The Comfort of Soups: Your Go-To for Effortless Meal Prep
Winter brings with it a desire for warmth and comfort, and for many, that means a steaming bowl of soup. There’s something uniquely reassuring about knowing a pot of delicious, homemade soup is patiently waiting in the fridge. It transforms lunch from a chore into a simple pleasure – a quick reheat in the microwave, and a wholesome, satisfying meal is served in minutes. This approach to meal planning has become a cherished ritual in my kitchen, offering both convenience and comfort in equal measure.
My mother, a culinary wise woman, always prepared a large pot of soup every Sunday, ensuring a week’s worth of lunches for the family. While I initially resisted this methodical planning in my younger years, I eventually embraced it wholeheartedly, and it has undeniably improved my daily routine. The shift in perspective, especially regarding recipes like this lentil and bacon soup, became a lasting legacy of the pandemic. During that time, finding nourishing and easy meal solutions for four people daily became a top priority.
This experience solidified my appreciation for meal planning, with a “soup of the week” becoming a staple. Consequently, our soup category on this website expanded significantly. Even as restrictions eased and life returned to a semblance of normalcy, my dedication to homemade soups never wavered. This creamy lentil and bacon soup recipe, rich with earthy mushrooms, stands as the latest testament to that enduring love, promising a warm embrace with every spoonful.

Unveiling the Magic of Lentils: A Nutritional Powerhouse
My journey with lentils began later in life, a discovery I owe to my husband who introduced me to Nepalese red lentil dal in our early twenties. From that moment, a new culinary world opened up, and lentils quickly became an indispensable part of our diet. It’s a journey I’m incredibly grateful for, seeing as my children, now teenagers, still enjoy them as much as they did when they were first introduced to solids.
But why should lentils be a staple in your kitchen? The reasons are abundant. Beyond their delightful taste and satisfying texture, lentils are nutritional champions. They are incredibly rich in fiber, essential for digestive health, and packed with plant-based protein, making them an excellent choice for sustained energy and satiety. Their affordability also makes them a budget-friendly option for feeding families healthy meals. It’s no surprise that almost every cuisine worldwide boasts a repertoire of lentil recipes, celebrating their versatility and wholesome goodness.
Lentils are also fantastic for making ahead, offering unparalleled convenience. You can cook a large batch and easily refrigerate or freeze them for future use. One of my personal favorite ways to enjoy them is cold, incorporated into vibrant salads. They add a robust, filling quality that transforms a light salad into a substantial meal. Consider trying a refreshing Quinoa Salad with Lentils and Beets or a delightful Roasted Butternut Squash with Lentils and Feta for a truly satisfying experience.
For those looking to reduce their meat intake, lentils offer a fantastic alternative. Explore creative meat-free options such as our inspired Vegetarian Mushroom and Lentil Wellington or the comforting Veggie Lentil Moussaka – two classic dishes brilliantly reimagined with the power of lentils.
Beyond salads and main courses, lentils truly shine in aromatic curries. Our Vegan Coconut Lentil Curry is a universal favorite, winning over even the most dedicated meat-eaters with its rich flavors. And, as this recipe demonstrates, they are absolutely brilliant when simmered into a hearty, comforting soup.
Crafting the Perfect Lentil and Bacon Soup: Step-by-Step

