Pasta holds a unique place in our culinary hearts, effortlessly transitioning from a comforting staple on a chilly evening to a refreshing highlight on a balmy day. Its versatility makes it a welcome addition to any dinner table, regardless of the season. However, my excitement truly peaks with the arrival of summer.

This fried zucchini (or courgette, as it’s known in the UK) pasta recipe stands out as one of my absolute favorite ways to marry the satisfying texture of pasta with the fresh, crisp flavors of seasonal vegetables. It strikes a perfect balance, offering a dish that feels wonderfully light and fresh, yet remains delightfully creamy and utterly satisfying. It truly is perfection in a bowl!

The Secret to a Luscious Creamy Tomato Ricotta Pasta Sauce
When we envision a smooth, velvety pasta sauce, our minds often jump to heavy cream as the primary ingredient. However, this delightful recipe defies that expectation, offering a beautifully creamy experience with a fresh, vibrant tomato base. This innovative approach allows us to achieve a silky-smooth texture without the richness of excessive dairy, making it a lighter yet equally satisfying option.
The true genius of this sauce lies in the inclusion of ricotta cheese. Ricotta, known for its light texture and mild flavor, gently melts into the warm tomato mixture, creating an incredibly creamy and rich consistency. Unlike heavier cheeses or creams, ricotta doesn’t make the sauce feel heavy or stodgy. Its subtle tang beautifully complements the sweetness of the tomatoes, enhancing the overall flavor profile. Plus, ricotta is relatively lower in calories compared to many other cheeses, allowing you to indulge guilt-free! Crafting Your Creamy Tomato Sauce
Preparing this sauce is remarkably straightforward. Begin by adding minced garlic, a generous amount of tomato passata (or crushed tomatoes), fresh basil leaves, and dried oregano to a pan. Season with a pinch of salt and a touch of sugar – the sugar helps to balance the acidity of the tomatoes and enhance their natural sweetness. Bring this mixture to a gentle boil, then reduce the heat to a simmer and let it cook for about 10 minutes. This simmering period is perfect for developing the flavors and can be done simultaneously while your pasta is boiling.
Once the sauce has simmered and its flavors have deepened, stir in the ricotta cheese. Continue stirring until the ricotta is fully incorporated and the sauce appears beautifully creamy. Give it a taste and adjust the seasoning with more salt if needed. Due to the natural texture of ricotta, the sauce might have a very slight, pleasant graininess, but this in no way diminishes its incredibly flavorful and satisfying appeal.
This method ensures a sauce that is not only delicious and creamy but also vibrant and fresh, perfectly embodying the spirit of summer cooking. It’s a testament to how simple ingredients can create extraordinary flavors.

Mastering the Art of Fried Zucchini (Courgettes)
My admiration for courgettes (or zucchini, for those in North America) knows no season, but they truly shine during their peak season. While most produce is at its best when fresh and in season, zucchini offers a unique transformation when prepared just right. Frying zucchini unlocks a depth of flavor and a tender texture that is simply irresistible, adding a layer of subtle sweetness and a beautiful golden crispness to any dish.
The process of frying zucchini is wonderfully simple and quick. All you need is a little olive oil, a sprinkle of salt, and about four minutes of cooking time in a pan. For a healthier alternative that uses significantly less oil, an air fryer is an excellent option, though it typically requires a bit more time, around 10 minutes, to achieve that perfect tenderness and slight crispness.
One of the most crucial tips for perfectly fried zucchini is the way you cut them. If the slices are too thin, they tend to become flimsy and watery, losing their desirable sturdy bite. Aim for slices approximately a quarter of an inch thick. This thickness ensures they retain their structure, offering a satisfying texture once cooked. Additionally, when frying in a pan, be mindful not to overcrowd it. Cooking zucchini in batches, if necessary, allows each piece to caramelize beautifully and cook evenly, preventing steaming and ensuring that lovely golden-brown finish.
The slight caramelization that occurs during frying brings out the natural sweetness of the zucchini, making it a fantastic complement to the tangy tomato ricotta sauce. This simple preparation step elevates the humble zucchini into a star ingredient, adding both flavor and texture to your pasta dish.
Recipe Tips and Notes for Perfect Zucchini Pasta
- Zucchini Preparation: You have two excellent options for cooking your zucchini. For a quick fry, use a pan with a small amount of oil; it will take about 4 minutes to become tender and golden. Alternatively, for a lighter touch, use an air fryer. It requires only a fraction of the oil but will take around 10 minutes to reach perfect tenderness.
- Cutting Zucchini Matters: The thickness of your zucchini slices is key. Ensure they are no thinner than a quarter-inch. Slices that are too thin will lose their sturdiness, becoming flimsy and watery, rather than holding their shape and providing a satisfying bite.
- Choosing Your Pasta Shape: For this particular recipe, fusilli is an excellent choice. Its corkscrew grooves are perfect for capturing and holding onto the creamy tomato ricotta sauce, ensuring every bite is packed with flavor. While other pasta shapes will certainly work, smooth varieties may not cling to the sauce as effectively. Tube-shaped pastas, such as rigatoni or penne, are also fantastic options, as the sauce cleverly nestles inside the pasta for an explosion of taste in every mouthful.
- The Magic of Ricotta: Ricotta cheese is a game-changer in this sauce. It provides incredible creaminess without the heavy fat content often found in double cream or other rich dairy products. Beyond texture, ricotta also boosts the protein content of your pasta dish, making it more filling and nutritious. Keep in mind that due to ricotta’s natural texture, the sauce might have a slight, pleasant graininess, but it will undoubtedly be wonderfully creamy and delicious.

