The Ultimate Vegan Cream of Mushroom Soup: Rich, Creamy & Dairy-Free
Why You’ll Adore This Plant-Based Cream of Mushroom Soup
For many, cream of mushroom soup holds a special place, evoking a sense of nostalgia and warmth. This recipe aims to honor that traditional comfort food while elevating it with high-quality, plant-based ingredients. My goal was to create a vegan rendition that doesn’t compromise on flavor or texture, and I’m thrilled to say it was a resounding success!
Transitioning this classic soup to a vegan recipe proved to be surprisingly simple. The secret lies in the choice of plant-based cream. After experimentation, I found that oat cream is the ideal substitute, offering a wonderfully neutral flavor profile that allows the natural nuttiness of the mushrooms to shine through. It delivers that signature velvety consistency without any dairy, making it suitable for vegans and those with dairy sensitivities.
The result is a sensationally creamy soup that captures all the delicious, umami-rich flavors of mushrooms. It’s a pure delight to savor and has been a huge hit with everyone who has tried it, proving that plant-based doesn’t mean sacrificing taste or comfort. Plus, the use of oat cream not only makes this soup vegan but also inherently dairy-free, offering a delicious option for a wider range of dietary needs.

Unlocking Deep Mushroom Flavor: Maximizing Umami in Your Soup
The foundation of any exceptional mushroom soup is, naturally, the mushrooms themselves. To achieve a truly profound flavor, I highly recommend combining different varieties. This approach not only introduces diverse textures but also layers of complex, earthy flavors into your soup, enriching its overall character. Think beyond a single type; a blend creates a more dynamic and satisfying experience.
Portobello mushrooms are a star in this recipe, contributing a significant depth and richness to the soup’s taste. Their meaty texture and robust flavor are essential. Alongside them, chestnut mushrooms (also known as cremini) are an excellent choice, adding another layer of earthy notes. You could also experiment with oyster or shiitake mushrooms for their distinct aromatics and textures. While white button mushrooms are readily available, I find that on their own, they can sometimes lack the intense flavor needed for a standout mushroom soup. However, when paired with the more flavorful portobello or chestnut mushrooms, they work beautifully, adding bulk and a delicate base note.

One of the most critical steps in crafting any delicious soup, especially one where flavors need to truly sing, is the taste test. Do not underestimate the power of proper seasoning, particularly salt. A soup, no matter how good its ingredients, will fall flat if it lacks sufficient salt. While your vegetable broth will contribute some saltiness, always taste and adjust throughout the cooking process. Ensure there’s enough salt to make all the individual flavors pop and harmonize beautifully.

Essential Tips for a Flawless Vegan Cream of Mushroom Soup
Recipe Notes and Expert Advice
- Mushroom Power: The choice of mushrooms significantly impacts the soup’s taste. I highly recommend using a combination of portobello mushrooms for their deep, rich, and nutty flavor, paired with button or cremini mushrooms. Other excellent choices include porcini or shiitake, which can add even more complexity and umami.
- Creaminess, Reimagined: I specifically chose oat cream for this recipe, and I was delighted with the neutral and satisfying richness it brings. Oat cream is fantastic because it doesn’t impart a strong flavor, allowing the mushrooms to remain the star. However, feel free to explore other plant-based single creams like soy cream. Be mindful that alternatives such as full-fat coconut milk will introduce a distinct tropical note, which can be lovely but will alter the traditional flavor profile significantly.
- Beyond the Bowl: This versatile vegan mushroom soup isn’t just for eating on its own! Its rich, creamy texture makes it an excellent sauce base. Use it to create delicious vegan casseroles (like a comforting green bean casserole) or stir it into pasta for a quick and flavorful meal.
- Achieving Ultimate Smoothness: To transform your soup into an incredibly creamy, restaurant-quality puree, blending is key. You can achieve this with a powerful food processor, a convenient immersion blender (my preferred method for ease), or a standard blender. Blending in batches ensures safety and a perfectly smooth consistency.

