Crafting the Perfect Salmon Burger: A Step-by-Step Guide
These Thai-inspired salmon burgers are a deliciously oversized, Asian-flavored evolution of my popular salmon fishcakes. If you’ve tried that recipe, you’ll know my preference for using fresh, raw salmon over cooked or canned varieties. This choice is crucial for achieving an exceptionally moist, tender, and juicy burger that truly stands out. However, if cooked salmon or canned salmon is more convenient for you, don’t hesitate to use it! The burgers will still be incredibly flavorful and offer the same fantastic nutritional benefits.
You’ll also note that both my salmon burger and fishcake recipes are thoughtfully carb-light, meaning no potato fillers are used. Since these patties are destined for a hamburger bun, I avoid doubling up on starches to keep the focus on the rich salmon and vibrant flavors. Instead, I rely on a small amount of breadcrumbs and a single egg to act as binders, holding the mixture together perfectly without overwhelming the delicate fish. This approach ensures a lighter, healthier burger experience.
For ease and efficiency, a food processor is your best friend in preparing these patties. It effortlessly minces the salmon to the ideal texture and ensures all the aromatic Thai-inspired ingredients are evenly combined throughout the mixture. To infuse these salmon burgers with their distinctive Thai character, I’ve chosen a powerful blend of fresh ginger, fiery chili, and zesty lime. This trio delivers a “pow-wow” of flavor that’s both invigorating and utterly addictive. Who can resist that captivating combination?

Embracing Authentic Thai Flavors with Accessible Ingredients
The explosive zest and sizzling spice found in traditional Thai street food have always captivated my palate, but sourcing some of the more exotic ingredients can often be a challenge. My goal for this recipe was to capture that authentic “bang bang” flavor while making it as accessible as possible, ensuring you can recreate these vibrant dishes without a treasure hunt for rare components. We aim for true Thai inspiration, made practical for your local grocery store.
A classic Som Tam, for instance, typically calls for green, unripe papaya and tiny, dried shrimp or black crabs. These aren’t exactly staple items at most local supermarkets, and honestly, they’re not always kid-friendly either! To offer a delicious and practical alternative, I’ve ingeniously substituted the papaya with crisp cucumber. This swap not only provides a similar vibrant color and satisfying crunch but also makes the dish far more appealing to a broader audience. Instead of crustaceans, we rely on the rich umami of fish sauce to deliver that characteristic depth of flavor, ensuring no one at the table feels “creeped out” by unexpected ingredients.
For me, the delightful crunch and nutty richness of peanuts are an absolute highlight of this type of salad. They add a wonderful textural contrast and an extra layer of flavor that complements the spicy, tangy dressing beautifully. However, if you or your family have any peanut allergies, rest assured that they can be easily omitted without compromising the overall deliciousness of the slaw. The dish remains fantastic either way.
While salmon isn’t a fish commonly featured in traditional Southeast Asian cooking, its firm and meaty texture makes it an ideal choice for these jumbo burgers. Its robust nature holds up perfectly during cooking and biting, providing a satisfying mouthfeel similar to other hearty burger patties. Beyond its culinary versatility, salmon is a powerhouse of nutrition, packed with Omega-3 fatty acids, protein, and essential vitamins. Crucially, its mild and approachable “fishiness” level makes it a hit even with children, ensuring these healthy burgers are a welcome addition to any family meal plan. It’s a smart and delicious choice for a wholesome, flavorful burger.
The Essential Companion: Zesty Sriracha Mayonnaise
Every great burger demands a phenomenal sauce to complete the experience, and these Asian-inspired, Thai-style salmon burgers are no exception. What could possibly be a better companion than a creamy, spicy Sriracha mayonnaise? This simple yet incredibly impactful sauce elevates the entire dish, tying together all the vibrant flavors of the salmon patty and the refreshing slaw.
Creating this irresistible topping is wonderfully straightforward: just combine half a cup of your favorite store-bought mayonnaise with two generous tablespoonfuls (or more, if you dare to dial up the heat!) of zesty Sriracha. This vibrant concoction transforms your salmon burger into an eye-popping, jaw-dropping taste of Thailand that will leave your taste buds singing. The creamy coolness of the mayo perfectly balances the fiery kick of the Sriracha, creating a harmonious blend that is both comforting and exciting. It’s the ultimate saucy sidekick, guaranteed to make every bite a memorable one.

