Pairing these delicious cookies with a homemade chai tea latte creates an unforgettable sensory experience, the warm spices of the chai harmonizing wonderfully with the unique taste of matcha.

It’s undeniable that the colors red and green have become synonymous with the holiday season, particularly Christmas. While my personal home decor might not always adhere strictly to this palette, the festive spirit these colors evoke is deeply ingrained. So, when my daughter embarked on a mission to craft the ultimate chocolate and matcha cookie for Vikalinka, I immediately envisioned them gracing our Christmas recipe collection. Their natural, earthy green hue combined with vibrant red candies makes them inherently cheerful and celebratory.
However, these chewy, delicately green tea-scented chocolate chip cookies are an absolute delight far beyond the holiday season. Their unique flavor profile and comforting texture make them a perfect companion for your morning coffee, an afternoon pick-me-up, or a quiet moment with a good book. The rich white chocolate chunks are crucial, as they beautifully balance the subtle bitterness and distinct sharpness of the green tea, ensuring these cookies never become overly sweet or cloying. You might find yourself reaching for more than just one!

What is Matcha? Unveiling the Green Elixir
You’ve likely encountered matcha in the form of a brilliantly green matcha latte, a trendy beverage often featured across social media platforms. But what exactly is this vibrant green powder, and why has it become so popular in both drinks and baked goods? Matcha is a finely ground powder of specially grown and processed green tea leaves, originating from Japan.
Unlike regular green tea, where leaves are steeped and then discarded, with matcha, you consume the entire tea leaf. This unique consumption method means you absorb all of its beneficial compounds, making it incredibly potent. The tea plants for matcha are shade-grown for several weeks before harvest, increasing their chlorophyll content (which gives matcha its distinctive bright green color) and boosting levels of L-theanine, an amino acid that promotes a calm alertness and reduces stress.
This particular recipe, however, is the brainchild of my 16-year-old daughter, who is the resident baking enthusiast in our family. It’s time her innovative creations found a home on this website!
Beyond its striking color, baking with matcha offers a distinct yet mild green tea flavor that adds an intriguing depth to your treats. Not only does it deliver a delicious, nuanced taste, but it also infuses your baked goods with a significant dose of antioxidants, L-theanine, and other health-boosting compounds inherent to green tea. It’s a win-win for flavor and well-being.
If you’re new to matcha, finding the right type might seem daunting. However, it’s increasingly available and easier to procure than ever before. Matcha powder is essentially a special type of green tea expertly blended into a fine powder, ready for whisking into drinks or incorporating into recipes.

Matcha powder is categorized into three primary grades: Ceremonial, Premium, and Culinary. Ceremonial grade is the highest quality and most expensive, traditionally used for tea ceremonies. It boasts the most vibrant color and a smooth, mellow flavor. Premium grade is a high-quality matcha suitable for daily drinking and excellent for baking where matcha is a star flavor. Finally, culinary grade is designed specifically for cooking and baking, often having a stronger, sometimes slightly more bitter, flavor profile.
For these cookies, I highly recommend using premium grade matcha powder. While culinary grade is an option, I find its color to be a bit dull and its taste too sharp or occasionally bitter for delicate baked goods. Premium grade strikes the perfect balance, delivering beautiful color and a refined green tea flavor. You can find quality matcha powder in specialty tea shops, Asian markets, or conveniently online. I often purchase mine from reliable online retailers like Amazon.

Achieving the Perfect Green Hue: Baking Tips for Vibrant Matcha Cookies
One common challenge when baking with matcha is preserving its brilliant green color. As vibrant as the powder is, it tends to oxidize and brown slightly during the baking process. Through our experiments, we’ve learned a few key tricks to maximize that beautiful green. Your cookies will undeniably look their best and most vivid green on the day they are baked. The color will naturally mellow and fade a bit on subsequent days, though rest assured, the delicious flavor remains unaffected.
Furthermore, chilling your cookie dough in the fridge overnight, while sometimes beneficial for texture, will also impact the vibrancy of your matcha cookies. The longer the dough rests, the more the color will degrade. In essence, the green color is most brilliant at the very beginning of the process. The image of the cookie dough above perfectly captures its stunning hue right after mixing. To counteract this, if you must chill the dough, try to keep it minimal, around 30 minutes, just enough to firm it up slightly.

Recipe Tips and Notes for Success
- **Room Temperature Ingredients:** Always ensure your eggs and butter are at room temperature. This is crucial for proper emulsification and will result in a smoother, more uniform dough that bakes evenly.
- **Bake Promptly for Color:** For the most vibrant green color, plan to bake your cookies on the same day you prepare the dough. Extended chilling in the fridge will cause the matcha’s green hue to fade. A short 30-minute chill is acceptable to firm up the dough, but avoid overnight refrigeration if color is a priority.
- **Uniformity is Key:** Use an easy-release stainless steel ice cream or cookie scoop to ensure all your cookies are the same size. This not only makes for a more aesthetically pleasing batch but also guarantees even baking times.
- **Color vs. Flavor:** While the vibrant green color might diminish slightly after the first day, the exceptional taste and delicate matcha flavor will remain unaffected, continuing to offer a delightful treat.
- **Do Not Overbake:** Watch your cookies carefully. They should be just set at the edges with a slightly soft center. Overbaking will dry them out and dull the matcha flavor.
- **Storage:** Store baked cookies in an airtight container at room temperature for up to 3-4 days. For longer storage, freeze the baked cookies or raw dough balls.

White Chocolate Matcha Cookies
By Julia Frey of Vikalinka
Prep: 15 mins | Cook: 20 mins | Total: 1 hr 5 mins | Servings: 20

These white chocolate chunk cookies are made even tastier with the addition of the delicate flavour of green matcha tea.
Ingredients
- 250g/1 3/4 cups all purpose/plain flour
- 1 tsp baking soda
- 1 tbsp cornstarch/(cornflour)
- 1/2 tsp salt
- 2-2.5 tbsp premium matcha powder
- 185g/3/4 cup unsalted butter, room temperature
- 150g/3/4 cup white sugar
- 100g/1/2 cup light brown sugar
- 1 egg, large
- 1 egg yolk
- 2 tsp vanilla
- 250g/1.5 cups white chocolate chunks (I used chopped white chocolate bar)
- 100g/0.5 cup red M&Ms or Smarties
Instructions
- Whisk together the flour, baking soda, salt, cornstarch, and matcha in a medium bowl. In the bowl of a stand mixer, combine brown sugar, white sugar, and room temperature butter. Beat with a paddle attachment until light and fluffy, about 1-2 minutes.
- Add the room temperature egg yolk, a whole egg, and vanilla extract to the mixer. Beat until the mixture is smooth and fully combined. Gradually add the dry ingredients to the mixing bowl and beat on low speed until a cohesive dough forms. Gently fold in the white chocolate chunks. Let the dough rest in the fridge for 30 minutes. (Note: The vibrant green color will begin to fade if you rest it longer than 30 minutes, so stick to the recommended time for best color retention.)
- Preheat your oven to 180°C/350°F. Line baking sheets with silicone mats or parchment paper. Scoop out equal portions of dough using an ice cream scoop, placing about 6-8 cookies per pan. Gently flatten each cookie dough ball slightly with the palm of your hand.
- Bake in the preheated oven for approximately 10-12 minutes, or until the edges are lightly golden and the centers are just set but still look soft. Remove from the oven and allow them to cool on the hot baking sheet for about 5 minutes until they firm up. Then, carefully transfer the cookies to a wire cooling rack to cool completely. Continue this process until all cookies are baked.