Serving Suggestions: What to Pair with Your Vegan Mushroom Soup
A comforting bowl of vegan cream of mushroom soup is a meal in itself, but it truly shines when paired with the right accompaniments. For me, a classic pairing is soup and a sandwich, creating the perfect satisfying lunch. A vibrant Chickpea Salad Sandwich would be an excellent, complementary choice, adding texture and protein.
If you’re leaning towards something lighter, a fresh salad is always a great option. Consider a robust and flavorful Roasted Summer Vegetable Salad for a more substantial side, or a crisp, simple Garden Salad for a refreshing contrast. And, of course, you can never go wrong with a generous slice of crusty bread – perfect for soaking up every last drop of that creamy goodness!
To enhance the flavor and presentation, consider a final sprinkling of freshly cracked black pepper. A garnish of finely chopped fresh parsley or chives also adds a burst of color and a fresh, aromatic finish that complements the earthy mushrooms beautifully.
Storage and Leftovers: Enjoying Your Soup Later
This vegan cream of mushroom soup is fantastic for meal prepping or enjoying throughout the week. Store any leftovers in an airtight container in the refrigerator for up to 5-7 days. Always ensure the soup has cooled completely before transferring it to the fridge to maintain freshness and safety. When you’re ready to enjoy it again, simply reheat gently in a saucepan over low heat, stirring occasionally, or warm it up quickly in the microwave.
For longer storage, this soup freezes exceptionally well. Consider doubling the recipe to have a batch ready for busy days! Allow the soup to cool completely before portioning it into freezer-safe airtight containers or heavy-duty freezer bags. It can be stored in the freezer for up to two months. When ready to use, thaw overnight in the refrigerator, then reheat as directed above, adding a splash of vegetable stock or oat cream if needed to restore its perfect consistency.

Classic cream of mushroom soup made plant-based with oat milk, offering a rich, creamy, and dairy-free experience.
Equipment
- Immersion blender
- Food processor (optional, if no immersion blender)
- Medium Pot
Ingredients
- 1 onion, chopped
- 1 celery stalk, diced
- 1-2 cloves garlic, minced
- 3-4 sprigs fresh thyme, or ¼ tsp dried thyme
- 500g / 6 cups button mushrooms, sliced
- 100g / 1 cup Portobello mushrooms, sliced
- Salt to taste
- 1 tbsp flour (all-purpose or gluten-free blend)
- 1 litre / 4 cups vegetable stock
- 125 ml / ½ cup plant-based single cream (oat cream recommended)
- Olive oil for cooking
Instructions
- Heat a tablespoon of olive oil in a medium pot over low heat. Add the chopped onion and diced celery, cooking gently for 5-7 minutes until they begin to soften and become translucent. While they cook, clean and slice your mushrooms. Once the onions and celery are soft, stir in the minced garlic and fresh or dried thyme, cooking for another 30 seconds until fragrant.
- Add the sliced button and Portobello mushrooms to the pot, along with a pinch of salt. Cook for about 10 minutes, stirring occasionally. The mushrooms will release a significant amount of water. Continue cooking until most of this liquid has evaporated, concentrating the mushroom flavor. Then, sprinkle the flour evenly over the mushrooms and stir well to coat every piece, cooking for 1-2 minutes to toast the flour.
- Gradually pour in the vegetable stock, stirring constantly to prevent lumps and ensure the flour is fully incorporated. Bring the soup to a gentle simmer and cook for 10 minutes, allowing the flavors to meld and the soup to thicken slightly.
- Remove the pot from the heat and allow the soup to cool slightly. For a smooth and creamy texture, carefully transfer the soup in batches to a food processor or blender and process until smooth. Alternatively, and for maximum convenience, use an immersion blender directly in the pot until the desired consistency is achieved. Return the blended soup to the pot to reheat gently, taste, and adjust salt as needed to ensure the flavors are perfectly balanced.
Notes
- I used oat cream and found it perfectly complements the mushroom flavors without overpowering them. While other plant-based creams (like soy) should work, oat cream offers a wonderfully neutral and creamy consistency.
- For an extra layer of flavor, consider sautéing a small amount of finely chopped shallots along with the onion.
- If you prefer a chunkier soup, blend only half of the soup and then combine it with the unblended portion.
