Crafting Your Perfect Chicken Tortilla Soup

Chicken tortilla soup is more than just a meal; it’s a super fun fiesta in a bowl, inviting everyone to partake in its vibrant colors, rich flavors, and protein-packed goodness. While the core concept remains consistent, the beauty of this soup lies in its adaptability. Not everyone makes it the same way, leaving plenty of room for you to infuse it with your personal touch and signature flair.

My unique twist involves the addition of flavorful chorizo sausages. These Spanish-style sausages, known for their sweet pork and smoky paprika notes, are a game-changer. The rendered fat from the chorizo provides the perfect base for sautéing the onions, bell peppers, and garlic, imparting an incredible depth of flavor and a natural, inviting orange glow to the soup. This ingredient elevates the dish from good to extraordinary, creating a foundation that’s both spicy and incredibly savory.

When it comes to heat, you’re in control. You can easily turbo-charge your soup with an extra dash of chili powder, or even introduce fresh chilies like jalapeños or serranos for a more fiery kick. My recipe, however, is carefully balanced for my family’s preference, leaning towards a smoky warmth rather than an explosive inferno. It’s a versatile base that allows you to adjust the spice level to suit any palate, from mild to wild.

For the protein, I typically use boneless, skinless chicken breasts, which are ideal for shredding and absorbing the rich flavors of the broth. However, if you prefer a richer, more succulent texture, boneless, skinless chicken thighs are an excellent alternative. If you happen to have homemade bone broth on hand, it will add an even deeper layer of savory goodness, though quality store-bought chicken stock works perfectly well. The goal is convenience without compromising on taste.

To maximize ease, I rely on pantry staples like canned black beans and frozen corn. These ingredients are incredibly convenient and always on hand. Should you only have kidney beans or pinto beans in your cupboard, they’ll work just as beautifully. Similarly, fresh corn, when in season, would be a delightful addition, but the frozen or canned varieties ensure this delicious soup is accessible year-round. The true magic of this soup lies in its robust flavor and elegant simplicity—don’t overthink it, just enjoy the process and the incredible results!

The Instant Pot Advantage: Speed, Simplicity, and Flavor

What an invention! Just when you thought soup making couldn’t possibly get any easier, boom! Enter the Instant Pot. This revolutionary multi-cooker, often hailed as a pressure cooker, slow cooker, and more, means your entire meal isn’t just cooked in a single pot, but you also don’t need to stand over the stove, stirring and monitoring. It’s a time-saving, energy-saving (in more ways than one), and incredibly easy-to-use miracle machine that brings culinary efficiency to your kitchen.

Consider the stark contrast in cooking times: a traditional stove-top method for this chicken tortilla soup would typically demand around 45 minutes of simmering. In the Instant Pot, the active pressure cooking time is a mere 10 minutes. This difference is nothing short of a revelation for busy individuals and families. While it does take the Instant Pot approximately 10-15 minutes to come to pressure, and allowing for a natural pressure release adds another 15-20 minutes, this passive time is incredibly well spent. It allows the flavors to meld beautifully and provides a perfect window for preparing your crispy tortillas or other garnishes. If you’re truly pressed for time, a manual pressure release is always an option, though the natural release often results in a more tender chicken and a richer broth.

The Instant Pot isn’t just about speed; it’s about deep, consistent flavor. The pressure cooking environment forces liquids and seasonings deep into the ingredients, creating a more intensely flavored soup in a fraction of the time. This makes it an ideal tool for dishes that traditionally require long simmering, extracting every bit of deliciousness from your components. Its one-pot nature also drastically reduces cleanup, making it a favorite for weeknight meals when efficiency is key.

If you’re already a fan of the Instant Pot, you know its versatility. Besides this incredible chicken tortilla soup, it excels at other cozy and convenient dishes like cheesy potato soup or Thai chicken and rice soup, both just as hassle-free. For chicken lovers, explore other Instant Pot wonders such as Chicken Stew (a quick take on Coq au Vin), Shredded Chicken Tacos, or even a perfectly cooked Whole Chicken. The Instant Pot truly unlocks a world of fast, flavorful, and easy cooking.

The Essential Crunch: Homemade Crispy Tortilla Strips

The crispy tortilla strips are non-negotiable for this chicken tortilla soup – they are the Mexican equivalent of the French crouton, providing that irresistible crackle and snap to every spoonful of this lush soup. I don’t know about you, but a warm, crunchy tortilla is utterly irresistible. Skipping them would be a grave mistake, as they add crucial texture that complements the rich, savory broth and tender chicken.