Serving Suggestions for Your Zucchini Pasta Feast
This simple fried zucchini pasta recipe is a complete and satisfying meal on its own, designed to minimize fuss and maximize flavor. There’s no need to go to extra lengths if you’re aiming for an easy weeknight dinner or a relaxed weekend lunch.
However, to truly elevate the experience, I highly recommend adding a few thinly sliced fresh basil leaves just before serving. The aromatic burst of fresh basil perfectly complements the sweet tomatoes and creamy ricotta, adding a vibrant finishing touch. And for those who, like me, are absolute suckers for it, a side of warm, crusty garlic bread is simply irresistible. It’s perfect for soaking up every last drop of that luscious sauce.
Should you wish to expand your summer spread, a crisp green salad with a light vinaigrette would provide a refreshing counterpoint to the pasta’s richness. For a truly Italian meal, consider starting with a simple appetizer like bruschetta or marinated olives.
And if you love to conclude your meals with a sweet treat, Italy offers an array of fantastic options that beautifully round out this pasta dish. From the delightful chill of amarena gelato, bursting with cherry flavor, to the elegant simplicity of salted caramel affogato, where hot espresso meets cold ice cream, there’s something for everyone. Or, for a truly refreshing and palate-cleansing finish, try a sgroppino – a zesty lemon prosecco float that’s both light and celebratory.
Storage and Leftovers: Keeping Your Pasta Fresh
While pasta is undoubtedly at its peak when served fresh and hot, boasting that perfect al dente firmness, we understand that sometimes leftovers are inevitable. Unfortunately, pasta tends to lose its ideal texture when refrigerated, often becoming a bit soggy. For the best culinary experience, we always recommend enjoying this dish immediately after preparation.
However, there’s no need to waste delicious food! You can safely store any leftover zucchini pasta for 4-5 days in an airtight container in the refrigerator. When it comes to reheating, a microwave is usually the quickest and easiest option, though gently warming it in a pan with a splash of water or broth can sometimes help revive the sauce and pasta texture. Be mindful not to overheat, as this can make the pasta even softer. Adding a fresh sprinkle of Parmesan cheese or a few basil leaves can also help freshen up the reheated dish.

Summer Zucchini Pasta with Tomato Ricotta Sauce
By Julia Frey of Vikalinka
Prep: 10 mins | Cook: 15 mins | Total: 25 mins | Servings: 6

Ingredients
- 500g / 1lb fusilli, or other short pasta
- 2 tbsp olive oil
- 2-3 zucchini (courgettes), sliced
- 1 clove garlic, minced
- 500ml / 2 cups tomato passata / crushed tomatoes
- 4-5 leaves fresh basil, chopped or sliced
- ½ tsp dried oregano
- ½ tsp sugar
- 250g / 1 cup ricotta cheese
- Salt to taste
- Parmesan cheese, for serving
Instructions
- Cook the pasta in a pot of generously salted boiling water according to package instructions until al dente.
- Meanwhile, slice the zucchini into ¼ inch thick rounds. You may half or quarter them depending on their size and your preference. Heat the olive oil in a large pan over medium-high heat and cook the zucchini for 2-3 minutes per side until golden and tender. Sprinkle with a pinch of salt. Remove the zucchini from the pan and set aside. Alternatively, for a healthier option, cook the zucchini in your air fryer at 200°C/400°F for about 10 minutes, shaking the basket halfway through.
- Using the same pan (no need to clean it), add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the tomato passata/crushed tomatoes, add the chopped basil leaves, dried oregano, a pinch of salt, and the sugar. Bring the sauce to a gentle boil, then reduce the heat to a simmer and let it cook for 10 minutes, allowing the flavors to meld.
- At the end of the simmering time, stir in the ricotta cheese until it’s fully incorporated and the sauce is creamy. Taste and add more salt if needed.
- Add the drained pasta and the cooked zucchini to the pan with the sauce. Toss gently to combine all ingredients thoroughly.
- Serve immediately with a generous grating of Parmesan cheese and a few fresh basil leaves, if desired. Enjoy!