Expert Tips & Recipe Notes for Perfect Salmon Burgers
- Choosing Your Fish: While I’ve opted for fresh salmon fillets in this recipe, feel free to use your preferred fish. Sustainable white fish varieties like basa and pollock are excellent alternatives and will work beautifully. If you’re mindful of your budget, previously frozen fish can be a fantastic, cost-effective option without sacrificing quality or taste. Always ensure your chosen fish is thawed properly before preparation.
- Mastering the Patty Shape: Fish burgers, by nature, can be a bit delicate and prone to falling apart. The secret to achieving perfectly neat, cohesive burger shapes lies in precise proportions and gentle handling. It’s essential to follow the recipe closely, particularly regarding the amount of binding ingredients. Chilling the formed patties in the freezer briefly also helps them firm up, making them much easier to handle and cook without crumbling.
- Cooking Methods for Every Preference: Although I typically shy away from frying, pan-frying these salmon burgers yields an unbeatable result: a delightfully crisp exterior and a wonderfully juicy interior. However, if you prefer alternative cooking methods, this recipe is highly versatile! An air-fryer is an excellent, healthier option that still delivers a satisfying crispness. You can also grill them in the oven for a hands-off approach, or even on the BBQ for a smoky flavor – just remember to be gentle, as these delicate burgers require a tender touch.
- The Unskippable Asian Slaw: This vibrant Asian slaw is not just a side dish; it’s an integral component of the burger experience, inspired by a similar slaw in another one of my salmon recipes. Its fresh, crunchy texture and bright flavors elevate these homemade burgers to a gourmet level. While the ingredients might not be your everyday staples, they are all easily found in most major supermarkets. Please, do not skip this slaw—it truly completes the meal and adds a layer of complexity and freshness that you won’t want to miss!

Storage & Leftovers: Your Healthy Meal Prep Secret
Fish fingers and fishcakes are a freezer staple in many households – a busy parent’s ultimate failsafe, offering a reliably healthy and delicious meal when time is short, grocery runs are missed, or the weekly budget is tight. Imagine the satisfaction of having homemade, flavorful salmon burgers ready to go! This recipe truly shines as a fantastic meal prep solution, providing convenience without compromising on nutrition or taste.
Because this recipe is crafted using fresh, raw salmon fillets and avoids heavy potato fillers, these salmon burgers are exceptionally freezer-friendly. Whether you decide to freeze them cooked or uncooked, they will hold their flavor and texture beautifully, cooking up as fresh as the day they were made. This makes them an invaluable asset for healthy, quick meals throughout the week.
Both cooked and uncooked frozen burgers will maintain their quality for up to two months in the freezer, provided they are well-wrapped to prevent freezer burn. Beyond this period, salmon can start to lose its delicate flavor and succumb to that tell-tale “freezer funk.” For optimal results, always thaw your frozen burgers overnight in the refrigerator before proceeding with the cooking instructions. When reheating, ensure the burgers are piping hot all the way through to guarantee food safety and maximum enjoyment. Only after they are perfectly heated should you add your creamy burger sauce and vibrant slaw for the ultimate fresh finish!

- 3 tbsp chopped cilantro (coriander)
- 1 tbsp soy sauce
- 1 lime, juice only
- 1 tbsp chilli paste or sriracha
- 1 egg
- 1/2 tsp salt
- 90g/3/4 cup Panko breadcrumbs
- 3 tbsp flour for coating
Carrot Cucumber Slaw
- 1 cucumber, cut into ribbons with vegetable peeler
- 1 carrot, cut into ribbons with vegetable peeler
- 2-3 spring onions
- 1/2 red chilli, sliced
- 2 tbsp chopped cilantro
- 2 tbsp roasted peanuts, crushed
- 2 cloves garlic
- 1 tsp salt
- 2 tbsp brown sugar
- 2 tbsp fish sauce
- 3 tbsp lime juice
Sriracha Mayonnaise Sauce
- 125ml/1/2 cup mayonnaise
- 2 tbsp sriracha
- 6 burger buns
Instructions
-
Remove the skin from the salmon fillets. In a food processor, pulse the salmon until it is roughly minced to a coarse texture.
-
In a large mixing bowl, combine the minced salmon with minced garlic, grated ginger, chopped cilantro, soy sauce, lime juice, sriracha (or chili flakes), the egg, panko breadcrumbs, and salt. Mix thoroughly until all ingredients are well incorporated.
-
Prepare your working surface for shaping the burgers. Spread 3 tablespoons of flour onto a large plate or clean cutting board. Divide the salmon mixture into 6 equal portions. Roll each portion into a ball, then gently flatten it into a burger patty shape. Dredge each patty in the flour, ensuring it’s evenly coated. Repeat for all patties. Place the formed salmon burgers on a cutting board or tray and transfer them to the freezer for 20 minutes to firm up slightly (they will not freeze solid).
-
While the burgers are chilling in the freezer, prepare your slaw and burger sauce. For the slaw dressing, combine crushed peanuts, sliced green onions, sliced red chili, chopped cilantro, minced garlic, salt, brown sugar, fish sauce, and lime juice. Set aside.
-
Peel the carrots and use a vegetable peeler to slice both carrots and cucumbers into thin, delicate ribbons. Combine these ribbons in a medium-sized bowl and gently toss with the prepared dressing until evenly coated. For the burger sauce, simply combine the mayonnaise with the sriracha.
-
Remove the salmon burgers from the freezer. Heat olive oil in a large pan over medium heat. Fry the salmon burgers for 4-5 minutes on each side, or until they are golden brown and crispy on the outside and cooked through. Transfer the cooked burgers to a paper towel-lined platter to drain any excess oil.
-
Assemble your burgers. Lightly toast each half of the burger buns. Spread a generous layer of the Sriracha mayonnaise on the bottom bun. Place a cooked salmon burger on top, followed by a generous helping of the spicy carrot cucumber slaw. (Note: The slaw can be quite wet, so avoid including any excess juices in your burger assembly to prevent a soggy bun!) Finish with the top bun and serve immediately.