Recipe Tips and Customization Notes
- Bacon Selection: This recipe primarily uses streaky bacon (common in the UK) for its rich flavor. However, regular bacon available in the US and Canada works equally well. For a leaner option, consider using diced ham.
- Vegetable Add-ins: I prefer my soups chunky and packed with vegetables, so I’ve included a generous handful of sliced mushrooms and frozen spinach. These additions significantly bulk up the soup and add extra nutrients. If mushrooms aren’t to your taste, feel free to omit them without affecting the soup’s overall deliciousness.
- Choosing Your Lentils: I specifically use green or beluga lentils because they cook relatively quickly and, crucially, maintain their shape beautifully. Red lentils, while delicious, tend to break down and create a softer, more puréed texture, which might not be ideal if you prefer distinct lentil grains in your soup.
- Making it Heartier: To enhance the heartiness of this soup even further, you can easily add a handful of rice or barley. Simply incorporate them into the pot at the same time you add the lentils, ensuring they have ample time to cook through.
- Stock Options: While I typically use chicken broth or stock for its rich base, vegetable stock is an excellent alternative if you prefer a meat-free broth or are serving vegetarians (though you’d also need to omit the bacon).
- Creaminess Factor: For an extra layer of richness and a lusciously creamy texture, I often stir in a bit of single (or light) cream at the very end. While it elevates the soup beautifully, it’s entirely optional. For a dairy-free version, simply skip the cream or use a splash of full-fat coconut milk for a different, yet equally delightful, creamy finish.
Serving Suggestions for a Complete Meal
This lentil and bacon soup is robust and satisfying enough to stand alone, whether as a fulfilling lunch or a comforting dinner. No matter how you choose to serve it, I highly recommend pairing it with a substantial piece of crusty bread. Our homemade sourdough or our simple no-knead farmhouse bread are perfect companions, ideal for soaking up every last drop of the rich broth.
To elevate your bread experience, consider serving it with flavorful enhancements like air fryer garlic bread or our delectable garlic butter dinner rolls. Both are incredibly simple to prepare but pack a significant flavor punch, making them exquisite complements to this hearty bacon lentil soup.
While the soup is flavorful enough on its own, a fresh garnish can always brighten the presentation. A light sprinkling of fresh, chopped parsley over each bowl adds a touch of color and a hint of herbal freshness that beautifully complements the savory notes of the soup.
Smart Storage and Leftovers
For maximum convenience and to streamline your meal prep, I always recommend making a generous batch of this soup. Having ready-to-eat portions makes weeknight meals and quick lunches incredibly easy.
Refrigeration: Allow the soup to cool completely before transferring it to an airtight container. It will keep beautifully in the refrigerator for 3-4 days. To reheat, simply warm it gently in a saucepan on the stovetop over medium heat until it’s simmering.
Freezing: This soup freezes exceptionally well, making it ideal for longer storage. If you plan to freeze portions, it’s best to hold off on adding the cream until reheating. Cream can sometimes separate when frozen and thawed, affecting the texture. Store the cream-free soup in freezer-safe containers for up to three months. When ready to enjoy, thaw it in the refrigerator overnight, then reheat in a saucepan over medium heat. If desired, stir in the cream just before it reaches serving temperature for that perfect creamy finish, or simply enjoy it dairy-free.

Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins

Hearty, delicious, and fairly quick to prepare, this lentil and bacon soup with mushrooms is absolutely perfect for colder days, offering warmth and flavor in every spoonful.
Ingredients
- 1 tbsp olive oil
- 100g/3.5 oz smoked streaky bacon, diced
- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 2-3 sprigs fresh thyme or 1/2 tsp dried thyme
- 6 button mushrooms, sliced
- 2 bay leaves
- 200g/1 cup green lentils, or beluga lentils, rinsed
- 1.5 litre/6 cups chicken stock (or vegetable stock)
- 250ml/1 cup single/light cream (optional, for richness)
- 3-4 cubes frozen spinach
- Salt and pepper to taste
Instructions
- In a large soup pot, heat the olive oil over medium heat. Add the diced bacon and cook until crispy and the fat has rendered. Remove all but about 2 tablespoons of the rendered fat from the pot.
- To the same pot, add the chopped onion, carrots, and celery. Sauté over low to medium heat for 5-7 minutes, until the vegetables begin to soften.
- Stir in the minced garlic, sliced mushrooms, and thyme. Continue to cook for another 5 minutes, stirring occasionally, until the mushrooms have softened.
- Add the rinsed green lentils, bay leaves, and chicken stock to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for 20 minutes, or until the lentils are tender.
- If using, pour in the single/light cream and add the frozen spinach cubes. Stir well to combine and cook for an additional 5 minutes, allowing the spinach to thaw and heat through, and the soup to become creamy.
- Season the soup generously with salt and freshly ground black pepper to taste. Remove the bay leaves before serving. Serve hot with crusty bread.
Notes
- For a dairy-free option, simply omit the cream or replace it with coconut milk.
- Adjust vegetable quantities to your liking. Feel free to add other vegetables like potatoes or sweet potatoes.
- If freezing, add cream upon reheating.
