The Enduring Legacy of Turkey á la King

The origins of the venerable á la King recipe are shrouded in a bit of mystery, with debates swirling around whether it was named after a chef or a distinguished diner. Regardless of whether its genesis was “á la King” or “á la Keene,” two facts remain undisputed: this culinary gem emerged in America during the late 19th century, quickly cementing its place in the gastronomic annals of the nation. Initially, it was a dish reserved for the elite – gracing the menus of upscale hotels and exclusive clubs, delighting high-society guests and prominent figures like racehorse owners. Back then, it was presented with elegant simplicity, often served over delicate slices of toast, underscoring its sophisticated appeal.

The mid-20th century, specifically the 1950s and 60s, saw a dramatic surge in the popularity of á la King. It transitioned from an exclusive delicacy to a cherished centrepiece for celebrations, becoming a staple at weddings, gala dinners, and community gatherings. Its rich, creamy texture and versatile nature made it a go-to dish for special occasions, symbolizing comfort and festivity. As decades passed, á la King gracefully filtered into the mainstream, becoming a beloved fixture in everyday home cooking. This mainstream adoption likely spurred the ingenious adaptation for leftovers, as home cooks, ever resourceful, sought creative and delicious ways to minimize food waste – a timeless pursuit that resonates just as strongly with us today.

While the original recipe traditionally featured chicken, its versatility meant it was ripe for adaptation. In contemporary households, where a typical family might easily consume an entire roast chicken, leaving minimal leftovers, the á la King concept found a perfect partner in the plentiful remains of a holiday turkey. This shift to Turkey á la King not only addresses the common dilemma of abundant turkey after festive meals but also introduces a wonderfully rich and satisfying flavour profile that perfectly complements the robust taste of turkey, making it an ideal choice for transforming holiday fare into something new and exciting.

Mastering the Art of Holiday Turkey Leftovers

The grand holiday roast turkey is often the star of festive feasts, a beloved tradition for many families. However, its generous size frequently means that a family of four, even with a small holiday turkey, is often left with an abundance of delicious meat. An average small turkey, typically serving 6-8 people, can leave behind a significant amount of uneaten portions, posing a delightful challenge for the home cook. Over the years, I’ve embraced this challenge, developing a repertoire of creative and appealing recipes to ensure not a single morsel goes to waste. The goal is always to move beyond the ubiquitous turkey sandwich and discover innovative ways to enjoy this versatile poultry. Here are some of my family’s most cherished leftover turkey recipes, guaranteeing variety and flavour:

  1. Turkey Marsala Pot Pie: A beautifully fragrant and subtly sweet dish, crowned with a golden, flaky pastry crust. It’s a sophisticated way to repurpose turkey, transforming it into a gourmet experience.
  2. Mulligatawny Soup: A truly comforting and filling soup that combines tender turkey and rice with a delicate blend of Indian-inspired spices. It’s a warm embrace in a bowl, perfect for chilly evenings.
  3. Hearty Turkey Stew: This recipe is a celebration of all things leftover, marrying turkey with a medley of vegetables and potatoes, simmered in a rich broth and elevated by a handful of fresh herbs. It’s the ultimate one-pot wonder.
  4. Leftover Turkey Soup: An aromatic, wholesome, and deeply comforting soup featuring the delightful texture of giant couscous grains. It’s a perfect way to extract every last bit of goodness from your holiday roast.
  5. Turkey and Lentil Curry: A British classic that offers a fantastic way to introduce a vibrant burst of spice and exotic flavours to your holiday leftovers, creating a dish that’s both hearty and exciting.
  6. Creamy Leftover Turkey Chowder: While another soup, this chowder stands out with its exceptional richness and velvety texture, offering a luxurious twist on a comforting favourite. It’s wonderfully decadent and utterly satisfying.

Expert Recipe Tips and Notes for Perfect Turkey á la King

  • While this recipe masterfully utilizes leftover turkey, remember that the original á la King was made with chicken. If you happen to have leftover cooked chicken from a Sunday roast or a rotisserie bird, feel absolutely free to substitute it for the turkey. The creamy sauce is incredibly forgiving and equally delicious with either poultry.
  • To achieve the deepest and most authentic flavour profile for your á la King, I highly recommend using Madeira or sherry wine. These fortified wines add a layer of complexity and a nuanced richness that truly elevates the dish. However, if these aren’t readily available, a good dry white wine can serve as a suitable alternative. For those who prefer to omit alcohol entirely, simply increase the amount of chicken stock by the same volume, ensuring the sauce maintains its creamy consistency without compromising on taste.
  • For this recipe, I advocate for the use of fresh red bell pepper, finely diced. While jarred pimentos were a common ingredient in vintage recipes, I find their texture in this particular dish can be somewhat off-putting, leaning too far into the “retro” that some might not appreciate today. Fresh bell peppers not only contribute a beautiful vibrant colour but also a crisp-tender bite and a sweeter flavour that perfectly complements the creamy sauce.
  • Feel free to customize your Turkey á la King with additional vegetables to boost its nutritional value and visual appeal. Frozen green peas or sweetcorn are popular choices; they are convenient, cook quickly, and add wonderful pops of colour and sweetness to the dish. You could also experiment with finely chopped carrots or celery, sautéed alongside the onions and peppers, for an extra layer of flavour and texture.
  • The serving style of á la King has evolved considerably since its early days. While dainty toasts and elegant vol-au-vents once served as the customary vehicles for this creamy delight (a bygone era we can fondly sigh about!), modern preferences lean towards heartier accompaniments. To transform this into a substantial and satisfying meal, I highly recommend serving your Turkey á la King over fluffy white rice or your favourite pasta shapes. This allows the rich, creamy sauce to be fully appreciated and absorbed, creating a truly comforting experience.

