudden craving for something sweet and festive.

Serving & Storage Suggestions

This Cranberry Orange Bread is incredibly versatile and can be enjoyed in many ways. It’s fantastic for Christmas morning breakfast or brunch, paired with coffee, tea, or even a mimosa. It also makes a wonderful dessert, served simply or with a dollop of whipped cream. Beyond personal enjoyment, a beautifully wrapped loaf of homemade cranberry orange bread is a thoughtful and much-appreciated gift for friends, family, or neighbors during the holidays.

To store your bread and keep it fresh, wrap it tightly in plastic wrap or aluminum foil, or place it in an airtight container at room temperature for up to 3-4 days. For longer storage, this bread freezes exceptionally well. Wrap the cooled loaf (without glaze, if possible, or apply glaze after thawing) tightly in plastic wrap, then again in aluminum foil, and freeze for up to 2-3 months. Thaw overnight at room temperature before serving.

sliced cranberry orange bread
A quick and delicious recipe for cranberry orange bread that is a must-make for the holiday season.

Equipment

  • Mixing bowl
  • Loaf pan

Ingredients

  • 250g / 2 cups all-purpose flour
  • 200g / 1 cup white sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 250ml / 1 cup Greek yogurt or plain yogurt, full fat
  • 60ml / 1/4 cup milk, whole or 2%
  • 60ml / 1/4 cup orange juice, from 1 clementine orange/a mandarin orange
  • 60ml / 1/4 cup vegetable oil
  • 2 eggs, large
  • 2 tsp vanilla extract
  • orange zest, from 1 clementine or a mandarin orange
  • 150g / 1¼ cup cranberries, fresh, frozen, or dried (see recipe notes)

For the orange glaze

  • 60g / 1/2 cup icing sugar/powdered sugar
  • 2 tbsp orange juice

Instructions

  1. Preheat oven to 350F/180C. Thoroughly grease your 5″x9″ (1.5 Qt./1.5 L) loaf pan.
  2. In a large mixing bowl, combine the dry ingredients: flour, white sugar, baking powder, baking soda, and salt. Whisk them together until well combined.
  3. In a separate, smaller bowl, whisk together the wet ingredients: Greek yogurt (or sour cream), milk, orange juice, vegetable oil, vanilla extract, and orange zest. Add the eggs one at a time, whisking until fully incorporated.
  4. Pour the wet mixture into the dry mixture. Stir gently with a spatula or wooden spoon until just blended and no streaks of flour remain. Be careful not to overmix. Gently fold in the cranberries until evenly distributed.
  5. Pour the batter into the prepared loaf pan and spread evenly. Bake for 60-65 minutes, or until a cake tester (or toothpick) inserted into the center comes out clean. If the top browns too quickly, loosely tent with aluminum foil.
  6. Once baked, remove the loaf from the oven and let it cool on a wire rack for 30 minutes in the pan. After 30 minutes, carefully remove the bread from the pan and place it directly on the wire rack to continue cooling.
  7. While the bread is still warm, prepare the glaze by whisking together the icing sugar (powdered sugar) and orange juice in a small bowl until smooth. Drizzle the glaze generously over the top of the warm bread. Allow the bread to cool completely before slicing and serving. This allows the glaze to set and the flavors to fully develop.

Notes

  • Dried Cranberry Preparation: If using dried cranberries instead of fresh or frozen, soak them in 1 cup/250ml of orange juice or hot water for 30 minutes to 1 hour before adding to the batter. Drain them thoroughly before mixing to prevent excess moisture.
  • Glazing for Flavor: For optimal flavor, glaze the bread while it’s still warm. This allows the delicious orange glaze to soak into the bread, enhancing its taste and moisture.
  • Storage: Store the cooled and glazed bread wrapped tightly at room temperature for up to 3-4 days, or freeze for up to 2-3 months.