While traditional recipes often call for shallow frying tortillas in oil, I’m not keen on frying in my home and actively seek ways to avoid it. My preferred method for achieving perfect crispy tortillas is much easier, healthier, and produces a wonderfully similar crunch. Simply cut soft corn tortillas into quarters or thin strips, arrange them in a single layer on a baking tray, lightly brush them with olive oil, and bake them in the oven for about 10 minutes at 180°C/350°F. Keep a close eye on them, as they can go from perfectly golden to burnt very quickly.

This oven-baked approach reduces the amount of oil needed, minimizes mess, and still delivers that satisfying crispy texture. The dry heat of the oven evenly crisps the tortillas without making them greasy. Once they’re done, immediately remove them from the baking sheet to prevent further cooking and burning. If even this simple step feels like one too many for such a low-maintenance meal, fear not! A good quality store-bought tortilla chip makes a perfectly acceptable substitute and will still add that vital crunch factor.

Expert Recipe Tips for Success

  • **Instant Pot Timing is Key:** The Instant Pot is truly a fuss-free, time-friendly soup-making lifesaver! While this chicken soup pressure cooks in just 10 minutes, remember to account for the 10-15 minutes it takes for the pot to come to pressure, plus another 15-20 minutes for a natural pressure release. This isn’t wasted time; it allows the flavors to deepen and the chicken to become incredibly tender. Use this passive cooking time wisely by prepping your crispy tortillas or other garnishes. While natural release greatly benefits the soup’s flavor and texture, a manual release is perfectly fine if you’re in a hurry.
  • **The Chorizo Foundation:** The chorizo-flavored sausages are more than just an ingredient; they lay a spicy, smoky, and richly flavored foundation for this entire soup. Their rendered fat adds immense depth, making chorizo and chicken an undeniably winning flavor combination. Don’t skip this step for maximum flavor impact!
  • **Chicken Selection & Shredding:** I recommend using boneless, skinless chicken breasts for their ease of shredding once cooked. If you prefer a slightly richer taste and texture, boneless, skinless chicken thighs are also an excellent choice. Whichever cut you choose, ensure the skin is removed for a cleaner soup.
  • **Boosting with Rice:** We often have leftover cooked rice in the fridge, and it makes a fantastic, filling addition to this soup. Adding about one cup of warmed-up rice just before serving helps to thicken the soup, absorb its wonderful flavors, and adds a satisfying bite, making the meal more substantial and stretching it further.
  • **Tortilla Choices:** While I love baking soft corn tortillas for a healthy crunch, don’t limit yourself. Fresh, warm flour tortillas served alongside are just as delicious for dipping. And for ultimate convenience, good quality store-bought tortilla chips are always an option for that essential texture.

Serving Your Fiesta: Toppings and Garnish Galore

The true magic of chicken tortilla soup extends beyond the pot to the moment of serving, when everyone gets to “pimp their own” bowl. Setting out a variety of little bowls filled with delicious toppings transforms dinner into an interactive and customizable feast. Here are my go-to suggestions to elevate your soup experience:

  • **Cooling Creaminess:** A generous dollop of sour cream or Greek yogurt provides a welcome contrast to the warm, spicy soup. It not only adds a luscious creaminess but also helps to mellow the chili factor for those who prefer a milder taste.
  • **Cheesy Goodness:** If you love cheese in your tacos, a sprinkling of grated cheddar or Monterey Jack cheese on your tortilla soup is a must. It melts beautifully into the hot broth, adding another layer of savory richness.
  • **The Crucial Crunch:** Whether you choose oil-brushed and baked fresh corn or flour tortilla strips (my favorite!), or simply a handful of good quality tortilla chips, this crunchy element is absolutely essential. It provides that delightful textural contrast, much like a crouton.
  • **Avocado Awesomeness:** If you’re having tortillas, it would be rude not to invite some creamy avocado to the party! Freshly made guacamole or simple diced avocado slices add a rich, buttery texture and a touch of freshness.
  • **Fresh Zest & Heat:** Sliced green onions (scallions) offer a mild oniony bite and a vibrant pop of color, contributing freshness and a subtle hint of heat.
  • **Herbaceous Brightness:** Fresh cilantro (coriander in the UK) chopped and sprinkled on top, along with a few lime wedges, provides a vivid pop of green and a tangy, refreshing zing that brightens all the other flavors.
  • **Hearty Bread:** For those who might skip the rice or extra tortillas, a few hunks of fresh sourdough bread are perfect for soaking up every last drop of the delicious broth.