Elevate Your Meal: Inspired Serving Suggestions

A rich, creamy dish like Turkey á la King calls for the perfect accompaniment to truly shine. The goal is to find something that can elegantly soak up or scoop every last drop of that delectable sauce, ensuring no flavour is left behind. Classic choices include fluffy long-grain white rice, which provides a neutral canvas for the vibrant flavours of the á la King. Alternatively, pasta shells or twists are excellent options, as their nooks and crannies are ideal for capturing the sauce. For those who crave ultimate indulgence and the most comforting creaminess, a generous helping of creamy mashed potatoes, perhaps enriched with a touch of cream cheese, makes for an irresistibly decadent pairing.

Although our Turkey á la King is already studded with colourful peppers and savoury mushrooms, I often find that a fresh side of vegetables can beautifully balance the richness of the main dish. To cut through the creamy sauce and provide a welcome textural contrast to the tender turkey, a crisp and tangy salad is an excellent choice. Our winter salad with red cabbage, kale, and pomegranate offers a delightful crunch and a burst of refreshing flavour that complements the á la King perfectly.

Given that turkey leftovers typically follow Thanksgiving or Christmas, you might be yearning for a break from traditional festive vegetables like carrots and Brussels sprouts. However, if you’re keen to maintain a semblance of holiday tradition, these easy roasted Parmesan Brussels sprouts and carrots offer a delicious and familiar side that still feels fresh and flavourful, providing a wonderful roasted sweetness and a cheesy kick that pairs surprisingly well with the creamy turkey.

Storage and Reheating Best Practices

When it comes to safely storing and reheating this delicious Turkey á la King, it’s crucial to exercise caution, particularly because the recipe utilizes previously cooked poultry. As a general rule of thumb, poultry should not be reheated more than once. Therefore, I strongly advise against keeping any leftovers of this dish for subsequent reheating. For optimal food safety and to enjoy the best quality, consume the Turkey á la King within 1-2 days of preparation and avoid reheating it more than once. Always ensure that the dish is heated thoroughly to a safe internal temperature before serving.

Ingredients

  • 1 tbsp butter or olive oil
  • 1 onion, chopped
  • 1 red pepper, diced
  • 300g / 4 (10 oz) cups chestnut mushrooms
  • 1-2 cloves garlic
  • 1 tbsp flour
  • 75ml / 1/3 cup Madeira or Sherry wine
  • 125ml / 1/2 cup chicken stock
  • 450g / 3 cups cubed cooked turkey or chicken
  • 250ml / 1 cup double / heavy cream
  • 1/2 tsp paprika
  • 1 tbsp chopped parsley, for garnish

Instructions

  • Melt the butter in a deep and large pan. Add the chopped onion and diced red pepper and cook over low heat for 10 minutes until tender. Add the sliced mushrooms and cook for about 5 minutes, then add minced garlic and stir fry for half a minute. Season with a pinch of salt and sprinkle a tablespoon of flour all over. Mix to coat the vegetables in a butter-flour paste and continue cooking for a couple of minutes.
  • Deglaze the pan with the Madeira or Sherry while scraping the bottom of the pan to release any browned bits. Continue cooking over medium heat until the wine is reduced in volume. Now, pour in the chicken stock and bring to a simmer. Add the cubed turkey, paprika, and double cream, and warm through until the sauce reaches your desired consistency, which should take about 10 minutes. Salt to taste. Serve topped with fresh chopped parsley.

Notes

  • This recipe can also be made with leftover chicken, which is closer to the original á la King preparation.
  • If you wish to enhance the recipe with more vegetables, frozen peas, corn, or a mixed vegetable blend are all excellent and convenient additions.
  • For maximum depth of flavour, using Madeira or sherry is ideal. However, a dry white wine can be a good substitute. Should you prefer to exclude alcohol, simply increase the chicken stock by the corresponding amount.