Storage, Freezing, and Reheating Instructions

One of the many benefits of this Instant Pot Chicken Tortilla Soup is how wonderfully it handles storage, making it perfect for meal prepping or enjoying delicious leftovers. Just remember to store the soup *without* the crispy tortilla strips, as they will lose their crunch and become soggy in the broth.

Any leftover soup will keep beautifully, covered, in an airtight container in the fridge for 2-3 days. In fact, the flavors often deepen and meld even further overnight, making it taste even better the next day. You might find yourself craving that extra dollop of sour cream as the spices develop their full potential!

This chicken tortilla soup is also an excellent candidate for freezing. Again, ensure you store it without any tortilla toppings. Transfer the cooled soup into an airtight freezer-safe container or heavy-duty freezer bags, leaving a little headspace for expansion. It can be stored in the freezer for up to 3 months. When you’re ready to enjoy it, simply thaw the soup in the fridge overnight. Once thawed, reheat it gently on the stovetop over medium heat, stirring occasionally, until it reaches a simmering temperature. You can also reheat individual portions in the microwave. Add fresh toppings once reheated for the best experience.

Instant Pot Chicken Tortilla Soup

By Julia Frey of Vikalinka

Prep Time: 15 mins | Cook Time (Instant Pot Process): 40 mins | Total Time: 55 mins

Servings: 4 people

Instant Pot chicken tortilla soup has all the juicy ingredients, warming spices, and crunch factor you want from a taco but in a soup form! This recipe delivers deep flavor and tender chicken with minimal effort, making it perfect for busy weeknights.

Equipment

  • 1 Instant Pot

Ingredients

  • 1 tbsp olive oil
  • 2 chorizo sausages, casings removed
  • 1 onion, chopped
  • 2 bell peppers, any color, chopped
  • 3 cloves garlic, minced
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp ground coriander
  • 1/2 tsp oregano
  • 1/2 tsp smoked paprika
  • 1 tsp chipotle paste
  • 400g / 14 oz canned chopped tomatoes with juices
  • 400g / 14 oz canned black beans, drained and rinsed
  • 165g / 1 cup frozen corn or canned corn, drained
  • 1 litre / 4 cups chicken stock
  • 2 chicken breasts, boneless and skinless
  • 3 small corn tortillas or a handful of tortilla chips (for serving)
  • 1 tsp olive oil (for tortillas)
  • 1 cup cooked rice (optional, for serving)

Instructions

  1. Chop the onion and bell peppers. Set the Instant Pot to “Sauté” mode. Add 1 tbsp olive oil, then add the chorizo sausage. Break it up with a spatula and brown until cooked through.
  2. Add the chopped onions and bell peppers to the pot and cook until slightly softened, about 5 minutes. If they start to stick, deglaze the pot with 1/4 cup of the chicken stock, scraping the bottom with a wooden spoon. Then, add the minced garlic and all the listed spices (cumin, chili powder, ground coriander, oregano, smoked paprika, chipotle paste). Stir well to coat the vegetables and cook for another minute until fragrant.
  3. Pour in the canned chopped tomatoes with their juices, the drained black beans, the corn (it can be frozen), the 2 whole chicken breasts, and the remaining chicken stock. Add 1 tsp of salt.
  4. Close the Instant Pot lid and set the valve to “Sealing.” Cook on “Manual” or “Pressure Cook” at high pressure for 10 minutes. Once the cooking time is complete, allow for a natural pressure release, which will take approximately 15-20 minutes. Once the float valve drops, carefully open the Instant Pot.
  5. Remove the cooked chicken breasts from the pot. Using two forks, shred the chicken and then return it to the soup. Stir everything to combine well.
  6. While the soup is cooking, prepare your crispy tortillas. Preheat your oven to 180°C (350°F). Cut the corn tortillas into quarters or strips and toss them with 1 tsp of olive oil. Arrange them in a single layer on a baking sheet. Bake for 8-10 minutes, or until golden brown and crispy. Watch them carefully to prevent burning. Once done, remove them from the baking sheet immediately.
  7. Serve the hot soup topped with your favorite garnishes: sliced green onions, a dollop of sour cream or Greek yogurt, chopped fresh cilantro, a squeeze of lime, the crispy tortilla strips, and a scoop of cooked rice if desired.
